RUSTIC CREAMY PARMESAN CHICKEN

I ALWAYS make a recipe as written the first time. You have to see what they were aiming for after all.  The next time through I make changes to appeal to my family’s taste as well as my ease and anything I feel will make the recipe MORE flavorful and/or MORE healthy.

I originally found this one on facebook and it was delicious, but hubby hated the bones so I now make it with boneless breasts. He also is NOT fond of wilted spinach so I cut back on the spinach and increased the parsley.  I also increased the garlic – A LOT!

RUSTIC CREAMY PARMESAN CHICKEN
4 chicken thighs, bone-in & skin-on  skinless, boneless chicken breasts
Wondra flour

2 teaspoons fresh ground Pink Himalayan sea salt
1 teaspoon fresh cracked pepper
1 tablespoon oil
3 6 cloves garlic, chopped minced
1 LARGE shallot, diced
½ Vidalia onion, diced
1 tomato, diced
1 2 cups fresh spinach
2 cups heavy cream
1 teaspoon salt
1 teaspoon pepper
2/3 1/2 cup grated powdered Parmesan
1/2 cup 2 tablespoons FLAT LEAF parsley, chopped

  • Generously season chicken with the salt and pepper.
  • Dredge in Flour until VERY well coated.
  • Heat oil in a skillet over medium-low heat.
  • Sear chicken well on both sides. Move the chicken around from time to time to ensure it cooks evenly.
  • Remove chicken from the pan and keep warm.
  • Add garlic, shallot and onion, stirring until onions are translucent.
  • Add the heavy cream, salt, and pepper, bringing to a boil.
  • Stir in the tomatoes and spinach until the spinach is wilted.
  • Add the Parmesan cheese and parsley, stirring until the sauce has thickened slightly.
  • Place the chicken back in the pan, spooning the sauce on top of the chicken.
  • Serve with pasta!

HAPPY HOMEMAKER & MENU PLAN MONDAY 11~14~2016

WOW where did last week go?  I did get some rest after the dry wall guy from hell left Thursday afternoon on the 2nd day of a one day job and I got the initial clean up done.  UNFORTUNATELY, we had to call his boss out to see the problems that DID NOT get dealt with and he will be back AGAIN today! GRRRRRRRRRRR & UGHHHHHHHHH! I hate delays, especially those caused by carelessness.  On top of it the dry wall guy actually asked for more money because he felt he’d been asked to do more than the original (and VERY expensive) quote called for!!!

The weather has been GORGEOUS this past week and this upcoming week is supposed to be more of the same – cool evenings (I even needed a light jacket last night when I walked the dogs) which lead to cool mornings and extremely pleasant days.

HAPPY HOMEMAKER & MENU PLAN MONDAY 11~7~2016

MONDAY! HERE WE ARE AGAIN! 

A week ago was our 1 year “anniversary” of arriving here to the house from hell.  I’m still working on a post FULL of before and after pictures which I hope to have up yet this week.

Unfortunately we decided last Wednesday night to go to one of our formerly favorite TEXMEX restaurants to celebrate – BAD DECISION.  I say unfortunately because 10 hours later I was in the hospital with a severe case of food poisoning and a concussion from where I fell in the bathroom after I became violently ill. The ER doctor said it was the 2nd case that week from the same restaurant. So this will be a quiet and SLOW week for me and I hope to get back on track next week.

OUTSIDE MY WINDOW & THE WEATHER OUTSIDE
We had some SERIOUS thunderstorms last night and it is a little rainy this morning with a chance of more serious thunderstorms throughout the day. The temperatures have dropped into the 70’s (FINALLY!!) and so it is quite pleasant.

I’m happy with the condition for a Monday after a week of issues.  I have tons to do, but as I’m on a modified bed rest will do it SLOWLY! AND I won’t be entirely upset if i doesn’t ALL get done.

  • Keep sorting craft parts in the studio.
  • Finish the marbelizing on the bar area and utility counter and hoping the delay of sitting several extra days before the top coat hasn’t changed the process.
  • Dust and vacuum.
  • Shade cloth for backyard behind our bedroom.
  • Prune roses and trim lantana.
  • Grocery store and errands.

We did find a new NETFLIX show, ICE Pilots, this weekend while I was forced to lay around and are really enjoying it.  Amazing show about keeping WWII planes in service in some of the harshest conditions imaginable.

HAPPY HOMEMAKER & MENU PLAN MONDAY

MONDAY! HERE WE ARE AGAIN! 

