CANDIED BUTTERNUT SQUASH
2 medium acorn squash
2/3 cup packed brown sugar
1/2 cup butter, softened
- Cut squash lengthwise into quarters.
- Remove and discard seeds.
- Cut each quarter into 1/2 inch slices
- Arrange squash on shallow baking pan lined with foil.
- Cover pan with foil and bake 35-40 minutes until tender.
- Combine brown sugar and butter.
- Spread over squash pieces.
- Return pan to oven and bake another 15-20 minutes, basting occasionally.
