CROCK POT REUBEN SLIDERS makes 24 slider sandwiches
2-3 pound corned beef brisket with seasonings
16 ounce jar sauerkraut, drained
1/2 cup thousand island dressing
- Place meat in slow cooker and sprinkle with seasonings.
- Spread sauerkraut over meat.
- Pour dressing over sauerkraut.
- Cover and cook on low 6-8 hours.
- Remove meat from slow cooker and slice across grain.
- Return meat to slow cooker and stir to combine with sauerkraut and dressing.
24 rye rolls or Hawaiian rolls, toasted
2 cups shredded Swiss cheese
1/2 cup thousand island dressing, optional
- Using a slotted spoon, spoon the mixture onto toasted rolls.
- Top with grated Swiss cheese.
- Top with more thousand island dressing if desired.
- Enjoy!
