WWWEW & TT collide with a refreshing summer salad Carrot Apple Salad

2 large apples, washed, cored and chopped small
2 cups shredded carrots
1/2 cup golden raisins
1 celery stalk, chopped small
1 cup cubed chicken pieces (optional)
Juice of one lemon
1/4 cup mayonnaise
2 teaspoons sugar
1 tablespoon apple cider vinegar

  • Toss apple chunks, carrots, raisins and celery with the lemon juice.
  • Whisk together the mayonnaise, sugar and vinegar.
  • Pour over apple mixture and toss again.
  • Chill 24 hours and serve cold.

My mom makes a similar salad only she doesn’t use chicken, she uses nuts instead! I will have to try it with chicken!! Awesome!