I was hoping to be redirecting you today to my new and improved website, but my webmaster has been called to do some photography field work and we are encountering another small delay while he is out of town.  That said, it has left me with time to continue my passionate “donation project” in an effort to clean out TONS of things.  I especially wanted to get jackets and blankets taken care of before any old weather sets in here.  I’ll keep those separate to take to the local homeless shelter along with towels and bedding.

This past weekend was our 1 year “anniversary” of arriving here to the house from hell.  I’m working on a post FULL of before and after pictures which I hope to have up yet this week.

We have been really working on this project with everything from tools to craft supplies and are EXTREMELY happy with the results over the past year, but especially the past 193 days with our total now over 8000 items.

One of the sad items I had to finally give up was my Girl Scout sweatshirt.  I was an advisor/leader for 3 sister troops – brownies through cadettes for several years and we had such a great time, but alas I have officially worn out this sweatshirt.  I will post this picture to facebook as I know it will make my niece/daughter smile.

I’m happy with the condition for a Monday.  I spent ALL day Saturday doing a DEEP DEEP CLEAN on our bedroom after I sorted the cold weather clothes and fabric stash so I’m happy with that room especially.  While I was doing that I also did 3 loads of laundry so have none to start the week with.

APRICOT COFFEE CAKE ala KITCHEN MACGYVER

My neighbor calls me MACGYVER. No, not because of the new remake MacGyver (which BTW I don’t like near as well as the original, but wanted to because I like George Eads) or even because the original MacGyver with Richard Dean Anderson was one of my favorite shows growing up, but because I have this God given ability to look at mundane items or recipes and see what they COULD be.

She recently cut a recipe out of the paper and thought it sounded “interesting”. It didn’t really interest me AS IS, but for what my mind pictured it COULD be. Boy am I glad I took a chance on this remake of what turned out to be excellent when she made it AS IS, but even better with the tweaks I made to it.

It was originally called Date and Cardamom Cake with Coffee Frosting by Meera Sodha.  I kept the basic recipe template, but added a few embellishments and enhanced the flavor a bit. I’ll list the original recipe with my changes in green. I thought the cake was completely cooled, but as you can see the icing started melting just a bit.  Good thing it didn’t change the flavor.

APRICOT COFFEE CAKE – adapted from Date & Cardamom Cake
CAKE
1 stick butter, softened
1 1/4 cups soft dates, pitted (1 1/4 cups soft dried apricots)
1 cup water, (1 cup peach nectar)
3/4 cup sugar
2 large eggs, room temperature
1 1/2 cups flour
2 teaspoons baking powder
pinch of salt
1 1/2 teaspoons cardamom (1/2 teaspoon ground nutmeg)
(1/2 cup dried ground lemon peel)
(1/2 cup small walnut pieces)
(1/2 cup golden raisins)
(1/8 cup cold coffee)
(1/8 cup spiced rum)

  • Chop apricots into small pieces and place in sauce pan covered with the peach nectar.  Cook on low until VERY soft!
  • Pour coffee and rum over raisins and set aside to soak.
  • Grease a loaf pan and line with parchment paper.**
  • Preheat oven to 350°.
  • When apricots are soft and most of the nectar absorbed transfer them to a small chopper and pulse until pasty.
  • In a large mixing bowl cream butter and sugar together until smooth.
  • Add eggs one at a time, blending well after each addition.
  • Sift in flour and spices gradually, mixing until well blended. Batter will be thick like cookie dough.
  • Drain raisins WELL.
  • Fold in apricot paste until evenly distributed.
  • Fold in nuts.
  • Fold in raisins.
  • Pour into prepared pan.
  • Bake 45 minutes or until tester comes out clean.
  • Cool cake COMPLETELY in pan before frosting.

NOTE:** I use a springform loaf pan for a “pretty” cake.

FROSTING
1 teaspoon instant coffee granules
6 tablespoons, softened
1 1/4 cup powdered sugar
1 tablespoon boiling water (boiling  peach nectar)
Apricot pieces for decorating

  • Mix together the nectar and coffee granules until all coffee is dissolved.
  • Add coffee mixture to butter in medium mixing boil and blend well.
  • Add sugar, blending until smooth and creamy.

NOTE: I still had half a can of peach nectar so decided before I made a cocktail with the remains that I would substitute nectar for water in the frosting to enhance the flavor a bit.

