SMOTHERED BBQ PORK CHOPS

SMOTHERED BBQ CHOPS
2 + 2  tablespoons butter
1/2 teaspoon smoked paprika
2 1/2 cups chicken broth
1 cup BBQ sauce
4 3/4 inch bone-in pork chops
2 small red onions, thinly sliced
2 carrots, thinly sliced on an angle
1/3 pound green beans, trimmed and cut
1/3 pound sugar snap peas, trimmed
1 1/2 cups long grain white rice
1 lemon, thinly sliced (optional)
minced parsley
salt and pepper to taste

  • Preheat oven to 375 degrees.
  • In a large skillet heat butter on medium high.
  • Sprinkle paprika, salt and pepper on both sides of pork chops.
  • Brown pork chops on both sides until browned (5-6 minutes).
  • Transfer to a plate.
  • Add remaining butter and onion to skillet and saute until tender.
  • With a slotted spoon remove onions to a small bowl.
  • Add carrots, beans, parsley and peas to skillet sauteing a few minutes.
  • Add rice and broth.  Heat to boiling.
  • Move rice mixture to baking dish sprayed with PURE.
  • Layer pork chops over rice mixture.
  • Layer lemons over pork chops.
  • Spoon onions over lemons.
  • Spread BBQ sauce over all.
  • Cover and bake 30 minutes or until all liquid is absorbed and rice is tender.

Orange Maple Pork Tenderloin

Orange Maple Pork Tenderloin
1 1/2-2 pound pork tenderloin
2/3 cup pure maple syrup
1/4 cup soy sauce
1/3 cup Panda Express Orange Sauce
2 cloves garlic, finely minced
1 teaspoon white pepper
1/4 teaspoon crushed red pepper

  • Put pork tenderloin in a ziploc bag. 
  • In a separate bowl, mix all the remaining ingredients until well blended and pour into the ziploc bag. 
  • Marinate for as long as you can – overnight, if possible.
  • Remove pork from the plastic bag, reserving the marinade. 
  • Place in baking dish.
  • Bake in a 400 degree oven until the pork reaches an internal temperature of 135 degrees.
  • While the pork is cooking, boil the remaining marinade from the bag for at least 10 minutes.
  • Remove pork from oven and cover with foil for 10 minutes.  The pork will continue to cook and reach 145 degrees.
  • When the pork is finished, slice and serve with the marinade as a sauce.

DANISH CUBE STEAK and GROWN UP MAC & CHEESE

DANISH CUBE STEAK REVISITED
3 ounces bleu cheese crumbles
3/4 cup mayonnaise
1/4 cup minced green onions
6 pork cube steaks
1/2 cup panko crumbs
2 tablespoons butter

  • In a small food processor blend together the mayonnaise, bleu cheese crumbles and green onions until smooth.
  • Coat steaks on both sides with mayonnaise mixture.
  • Dredge through panko crumbs.
  • Melt butter in a large skillet over medium heat.
  • Add cube steaks and brown on both sides.

GROWN UP MAC & CHEESE
12 ounce package pasta
3 tablespoons flour
3 tablespoons butter
2 cups whole milk
1/2 teaspoon sea salt
1 teaspoon Frank’s hot sauce
3/4 cup sharp white cheddar cheese
3 ounces bleu cheese crumbles
1/2 cup finely grated Parmesan cheese

  • Preheat oven to 350 degrees.
  • Prepare pasta according to package directions. Drain Well.
  • Melt butter in a medium saucepan.  Add salt.
  • In a small food processor pulse bleu cheese crumbles until fine.  Set aside.
  • Add flour and whisk constantly over medium heat until smooth.
  • Gradually add milk, whisking constantly.  
  • Add hot sauce.  Bring to a slow boil.  Simmer for 5 minutes.
  • Remove from heat and whisk in all cheeses, salt and pepper to taste until smooth.
  • Mix pasta and cheese mixture together until well blended.
  • Scoop into a casserole or ramekins.
  • Bake 15-20 minutes.
  • Top with chopped chives.

