HAPPY HOMEMAKER & MENU PLAN MONDAY week 39 of 2017

I hope everyone had a GREAT weekend. It took me all week, but I finally got caught up from being gone and even though I wasn’t able to get everyone visited from last HHM, I PROMISE to be back on track this week! I also finally caught up on all my laundry from the broken washer and with hubby’s help moved one of the recliners into the bedroom so I can sleep better until after surgery and recovery. I CANNOT lay flat and sleeping is difficult at best.  The recliner isn’t comfortable either, but at least I’m not choking.

OUTSIDE MY WINDOW & THE WEATHER OUTSIDE

We just can’t seem to catch a break weather wise.  We’re still supposed to be in the 90’s this week, but at least it has been a little better humidity wise, especially in the mornings.

ON THE BREAKFAST PLATE

I’m at the point where I’m drinking more and more of my meals waiting on my surgery so breakfast is a PROTEIN DRINK and COFFEE so I can eat dinner later.

AS I LOOK AROUND THE HOUSE / WEEKLY TO DO LIST & HOUSE PROJECTS

  • LAUNDRY… WHEW after last week I’ll settle for today’s 2 loads.
  • LIVING AREAS… I did a serious deep clean last week and everything still looks pretty good.
  • KITCHEN… LOL my kitchen is always in various states of food prep, but all in all is pretty clean this week.
  • STUDIO… is a complete wreck as I have made it my staging area for ebaying and packing up the house.
  • YARD… the post hurricane/ flood grass re-seed is growing fairly well and hubby will mow and edge later this week.
  • BLOG… I’m still working on combining into this blog the recipes from my old blogs.

CURRENTLY READING & TELEVISION / DVR

Most of the new shows begin this week so we’ll do a lot of DVRing and try them one at a time until we narrow the list to our new favorites.

ON MY MIND & THINGS THAT ARE MAKING ME HAPPY

We’ve been doing A LOT of research this past week and have narrowed our search to 2 different regions.  One we are fairly familiar with from a search a few years back, the other is close enough to check out for a few days before my surgery.  I’m still pretty worked up about how things have worked out with helping family here with this house and TOTALLY PISSED OFF that it caused us so much grief and pain, not to mention how much money it has cost us. We would have to stay here for at least 10 years to get our money back.

On another note, but along the same topic it appears our fears regarding my uncle being pursued by a gold digger are true.  We were recently notified (by her) in an almost threatening way that she has his power of attorney and that we should deal directly with her from now on.  As far as I’m concerned she still doesn’t exist as she was the one notifying us without any legal proof – so she can go jump in a lake. The uncle I’ve known all my life would NEVER forsake the little family he has left without being under undue influence or duress.

Gunny gets a few more treats now that he’s older.  He’s made it clear that he wants them served on a plate from here on out.

The post hurricane Harvey thunderstorms have been amazing and left us with some interesting skies. There are still debris everywhere and traffic beyond belief, but it looks like most things are getting back to normal.

HAPPY HOMEMAKER and MENU PLAN MONDAY

I HOPE EVERYONE HAD A WONDERFUL CHRISTMAS. It always seems so much better to me when Christmas falls on the weekend. We had a quiet weekend with just the 2 of us, football, church and a Christmas party on Saturday.  Christmas day was just us so I made a small Tropical pork roast with Potatoes AuGratin and maple glazed Brussels sprouts with cherry pie galette for dessert. We also watched my obligatory seasonal favorites It’s A Wonderful Life (1946), White Christmas (1954) and the original Home Alone (1990). Our family will be here to celebrate tomorrow.

Hallmark Movies and Mysteries channel played a YULE LOG with puppies, kittens, and Christmas music for 24 hours which made good background.

OUTSIDE MY WINDOW & THE WEATHER OUTSIDE
Unfortunately it’s gray and warm with thunderstorms. I spent the entire Christmas season missing snow and cold.  I am really looking forward to next year being back in the Pacific Northwest or the North woods or somewhere cooler than here. I hope.

I’m going to start working on the studio in earnest after the first and hope to be “CRAFT READY” by the time we get back from our spring trip in April. This will be our first trip seeking out our final project house so we can leave this HOUSE FROM HELL behind us and settle for a long while.