CREAM OF CELERY SOUP

CREAM OF CELERY SOUP adapted from The Daring Gourmet
4 SERVINGS

1/4 cup butter
1 small Vidalia onion, finely chopped (1 cup)
2 cups very finely chopped organic deep green (for optimal flavor) celery
2 large cloves garlic, minced
1/3 cup all-purpose Wonder flour
2 cups rich chicken broth, skimmed of excess fat (I use homemade)
1/4 cup buttermilk
1/2 cup whole milk
3/4 cup heavy cream
1 teaspoon fine sea salt
1/2 teaspoon sugar
1/2 teaspoon paprika
1/4 teaspoon freshly ground pepper

  • Melt the butter in a Dutch oven over medium-high heat.
  • Cook the onions, celery and garlic until soft and translucent, 5 minutes or so.
  • Add the flour and cook for another minute, whisking until well blended.
  • Add the chicken broth milk and cream, stirring until smooth. Increase the heat and bring it to a simmer.
  • Reduce the heat to medium, add the remaining ingredients, and simmer uncovered for 15 minutes.
  • Season to taste.
  • Serve with a CADILLAC (Parmesan Roast Beef) or grilled cheese sandwich. YUMMY!!

NOTE: This recipe is roughly equivalent to two cans of prepared canned condensed cream of celery soup. You can enjoy it as a stand-alone soup  with a grilled cheese sandwich or use it in any recipe calling for prepared canned condensed cream of celery soup. If using as a base for other recipes, soup will keep in the refrigerator for a few days.

HAPPY HOMMAKER & MENU PLAN MONDAY

I hope everyone had a WONDERFUL fall weekend. I LOVE this time of year.  My neighbor and I went to a local craft fair and then hubby and I went to the Farmer’s Market on Saturday.  After the Farmer’s Market we had a late lunch at Bernie’s Burger Bus which had been featured on Guy Fieri’s Diners Drive-Ins and Dives. Dang if those weren’t the best burgers ever!

I spent Sunday then sorting through scrap booking, jewelry beading and craft items filling donation bins and boxes for friends.  I’ve made a decision to scale back on my activities  to only those that give me pure joy.  LOL yu will notice I didn’t mention quilting, card making or canning.

CHEESY ITALIAN CHICKEN PASTA

I love this recipe because it is quick, simple and only uses a single pan!

CHEESY ITALIAN CHICKEN PASTA
8 ounces baby spinach leaves, divided
1-8 ounce jar Classico Sun-dried tomato pesto
1 medium large yellow onion, chopped
1 pound uncooked boneless, skinless chicken breasts or tenders, cut into bite size pieces
6 garlic cloves,minced
1 pound dry linguine**
2 teaspoons dried Italian seasoning*
2 teaspoons kosher salt
1 teaspoon fresh ground pepper
1 teaspoon crushed red pepper flakes
4 cups chicken stock
1 cup Chardonnay wine
5 ounces fresh Parmesan cheese, shredded

  • In a 5 quart large saute/stock pan arrange half the spinach, tomato pesto, garlic, onion, chicken and linguine on the bottom of te pan.
  • Sprinkle with the Italian seasoning, salt, pepper and crushed red pepper.
  • Pour chicken stock and wine over top. Cover and bring to a boil over a medium high heat.
  • Cook 7-9 minutes until pasta is al dente.  Toss pasta with tongs occasionally to keep the pasta from sticking to the bottom of the pot. 
  • There will still be liquid in the pan when the pasta is done cooking and that’s perfect as it will be the base for the cheese sauce.
  • Turn off the heat and add the cheese to the pasta. 
  • Toss pasta with tongs until the cheese melts into the pasta. 
  • Toss in remaining spinach. 
  • Serve immediately and enjoy!

*If you don’t have any dried Italian Seasoning just make your own by combining 1 teaspoon dried basil, 1 teaspoon rosemary, 1/2 teaspoon oregano and 1/2 teaspoon dried thyme.

**My pot is just a bit smaller than the length of linguine so I halve mine before putting it into the pot.

HAPPY HOMEMAKER & MENU PLAN MONDAY

Good Morning everyone. I hope you had a wonderful weekend and are bright eyed and bushy tailed ready for a new week.

OUTSIDE MY WINDOW & THE WEATHER OUTSIDE
It’s a beautiful morning with fluffy clouds.  LOL then I opened the door and it’s going to be another scorcher of a day.  This Indian Summer is killing me, but most my projects will be inside this week so I’ll just pretend we’re having a crisp fall day.

