Hubby loves Gazpacho, a spicy tomato based soup made of raw vegetables and served cold. There are many variations to this soup, but mainly it has a tomato base and is very forgiving for ingredient adjustments. Here is hubby’s favorite version.
1 red onion, chopped fine
1 green pepper, chopped fine
1 large jalapeno, chopped fine
1 large cucumber, peeled and diced
3 large cloves garlic, minced
4 tablespoons fresh chopped basil
2 cups V8 juice
2 cups beef broth
2 cans original ROTEL diced tomatoes
2 cans Hunt’s petite diced tomatoes
2 tablespoons olive or avocado oil
Juice of 1 large lemon
3 tablespoons apple cider vinegar
1 tablespoon Worcestershire sauce
1 tablespoon Frank’s hot sauce
1 teaspoon cumin
Fresh ground salt an pepper to taste
- Mix all together in a large container.
- Enjoy – it’s as simple as that.
