HAPPY HOMEMAKER MONDAY
Outside my window/WEATHER… the sun is warm and refreshing with a slight breeze.
I’M THINKING… about the future, a new house and a renewed sense of purpose.
I’M THANKFUL… for my renewed health and a bit fearful of yet another surgery.

I AM WONDERING…is wrong with a specific situation that seems hopeless AND when we’ll wrap up this VA mess – seems like we’re always starting over.
Something fun to share::: My new Doxie scanner. I’ve been able to take 3 banker’s boxes full of recipes and scan them into my computer, pictures and all and throw away the paper and eliminate the boxes and I’m finally finding my creative gene again!

A-Z CHALLENGE ~ S ~ SPONTANEOUS AND SINCERE
SHED CLEANING DAY
We had a HUGE wind storm here last week for several days. Figured it was a good time to get the shed started. Just cleaning it out was a project in itself.
As you can see hubs has vacuumed about half of it from the dust that settled everywhere and in everything. Each piece being taken out had to be cleaned also.
We did find this cute little guy living under the floor. Hoping the new floor will help seal it better. More pictures next week.

BLACK PEPPER CHICKEN
This month I was paired with Camilla at Culinary Adventures with Camilla. I love being paired with someone I’ve never been paired with before I inevitably learn sooooooo much, and find great new recipes. She has a huge diversity in recipes. I finally settled on the Black Pepper Chicken from The Law Student’s Cookbook. I did make a few alterations for us, but none that would drastically affect the flavor.
According to wikipedia, pepper originates in South East Asia and has been used in Indian cooking essentially forever. Peppercorns used to be known as “black-gold” and were used as a form of money. Black pepper is now commonly used in cuisines all around the world.
1/2 pound boneless skinless chicken breasts
1 tablespoon plain yogurt
Juice of large lemon
2 garlic cloves, minced
1-inch fresh ginger root, skinned and minced (I omitted as hubs hates ginger)
1 tablespoon ground black peppercorns, coarsely ground
1/2 teaspoon red chili powder
1/8 teaspoon turmeric
1/4 teaspoon sea salt
1 tablespoon vegetable oil (omit if grilling)
1/2 teaspoon ground mustard (also omitted since I have a deathly allergy to mustard)
pinch of red chili flakes
1/2 teaspoon ground coriander
1/2 teaspoon ground cumin
- Marinate the chicken in the yogurt, lemon juice, garlic, pepper, chili powder, turmeric, chili flakes, corriander, cumin and salt.
- Remove chicken, reserving the marinade.
- Let sit for 20 minutes in the refrigerator. (I let it marinade for several hours.)
In a deep pan heat the vegetable oil, on high. Add the mustard and chili flakes. Fry for 15 seconds. Add the coriander and cumin, and stir for 35 seconds.- Heat grill to medium high.
- Spray grill with PAM.
- Grill chicken for 5 minutes each side, basting well with marinade after 2-3 minutes.
Add the marinated chicken to the pan, browning the chicken on each side. Lower the heat, cover with a lid, and cook for 15 minutes.

BROWN SUGAR CINNAMON COFFEE CAKE

2 cups Bisquick
2 tablespoons sugar
2/3 cup milk
1 Jumbo egg
TOPPING
1/3 cup Bisquick
1 teaspoon cinnamon
1/3 cup packed brown sugar
3 tablespoons butter, softened
- Preheat oven to 375 ˚.
- Grease 8×8 square baking dish.
- Stir together the cake ingredients until well blended.
- Spread into pan evenly.
- Mix together the topping ingredients until crumbly.
- Top cake with crumb mixture.
- Bake 18-22 minutes or until golden.
- Serve warm.
- If re-heating, a teaspoon of butter on top makes it super moist and yummy.
A-Z CHALLENGE ~ Q ~ QUIET
Being the Perfect Guest
No matter what the event is or how well the hostess has planned and prepared, success depends on enthusiastic, congenial and considerate guests.
A welcome house guest above all is ADAPTABLE. Be ready for anything or nothing at all.
As a guest it is not necessary to ever eat anything that goes against your morals or that you are allergic to. Proper etiquette says to NOT mention these in advance to your hostess so she doesn’t feel obligated to change her menu. It is pretty hard to plan around everyone’s likes and dislikes. Just avoid the items you cannot eat or choose not to. If necessary have a snack before arriving. If you know that you will not be able to eat anything being served you might discuss it with your hostess so she knows that you will be bringing a meal for yourself prepared according to your restrictions. A classic example of this would be an Orthodox Jew who requires a kosher meal. For family and close friends this can be more lenient. I know that when I first met my husband’s family I would never have dreamed of mentioning my food allergy to anyone in advance for fear of making extra work for them. After the first time I avoided a certain food because of an ingredient in it, my sister-in-law noticed and over the years has begun to even read labels on foods before I visit so we can avoid a problem in the future. That’s because she’s a good hostess!
You may want to help your hostess, but avoid the temptation to chase her into the kitchen trying to help and then end up chattering away while she’s trying to make her last minute preparations. Take your cue from the hostess. If you have offered to help and she has declined your help, don’t insist. She evidently has a plan. She will always appreciate your offer though.
Conform to the habits of your hostess. If they are early risers, while you are their guest so should you be within reason. There is the chance that you are an early riser or unable to sleep in the late evening. Take a book with you to while away the time when perhaps your are awake and they are not. If you read one of your hostesses books during your visit, do not dog ear the pages and return it to its proper place before departing.
Never stay longer than originally planned. End you visit while you and your hostess are both having a good time.
Leave your room and bath as you found it. My sister-in-law says “Do NOT try to do something nice by stripping the bed for your hostess”. She may not be prepared to do the laundry that day and would prefer to do these tasks on her own time line. But Emily post suggests you ask the hostess first and at the very least remove the sheets and fold them at the foot of the bed after pulling the spread into place to make the bed appear made so the hostess does not forget to change them. Use your best judgment based on your relationship with your hostess.
Don’t forget your “bread and butter” gift for your hostess. My sister-in-law is the one person we stay with regularly. As close family, etiquette sometimes disappears depending on who all is involved, but I never ever forget to bring a bread and butter gift for her, a small token of my appreciation picked out just for her. It can be as simple as a bouquet of flowers or a box of candy, but should be something she will personally love.
Follow up your visit with a thank you note within a day or two.

A-Z CHALLENGE ~ P ~ PEACEFUL, PATIENCE AND POLITE
BROCCOLI SALAD/SLAW
1/2 head shredded red cabbage (optional)*
2 bunches green onions, sliced
1/4 cup chopped red onion
1/4 cup sunflower seeds (shelled)
1/2 cup golden raisins
1/2 pound bacon cooked crisp and crumbled
1 cup mayonnaise
1/4 cup sugar
2 tablespoons apple cider vinegar**
- In a large mixing bowl toss the broccoli, red cabbage, onions, seeds, raisins and bacon together.
- In a small mixing bowl, blend the mayonnaise, sugar and vinegar together until smooth.
- Pour over the vegetable mix.
- Toss well and chill 24-48 hours before serving.
*add another 1 1/2 cups broccoli florets if omitting cabbage.
**can use pineapple juice instead