CARNITAS – GREEN CHILE STYLE

The recipe I was given years ago lacked in flavor so I modified it and we’re extremely happy with the outcome. I’ve been making them this way for years. Originally the roasting was done on a rack with water underneath and just a simple salt and pepper.
Now I use a large onion diced as my natural rack to protect the pork. The onions bake together and become an essential flavor to the dish. I place the pork roast on top of the onion pieces and surround it with a can of diced green chiles and 4-5 cloves of minced garlic. Then I pour a can of salsa verde enchilada sauce** on top of the green chiles and onions.  Cover it with foil and bake for 2 hours at 350°.
Then uncover it and bake another hour or until fork tender.  Remove the roast to a cutting board and shred it into bite sized pieces. 

Add the pork pieces back into the onion mixture and coat well.

Serve with your favorite salsa, grated cheese and sour cream. Enjoy!

**TO MAKE YOUR OWN SAUCE:
3 jalapenos
1/2 pound tomatillos
2 tablespoons minced cilantro leaves
3cloves garlic
1/4 teaspoon sea salt

  • Grill jalapenos until lightly charred.
  • Halve the tomatillos and simmer until soft. Allow to cool and drain off water.
  • Blend the peppers, tomatillos, garlic and salt until smooth.
  • Stir in cilantro.

SAUERBRATEN, POTATO PANCAKES & GINGERSNAP GRAVY

SAUERBRATEN & GINGER SNAP GRAVY

3 pound chuck roast
2 cups vinegar
2 cups beef broth
1 medium onion, thinly sliced into rings, separated
2 bay leaves
1 teaspoon white pepper
1/4 cup sugar
1/4 cup lemon juice
1 tablespoons ground cloves
6-10 gingersnaps

  • In a medium saucepan blend all the ingredients together except the ginger snaps. Heat, but do not boil.
  • Pour over the roast in a tight sealed Tupperware marinader. Marinate 48-72 hours, turning twice daily.
  • On the 3rd day remove the roast from the marinade, drain well saving all marinade and brown* on both sides and all edges.
  • Put roast in roasting pan and pour marinade over top. Bake for 3 hours covered and undisturbed.
  • During the last 30 minutes add the gingersnaps to the liquid and allow them to soften. If you are going to want more gravy than there is liquid, add a can of beef consomme at this time.
  • Remove bay leaves. If you prefer you can use whole cloves (8-10) and tie those and the bay leaves into a cheesecloth bag that can be more easily removed.
  • Remove roast from pan and whisk in roux until desired gravy consistency is reached.

*Browning will take longer because of the vinegar in the marinade.

POTATO PANCAKES

3+ cups peeled, grated & squeezed* potatoes
1 large bunch green onions, minced or 1 small Vidalia onion, minced
1/2 cup self rising flour
1 teaspoon salt
1/2 teaspoon pepper
1 cup buttermilk
1 egg, beaten
4 tablespoons butter, melted

  • Sift together the flour, salt and pepper.
  • Whisk together the buttermilk, egg and butter until smooth.
  • Whisk in the flour mixture until well blended.
  • Fold in the potatoes and onions.
  • Drop onto hot griddle and make your pancakes.
  • Serve with applesauce and sour cream or with the Sauerbraten gravy.

*I use a flour cloth towel as my base. I grate the potatoes on top of it and then bring all the corners together like a knapsack wrapping the potatoes inside. I continue to tighten the turns until I squeezed all the moisture from the potatoes.

STUFFED MEATBALLS & ROASTED VEGGIE SPAGHETTI SAUCE

  • I start with whatever vegetables I have in the vegetable bin. Today was Roma tomatoes, celery stalks, green onions and snap peas.
  • Then I drizzle olive oil and salt and pepper over it all and bake it for an hour at 400 degrees.
  • I started the sauce with a can of Contadina tomato paste, 1 teaspoon Better than Beef Bouillon paste, 2 cups orange juice and a V8. This truly was a clean out the fridge day.
  • When done roasting, add the vegetables to the sauce and set to simmer all day. The vegetables will continue to cook down into a uniform consistency with the sauce. Salt & pepper taste.