KITCHEN WISHES
My Kitchen Aid Mixer is starting to give up the ghost.  As sad as that is, I have used it A LOT and for 23 years next month.  I purchased a professional model after the 1994 Northridge Earthquake demolished my kitchen and EVERYTHING in it as well as the rest of the house.  So, I guess I got my money’s worth, I’ve even painted it twice, but I will be sorry to see it go. I’m thinking about this pretty silver one. It’s not the professional model, but I do love the glass bowl! Glass bowls are so much easier to see that things are mixed well on the bottom.

HOMEMAKING/COOKING TIP

THINGS THAT ARE MAKING ME HAPPY
January will be “GET A BACKYARD MONTH” and that is making me very happy!  There are only a few months of the year you can use a patio here, at least in my opinion, and February through April are it.  The backyard was just like the house and garage – completely overrun with a hoarders dream – STUFF.  It also had some structural issues that will need to be addressed first which will require a pallet of sand bags to be delivered to begin leveling it out.  We found this past week that the fence is riddled with termites so hubby has already started changing out the fence board by board.  All in ALL this will be a simpler project in concept, but harder in back breaking effort.  I also found a shade cloth that fits perfectly so we will be installing that too.  I will be thrilled if we can get the shade cloth, sand and fence done in January so we can lay pavers and sod in February.  That leaves March for sealing the garage floor.

I always have a lot of fun doing a long distance version of elf on the shelf for my favorite munchkins.  This year was twin elves, Ralph and Walter (names were borrowed from the show Scorpion). They made their way to Oregon in time for a Christmas surprise visit with their cousin Sam who spent last year with us before making his way to Oregon in time for Christmas 2015.

We had fun opening our gifts and stockings.  I especially love Sammy the owl and my new picture book from my favorite munchkins.

HAPPY HOMEMAKER AND MENU PLAN MONDAY

GOOD MORNING! I hope you are doing well and are ready for this week.  The week before Christmas is one of my most favorites as the house always smells so good with the tree and all the baking for the neighbor plates.

OUTSIDE MY WINDOW & THE WEATHER OUTSIDE
FRIGHTFULLY COLD FOR HERE! It is supposed to be sunny today, but not yet so right now is quite gray and cold.  Add in the wind chill and it’s downright frigid.  I have noticed that many people here seem to consider 60 COLD so not sure what they are feeling with this weeks weather in the 30’s and 40’s BEFORE the wind chill. Fortunately, we own cold weather gear from out time in the U.P.

I do laugh though as we are quite close to the gulf coast and when I check weather I also get the “small craft” and “low water” advisories for the fishermen. Always takes a minute to realize those are not for us directly.

AS I LOOK AROUND THE HOUSE
I’m feeling so much better each week at how finished things are getting.  This week my biggest concern is 2 dozen totes in my dining room that I took out of the studio (where I stashed them when mom was visiting).  Hubby has been working the past several days on a protected place to put them in the garage for me.  The corner we’re using had a funky trash receptacle and door to the outside that we are in the process of sealing up and enclosing before I put down a protective brick layer to stack the totes on.

Monday

  • Mail last of Christmas cards – I am so late this year.
  • Finish spot in garage for totes. Need a quick Home Depot run for supplies. 
  • Paint remaining trim work in Carlie’s room.  YAY!!!! She’ll be here a week from tomorrow!

Tuesday

  • Last minute Christmas shopping and grocery shopping.
  • Organize studio. I know I won’t even try and get to the deep organizing and sorting until January, but with the totes out I can get the furniture organized so I’ll be ready.

Wednesday

  • BAKE, BAKE and BAKE for the neighbor goodie plates that I’ll distribute tomorrow in time to start enjoying for the Christmas weekend!
  • My new kitchen and foyer rugs should arrive today. 

Thursday

  • Laundry, Clean and vacuum.

Friday

  • Lunch with Diana!
  • Not sure yet about the rest of the day, we’ll see how the first of the week goes and this will be my catch all day.

Saturday 

  • Nothing special – sit and enjoy hubby’s company, the tree and some football.

