Caramelized Onion Bacon Frittata ~ Simply Delicious Sunday

CARAMELIZED ONION & BACON FRITTATA


1 medium Vidalia onion, sliced thin
10 slices thick bacon
3 tablespoons brown sugar
1 tablespoons cider or balsamic vinegar
8 eggs
1/4 cup milk
3 tablespoons butter
1/2 cup grated Gruyere cheese
salt and pepper to taste

  • Preheat oven to 400 degrees.
  • Whisk together the brown sugar and vinegar.
  • Toss onions and bacon slices in the mixture, packing it onto the slices.
  • Layer bacon and onions on grilling rack.
  • Bake 15-20 minutes or until crisp.
  • Increase oven to broil.
  • In a medium* cast iron skillet, heat the butter. Make sure to coat the sides also with the butter.
  • Whisk the eggs, milk and salt and pepper together.
  • When the butter foams, pour in the egg mixture and cook, stirring until eggs begin to scramble and are still quite moist.
  • Top with the onions, bacon and cheese.
  • Broil about 2 minutes until the cheese is melted and the eggs are done.
  • Slice and serve.

*I used a large (the only one I have) and it would have looked better as a medium size.

The next time you’re painting or staining and the directions call for turpentine or paint thinner as a cleaner – STOP & DON’T use it!

With all the home remodeling and rebuilding we’ve been doing around here, my skin has taken a huge beating and in an effort to take the sting out of clean-up, I finally tried this idea that I had read somewhere, but always forgot to try, BUT IT WORKS!!!

Instead of the turpentine or paint thinner, use vegetable oil. Yes, you read that right, plain old vegetable oil. It easily removes the paint or stain from your skin and leaves the skin soft and supple instead of dried out and flaking. Not to mention it’s environmentally friendly and the cost is much better.

Creamy Broccoli Pasta with Sun-Dried Tomatoes

CREAMY BROCCOLI PASTA with SUN-DRIED TOMATOES
8 ounces bowtie or fusilli pasta
1 1/2 cups small broccoli florets
1/2 cup drained sun dried tomatoes, chopped
1/2 cup grated Parmesan cheese
SAUCE
4 tablespoons butter
1 cup heavy cream
1 teaspoon minced garlic, jar
1 egg yolk, beaten
1/2 teaspoon thyme
salt and pepper to taste
1 1/2 cup grated Parmesan cheese

  • Cook pasta according to package directions.
  • Add broccoli florest the last few minutes of cooking.
  • Drain. Toss with tomatoes in a large bowl.
  • While the pasta is cooking prepare the sauce.
  • Melt butter in a saucepan.
  • Add garlic and saute until fragrant.
  • Gradually add heavy cream, stirring constantly.
  • Stir in salt, pepper and grated Parmesan cheese and stir constantly until melted.
  • Whisk in egg quickly and heat through.
  • Pour over pasta, broccoli and tomatoes.
  • Toss.
  • Top with Parmesan cheese

Simple Supper Saturday

We’ve decided to change the name from Simple Summer Suppers to Simple Supper Saturday since it isn’t summer everywhere around the world, and although it’s like summer almost all year here in Florida, summer does actually end, but the meme won’t.

Right now I will still be featuring a lot of main dish salads, subs, or sandwich style meals. Simple Supper Saturday’s overall focus will still be quick, easy and inexpensive meals no matter what time of year it is! Welcome to Simple Supper Saturday!

This week’s it’s another family favorite made from leftover chicken – Chicken Quesadillas!

Just lay out burrito size tortilla shells, top with a thin layer of shredded cheese, then a thin layer of shredded chicken, and again with cheese. Top with an additional tortilla shell and bake at 350 for about 5 minutes or just until the edges just barely start to crisp. That’s it, supper is ready!

Note – These can also be made with leftover steak, ground beef or even just cheese alone. They are great all by themselves, but I like to serve them with shredded lettuce and other various sauces and toppings when serving them for a meal.

1. The last thing I ate was a chicken quesadilla and it was sooooooooooooo yummy.

2. Replacement wood siding pieces is something I recently bought.

3. When it rains, it thunders and lightnings around here lately!

4. Hubby was the first person I talked to today.

5. Hugs are always welcome.

6. I yearn for extra comfort.

7. And as for the weekend, tonight I’m looking forward to relaxing, tomorrow my plans include rummage sales and the bass festival parade and Sunday, I want to go to the pancake breakfast at the VFW and then work on some more organizing!

Surprise – Surprise!

When I got home yesterday there was a box on my porch. I knew I hadn’t ordered anything. I wasn’t expecting a swap box. It wasn’t Christmas or my birthday so I was baffled and oh so pleasantly surprised. A few months back I had responded to a blog post over at Suzanne’s, blog the COLORADOLADY. I have to admit I then forgot about it which is what makes it such an awesome surprise today! She sent me these adorable resin cast birds, that now reside on my china hutch and these adorable fabric flower magnets and some awesome homemade lotion. Even the card was homemade! Thank you so much Suzanne!

So here is your chance. The first 3 people to leave me a comment and leave me their email so I can contact them for their snail mail will be sent a similar type of package, handmade by me, sometime during the next few months. Friday Round-Up & Kitchen Aid ~ Designer Color DIY Makeover

I am in awe at how well this blog and all of its components have fallen into place in such a short period of time. I must thank my co-author Martha for a great attitude and her unending creativity. We have truly emailed back and forth a trillion times working out all the small details. We are both Virgos which makes us detail oriented and worry warts to boot! LOL We were blessed with an awesome response to our concept and 3 co-contributors who host their own memes and who have already greatly expanded our food horizons. Thank you Martha Too, Cheryl and Pacey!

I had a busy week here and at 3 sides of crazy inventing many new recipes. I only post the ones that work out so you can be sure these are all tried and hubby approved.

That said, let’s move on to something fun. Do you have an appliance that needs an update? You know the one that works fine, but doesn’t look so great. With a little masking tape and some of today’s wonderful spray paints, you can DO-IT-YOURSELF and easily.

This post was originally written for Barbara. We were chatting and talking about the wonders of Kitchen Aid mixers and realized we had the same one. I purchased mine after the 1994 Northridge earthquake as a replacement for my old one that had been literally destroyed along with the rest of my kitchen. That was 15 years ago. 3 years ago when we moved to this old house, the original white (the only color available back then) just stood out like a sore thumb, now that I had room to keep it on my counter top but it was in perfectly good shape. I couldn’t justify spending the money in this economy for a new designer color. So I purchased a $5 can of Copper Hammer paint and did it myself!

The copper color goes with my new “old” country style kitchen. I had just finished a cake so it may be a bit dusty.
