Salsa is not just for dipping! It makes a great side salad for any dish (like chicken or fish). I also love Israeli Salad! How else do you eat your salsa?
For salad:
(toss all ingredients into a bowl)
1/2 can kidney beans, rinsed
1/2 cup corn niblets
1/2 avocado scooped out in chunks
1 cup whole cherry tomatoes
1 red pepper, diced
1/2 cup chopped cilantro
2 scallions, chopped finely
1 lime, juiced
1 tablespoon olive oil
salt and pepper to taste
I like salsa verde mixed with reduced cream as a sauce for enchiladas!