CRAFTS & PROJECTS
Unfortunately many a project fell by the wayside this year while working on the HOUSE FROM HELL, but I will begin next month to sort and organize my studio which doubles as my office so it will take awhile to sort all the paperwork and get it properly filed so I can begin to complete the gifts for next year.  I can’t wait to really get my hands on my studio!

HAPPY HOMEMAKER & MENU PLAN MONDAY

We had a good and productive week. I even had a productive Sunday… until… a stupid fall. I have been climbing all over this house, ladders, the roof and I trip over a hammer while carrying a heavy box – just too ironic.

 I spent the rest of the day with ice, a blanket, my book, a nap and the Nascar race.

WEATHER OUTSIDE
Fortunately our weather has returned to a more normal spring time level.  Thank goodness as I am NOT ready for summer in ANY WAY, SHAPE or FORM!

  • Finish the flooring and organization in the studio.
  • Paint spare bathroom.
  • Install spare bathroom floor.

HOMEMAKING/COOKING TIP
A tip to making your baking pans non-stick is to whisk together equal parts of cooking oil, shortening or butter and flour. Using a pastry brush to coat your pan(s).  Your baked goods will not stick!

PROPOSED EASTER MENU

Things are moving along well, so well that we decided to host Easter. I’m really excited about being far enough along host Easter and being able to really bake and cook again. This is my proposed menu. Any other ideas?

TROPICAL GLAZED PORK TENDERLOIN

2-3 pound pork tenderloin
1 cup apricot pineapple preserves
1 1/2 cup brown sugar
1/2 cup pineapple juice

  • Preheat oven to 425 degrees.
  • Whisk together brown sugar and pineapple juice.
  • Blend in preserves.
  • generously salt and pepper the pork loin.
  • Spread a small layer of the glaze on the bottom of the roasting pan.
  • Lay the pork loin on top and spread the remaining glaze on top and along the sides.
  • Baste as necessary
  • Bake 45-60 minutes or until meat thermometer reads 170 degrees.
DEVILED EGGS

8 hard boiled Eggs
1 tablespoon mustard
1 teaspoon vinegar

1 teaspoon creamy horseradish
1/4 cup mayonnaise
2 tablespoons sour cream
1/2 teaspoon salt
1/2 teaspoon white pepper
1/4 teaspoon celery salt
paprika

  • Cut eggs in half and scoop out yolks. 
  • In a mixing bowl mash the yolks to a fine consistency. 
  • Add the remaining ingredients except the paprika and mix well until smooth and creamy. 
  •  Fill egg whites and sprinkle with paprika. I have a Tupperware egg keeper that fits 8 eggs perfectly. I like to do these a day before serving also to allow the flavors to meld.

HOLIDAY APRICOT CARROT CASSEROLE

2 pounds carrots**
1/2 cup golden raisins
1/4 cup butter, melted
2 cans apricot pineapple nectar
1 pound dried apricots
1 cup packed brown sugar
1/4 cup crushed walnuts

  • Clean and bake carrots until slightly mushy.
  • Cool, Slice lengthwise and set aside.
  • While carrots are baking, put dried apricots in a dutch oven and cover with nectar.
  • Simmer apricots until mushy – about an hour.
  • Add butter, brown sugar and walnuts to apricot mixture.
  • In a 13×9 greased baking dish layer carrots and apricot mixture twice.
  • Bake 30-45 minutes at 350°.

**Yams or sweet potatoes or a combination of can be substituted easily.

CHEESY AU GRATIN POTATOES
1/2 cup butter
16 oz. whipping cream
5 large russet potatoes
1 teaspoon salt
1/2 teaspoon paprika
1/2 teaspoon Dijon mustard
1/2 teaspoon white pepper
1 clove garlic, minced
2 cups grated 4 white cheese mix (Gruyere, Muenster, etc…)
2 cups grated sharp cheddar
Wondra Flour

  • Preheat oven to 350 degrees.
  • Peel and thinly slice potatoes.
  • Grease 9×13 baking dish.
  • In a large sauce pan, melt the butter.
  • Gradually add the whipping cream and spices. Blend well.
  • Gradually add the flour until the mixture thickens, but it is still pourable!
  • Mix the cheeses all together.
  • Layer the potatoes, cheese and cream mixture ending with cheese on top.
  • Bake 45 minutes or until potatoes are tender and golden brown.