I’m fairly happy.  I had a super productive weekend and just need to finish sorting a few totes and boxes and then tomorrow will do a super deep clean.

One of the things I did was sort through ALL of our Christmas decorations.  I pulled out several totes worth of things that I will “probably” donate.  I decided to use these things this year for the season and see if there was anything I couldn’t live without.  If not, it will all be boxed up and donated on January 7th. Seemed like a plausible way to make a decision to minimalize.

I sat down yesterday and made a chart for what needs to be finished before my mom’s visit in early December and am going to do my best to stick to it!

  • A couple of molding pieces that need to be added.
  • Paint Carlie’s closet.
  • Floor molding in Carlie’s closet.
  • Finish sorting Christmas ornaments.
  • Do some ebay listings.
  • Do some organization in my studio.
  • DEEP cleaning.
  • A craft fair with my neighbor.

We are so close to finishing, but it still feels like it is a lifetime away.  I do have to share this amazing transformation though.  The atrium as we call it was an actual atrium when grams and gramps bought the house.  They had it enclosed with a rook and turned it into a part of the house.  In doing so one of the bedrooms “lost” it’s window as it now looked into an extension of the living room.  Gramps paneled it in a dark brown as was popular in 1980 and put in a makeshift bookshelf closing off the bedroom from any natural light source and it NEVER changed!  Below is the picture of when we arrived and below that is the pictures of the transformation and the re-installation of a “window” for that room allowing natural light again.

BEFORE AS MY COUSIN LEFT IT. It still astonishes me what a difference we’ve made.

Cleaned and primed – ready for window.  I love the white color as compared to the heavy dark paneling look!

NOW “WINDOW” READY FOR CARLIE TO MOVE IN. We used a multi paned door turned sideways and trimmed to fit as a permanent window.  Add a little trim moulding and voile’ it looks like it was always there. It doesn’t need to open.  I’m putting together curtains and beaded tiebacks for the bedroom side so there is still privacy.

LET ME BEGIN BY SAYING THAT THE FOLLOWING IS NOT 
AN ABSOLUTE ABOUT ALL PEOPLE.

WHO ALREADY FEEL AND ACT THIS WAY!

We have a cultural decay problem in this country. Life as we once knew it will NEVER be again. We have a lack of parenting problem in this country. As parents, our jobs are to raise children into functioning adults first and to be their friend second. Teaching children to be independent, hard working, respectful, happy and gracious is the best thing you can do for them, you and for ALL the people they will encounter in the future. Teaching them about the ups AND the downs of life is realistic and responsible.

There is an apathy, a lack of respect, a lack of accountability, a lack of responsibility, a lack of courtesy… A silver spoon entitlement complex is taking over. Political correctness has become an insane concept trying to make life fair. WAKE UP PEOPLE! Life ISN’T fair and NO ONE every said it would be. Doing the best you can each and everyday is all you can really control.

Watching the news is not always just hearing the factual events as it once was. Commentary and social media have taken over – everyone wants to be the first to break the “NEWS” whether it is complete or correct. Fact checking seems to be a thing of the past in many cases. Spin doctors manipulate news every day.

HAPPY HOMEMAKER & MENU PLAN MONDAY

We had a fairly productive, yet lazy weekend here.  Sunday was the lazy part with A LOT of NASCAR since the races were both postponed due to Hurricane Matthew and Sunday being our big football day anyway.  The evenings have finally cooled off so we can enjoy the outside a bit.

OUTSIDE MY WINDOW & THE WEATHER OUTSIDE
The breeze is blowing and the temperature is absolutely beautiful this morning.  Our days are still heating up to the low 80’s, but the evenings are FINALLY cooling down into the 50’s and 60’s so it all equals out better and the humidity is finally MUCH lower so the little bit of heat is really tolerable.

I see a HUGE mess! LOL it’s a GOOD mess though as I continue sorting and preparing Carlie’s room.  This week is the BIG craft room purge and looking for good homes for all the parts I no longer need.

WEEKLY TO DO LIST & HOUSE PROJECTS

  • Pick up the tub enclosure and get it installed for Carlie’s bathroom.
  • Sort craft room 1 last time and organize new rolling tool box.
  • Drop off the 2 HUGE boxes of Hallmark ornaments at the Children’s Hospital. 
  • Buy new fabric storage boxes for quilting material.
  • Paint Carlie’s closet.  While we got the rooms painted, we did not do the closets right off, but the time has come to do just that.
  • Laundry and Cleaning.

