Sunday – Clam chowder and hot wings
Monday – Cook and prep day. Since it’s a holiday with no work or school I’m doing my cook and prep day on Monday. Dinner will be pulled pork on buns, roasted corn on the cob, homemade coleslaw.
Cook and prep plan: Kristen’s Southwest Biscuit Casserole for brunch and then on to the rest of the cook and prep – 1 bulk pork loin which I’ll be cutting chops and roast from, adding marinades before freezing – it marinates while defrosting! I’m loading the crock pot to the top to make a nice big batch of BBQ pulled pork. After dinner tonight I’ll freeze the remaining BBQ for future meals.
Next, a 6 pound package of ground beef – 3 pounds will be cooked and seasoned for tacos and burritos, 1 pound with Italian seasoning for meat sauce or another Italian based recipe, 2 pounds with basic seasoning for casseroles or other recipes – all divided into one pound packages and labeled for the freezer.
The bread machine will be in full swing for the afternoon too. This little cook and prep session will be done and over with within an hour and will have us set for the rest of the month combined with things I still have in the freezer from my previous session, appetizer nights, pizza nights and my usual meal stretching Sunday cooking.
Tuesday – Main dish salad night – Mandarin chicken salad (a bed of mixed greens topped with Mandarin oranges, toasted almonds, rice noodles, crumbled bacon and sliced grilled chicken breasts)
Wednesday – Pizza take out night ($4.99 large pizzas!)
Thursday – Kristen’s Easy King’s Ranch Chicken (using chicken from the freezer)
Friday – Appetizer night
Saturday – Kids and/or hubby cook!