ROLLS OF SHARON aka CINNAMON RAISIN BUNS
ROLLS
2 packages Fleischman’s Rapid Rise Yeast
1/2 cup + 2 teaspoons sugar
1/2 cup WARM water
1 cup scalded milk (2 minutes in the microwave)
1/2 cup Crisco stick
5 cups flour, divided
2 large eggs, well beaten
1 teaspoon salt

  • In a small bowl combine the warm water, 2 teaspoons of sugar and both packages of yeast until well blended. Set aside.
  • In a mixing bowl combine the scalded milk, Crisco stick, 1/2 cup sugar and salt. Blend well.
  • Add yeast mixture and blend well.
  • Add the well beaten eggs and half the flour. Mix until well blended.
  • Add the remaining flour (a little more if too sticky) and mix well until dough leaves the sides of the bowl and is elastic.
  • With vegetable oil, wipe the inside of another bowl.
  • Place dough in bowl and turn once.
  • Cover with wax paper and a towel.
  • Let rest in a warm place until double in size.

 

  • Punch down and divide into 2 balls.
  • Put one on the pastry board and one back in the bowl.
  • Let rest 10 minutes.
  • While resting prepare the filling ingredients.

 

  • Roll the dough to 1/8 inch thickness in a rectangle about 18×24 inches.
  • Spread half the melted butter over the dough and sprinkle with half the cinnamon sugar.
  • Spread half the raisins over that.
  • Roll tightly jelly roll style and cut into 18 rolls.
  • Place rolls in greased pans 1/4 to 1/2 inches apart.
  • Cover with wax paper and a towel.
  • Let rise again until double in size.
  • Bake 15-20 minutes at 350 degrees.
  • While baking prepare the icing.

 

  • When rolls come out the oven, put globs of icing on each one. Return to the oven for a minute or two to melt icing all over the rolls.

FILLING
1 stick melted butter
1 cup sugar
2 tablespoons cinnamon
1 cup golden raisins

  • Whisk together the sugar and cinnamon until well blended.

ICING
1 stick butter, softened
3 3/4 cups powdered sugar
1 tablespoon powdered vanilla
4-6 tablespoons milk

  • Mix all together until smooth.

When re-heating rolls, put a pad of butter on top of roll before microwaving.
These freeze really well. 

MOSCATO STRAWBERRY LEMONADE
1 bottle pink moscato
6 cups lemonade
1/4 cup strawberry vodka
Frozen Strawberry Slices
Lemon slices

  • Blend together well.
  • Enjoy!

SLUMBERING VOLCANOES






Recently I was reading a novel and it mentioned some interesting recipe titles. I decided to see if they were real recipes or contrived and was pleasantly surprised to find they were real. So over the next few Sundays we can experiment together. My additions to each recipe are in green and the deletions in red.
4 large tomatoes
4 artichoke hearts
2 large button mushrooms, chopped small
4 eggs
4 tablespoons Parmesan cheese
4 slices Gruyere’ cheese (tonight I used a jack cheddar combo)
4 tablespoons fresh breadcrumbs seasoned with:
1 teaspoon dill
1 clove minced garlic
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
2 green onions, minced
  • Preheat oven to 350 degrees.
  • Carefully scoop out insides of tomatoes and drain juices from the shells.
  • Place tomatoes, hole side up, in baking dish and put in oven for 8 to 10 minutes.
  • In a small bowl mix together Parmesan, breadcrumbs, dill, garlic, and onion.
  • Remove tomato shells from oven.
  • Into the center of each put one whole or 1/2 artichoke heart.
  • Break one large egg over each artichoke heart and then sprinkle with 2 tablespoons of Parmesan and seasoned breadcrumb mix.
  • Place “volcanoes” back into oven and bake for approximately 20 minutes. (Time depends on how you prefer eggs cooked… if you want hard yolks, bake for 1/2 hour.)
  • Top with cheese and cook 5 minutes more.
  • Serve hot with side condiments of sour cream, chopped chives, green chili salsa, or others of your imagination!

Next time I’m going to add some crab to the mix!