For the meatballs:
1 pound hamburger
1 pound sweet Italian sausage, casings removed
3 large slices sourdough bread, crumbled
2 eggs, beaten
1/2 cup grated Parmesan cheeseAlign Center
2 tablespoons fresh minced parsley
1 bunch green onions, finely minced
2 teaspoons minced garlic, jar
mozzarella cheese, about 4 ounces, cut into 1 inch cubes

  • Crumble bread into a large bowl.
  • Toss in Parmesan cheese, parsley, green onions and garlic.
  • Add meat and with your hands mix extremely well until you have a uniform mixture.
  • Roll meatballs around a Parmesan cheese cube.
  • Chill Meatballs until sauce is done.
  • Just before the sauce is finished, brown meatballs.**
  • Add the meatballs to the sauce and bring to a medium high simmer until meatballs are cooked though, about 20 minutes.
  • Prepare pasta and Parmesan Cheese Bread while meatballs are cooking.
  • Enjoy

**If you prefer you can add the meatballs directly to the sauce and SLOW simmer for a couple hours instead of browning.


GRILLED PORK CHOPS & RASPBERRY BBQ SAUCE

When I went to the grocery store last night I ran across some awesome meat deals and these pork chops were perfect for a new BBQ sauce I wanted to try. Dave over at My Year on the Grill has been raving about a raspberry chipotle sauce that I can’t get here either, but left me craving raspberries and at $4.99 a small box that craving was going to go unsatisfied until I ran across this raspberry vinegar at 3.99 a jar – a much better deal and it made an awesome sauce.





GRILLED PORK CHOPS & RASPBERRY BBQ SAUCE
6 tablespoons Alessi raspberry blush vinegar
2 tablespoons sugar
2 tablespoons ketchup
2 tablespoons grandma’s molasses
1 teaspoon Frank’s Red Hot Pepper Sauce
2 cloves garlic, minced
1/2 teaspoon sea salt
4 thin pork chops
skewers

  • Whisk all the ingredients (except pork chops) together until well blended over a medium heat.
  • Bring to a simmer, whisking occasionally until thickened and reduced to 1/2 cup.
  • Skewer each pork chop with 2 skewers.
  • Generously salt and pepper each side.
  • Bring your grill to temperature.
  • Brush each side with sauce.
  • Spray grill surface with PURE.
  • Place chops on grill, grilling uncovered for 2-3 minutes total, turning once.

TERIYAKI CHICKEN

TERIYAKI CHICKEN
12 boneless, skinless chicken thighs
3/4 cup sugar
3/4 cup soy sauce
6 tablespoons apple cider vinegar
3/4 teaspoon ground ginger
2 cloves garlic, minced
1/4 teaspoon white pepper
5 teaspoons cornstarch
5 teaspoons cold water

  • Place chicken in crock pot.
  • Whisk together the sugar, soy sauce, garlic, ginger and pepper.
  • Pour over chicken.
  • Cover and cook on low for 4 hours or until chicken is tender.
  • Remove chicken to a serving platter, keeping it warm.
  • Pour soy sauce into a sauce pan and bring to a boil.
  • Whisk together the cornstarch and cold water until smooth,
  • Gradually add cornstarch mixture to the soy sauce mixture, cooking until thickened.

LEMON GARLIC SHRIMP SCAMPI

LEMON GARLIC SHRIMP SCAMPI
1 tablespoon safflower oil
16 large shrimp, peeled and deveined
4 cloves garlic, minced
1/4 teaspoon red pepper flakes
1 cup white wine
4 tablespoons butter
Juice of 1 lemon
salt and pepper to taste
pasta, prepared al dente

  • Heat oil over medium high heat.
  • Add shrimp and brown on both sides.
  • Add garlic and pepper flakes, cooking until fragrant.
  • Remove shrimp to drain on paper towels.
  • Add butter and melt.
  • Add wine and bring to a simmer, cooking 5 minutes or until thickened.
  • Add shrimp, lemon juice and seasoning, tossing to coat shrimp.
  • Toss with prepared pasta.
  • Serve immediately.

CARIBBEAN PORK STEAKS

I had to do these inside with the broiler this time, but I prefer do them on a charcoal grill.  They are sooooo much more impressive with the grill marks from the BBQ and the charcoal flavor.

2-3 pounds of pork, 4 chops or 2 steaks
2-3 cloves garlic, finely minced
1/4 teaspoon salt
1/4 teaspoon white pepper
1/2 teaspoon red pepper flakes
1/2 cup pineapple sundae topping*
1 teaspoon Caribbean jerk seasoning
pineapple slices

  • In a small bowl whisk together the pineapple topping, red pepper, Caribbean jerk seasoning and garlic. Set aside.
  • Salt and pepper the chops on both sides.
  • Grill or broil chops until they are no longer pink near the bone.
  • Brush with glaze on both sides of pork chops and pineapple slices and return to the grill or broiler until the glaze bubbles and the pineapple is heated through.
  • Garnish with grilled pineapple slices.

*apricot pineapple preserves substitutes really well.

BAKED SNAPPER

BAKED SNAPPER
1 fillet per person
salt
white pepper
sweet paprika
1 bunch green onions, chopped
3 tablespoons white wine
3 tablespoons champagne dressing
lemon slices

  • Preheat oven to 400°.
  • Rinse fish and pat dry.
  • Whisk together the white wine and champagne dressing.
  • Sprinkle green onions on bottom of a prepared baking dish.
  • Sprinkle the first side of the filets with salt, pepper and paprika.  Arrange seasoned side on top of green onions.  
  • Season second side with salt and pepper.
  • Pour white wine over fish and then sprinkle with paprika.
  • Slice lemon and cut off rinds.  
  • Arrange lemon pieces on fish.
  • Bake 25-30 minutes or until fish is cooked through.

HOT WING SOUP ala NIBBLE ME THIS

Chris over at NIBBLE ME THIS invented this awesome soup that has become a family favorite here at our house! I’ve adapted it to what I had on hand and it was fabulous!

I loved Chris’ choices:
Fat –  Had to be butter, since that goes into hot wing sauce, right?
Mirepoix – Celery & carrot.  Celery because it is a standard accompaniment and carrot to help get the orange color I wanted.
Starch – I thought about using potatoes but went with buttery croutons instead.
Liquid – Chicken broth, beer and hot sauce – a no brainer

Hot Wing Soup

HOT WING SOUP –  4 servings adapted from  www.nibblemethis.com

1 stick unsalted butter
5 cups Italian bread cubes, no crust* I used San Luis Cracked Wheat Sourdough
1/2 cup finely diced carrot
1/4 cup finely diced celery
salt (see instructions)
1/2 tablespoon paprika I used Sweet Hungarian
4 cups chicken broth
12 oz dark beer* I used Amberbock that I had on hand
2 Tbsp hot sauce*  I used Frank’s
1/4 cup blue cheese crumbles I used gorgonzola
garnish:  meat from chicken wings, more blue gorgonzola cheese, chopped celery leaves*

  • Preheat a heavy bottom stock pan over medium high heat.
  • Add 3 tablespoons butter.  Once bubbling hot, add the bread cubes and quickly toss to coat evenly.  Season with a pinch or two of salt.  Cook until golden brown on all sides – about 5-7 minutes.  Remove.
  • Reduce heat to medium, add 4 tablespoons butter to the now empty pot.  Saute the celery and carrot until tender – about 8 minutes.  Season with a pinch or two of salt while sauteing.  
  • Add the chicken broth, beer, paprika, gorgonzola cheese, and the croutons that you made earlier.  Bring to a simmer and cook until the bread begins to break apart – about 5-6 minutes.
  • Use an immersion blender to blend to a smooth consistency.
  • Bring back to a simmer and stir in the last tablespoon of cold butter.  I know that technique at the end of sauces adds a little luster so I thought it couldn’t hurt with soup.  Taste for seasoning.  I added about 1/2 teaspoon more of salt at this point but let your taste buds be the judge.
  • Garnish with chicken wing meat, more cheese crumbles, and finely chopped celery leaves.

Chris’ Notes

  • Bread – I know, this sounds like a lot.  It will cook down.   He’s so right!!
  • Beer – I used Sweetwater Brewing Georgia Brown but any good dark beer will do.  You could also skip beer altogether and use more chicken broth but beer and wings go together, right?
  • Hot sauce – The family thought it was a little spicy at this level so if you want mild, just use one Tbsp Franks Hot Sauce would be the traditional hot sauce to use but I used Fire Ant Juice.
  • Celery leaves – Weird?  I like chopping them finely for a garnish.  Use parsley instead if you like.