SUCCESSFUL RECIPES and their links FROM LAST WEEK

ON MY MIND
Praying for ALL of those affected by Hurricane Matthew.  There are so many countries and communities fighting just to restore basic needs, Haiti in particular.

We are never ALL going to agree about EVERYTHING, but am thinking we should ALL be nicer to each other – especially in this politically charged presidential election season.  So many people seem to be adamant on serious battle lines being drawn and everything being black and white ONLY.  I hate to break it to everyone, but life is rarely black and white.  Learning to compromise and live in the gray area of intersected commonalities is probably the best we can do this season.  But seriously, BE KIND to each other no matter what your personal views are.  The other person’s views are just as important to them.

THINGS THAT ARE MAKING ME HAPPY

  • LOL that the election is almost here and hopefully things will settle down a bit for everyone when it’s finally over.
  • Progress on the house and the cooler weather so we can begin to work on the outside.

ITALIAN GARLIC SUPREME – NUMERO UNO / ROUND TABLE PIZZA COMBO

One of the things we miss most here is our favorite pizza. Round table Pizza has an Italian Garlic Supreme that is our ALL time favorite pizza.  When I was a kid though my favorite was NUMERO UNO, a southern California local favorite.  So I set out to try and recreate both of these and believe I have actually succeeded.

ITALIAN GARLIC SUPREME
1 cup warm water (110-115 degrees ONLY – If it is to hot, it will kill the yeast!

1 package or 2 1/4 teaspoons yeast
2 tablespoons brown sugar
1 tablespoon sugar
2 tablespoons whole milk
1tablespoon melted butter
1 tablespoon + 1 teaspoon avocado oil*
1 teaspoon sea salt

1 tablespoon corn meal
3 cups flour
TOPPINGS
1 tablespoon avocado oil
2 cloves garlic, minced
1/2 cup favorite pizza sauce
1/2 pound cooked and crumbled mild Italian sausage
Pepperoni slices
Mozzarella cheese
chopped green onions
chopped tomatoes

*I am probably the only person in the western hemisphere that does NOT like olive oil.  Feel free to substitute it for the avocado oil if you prefer.

  • Add water, sugars and yeast to a bowl and stir well. Let sit 5 minutes until creamy.
  • Add milk, butter, oil, salt and corn meal to yeast mixture and mix with wire-whisk until well blended.
  • Pour into mixer bowl.
  • Add 2 1/2 cups of flour and mix with paddle for 5 minutes on low.
  • Scrape the sides of the bowl and form dough into a ball. Pour remaining flour (1/2 cup) around the outsides. Use dough hook, and mix for 5 minutes on low.
  • Remove dough from mixer and place in a well greased glass bowl large enough to allow the dough to double in size.
  • Place damp towel on top of bowl, and let rise in a warm spot for 1 hour, or until dough has doubled in size. (for best results, place bowl in a 180 degree oven – keep the towel damp)
    • Cut dough in half.
    • On a lightly floured surface, use a rolling pin and roll dough to your desired thickness and shape. If your using a metal pizza pan, or a cookie sheet, lightly grease the surface and sprinkle graciously with corn meal.
    • Place shaped dough on the pizza pan and let rise for 10 minutes.
    • Brush with garlic and oil mixture.
    • Add toppings.  (save green onions and tomatoes for the last 5 minutes)
  • Preheat oven to 500 degrees.
  • Place pizzas in preheated oven and cook for 15 minutes. Reduce temperature to 375 degrees, and cook for 5-10 minutes, or until the pizza looks done.

If you’re only making one pizza you can freeze the other one for up to 3 months. When you are ready to use it, thaw overnight in the refrigerator or for at least 12 hours. Bring the dough to room temperature about 30 minutes before stretching out the pizza.

CROCK POT BUFFALO CHICKEN

My favorite slow cooker took a dive this past week so I ordered a new one and I love it!! My old one was great, it was a west bend with a non-stick surface and griddle base, but was a bit limiting when trying to make say a pot roast.  I did a bit of research and found this one:

It’s only 3.5 quart and has latches for carrying making it perfect for pot lucks AND is the perfect size for two!  It came with a little recipe book and since I woke up with a cold I did a little juggling on my menu and made this recipe.  Because I felt so bad I adjusted it to what I had on hand, which included “GASP” canned soup and I hate to admit it was YUMMY

I will make a few additions next time, and there WILL BE a next time, and I will adjust for “REAL” soup base as well as serve it over mashed potatoes instead of the noodles for our personal preference.

CROCK POT BUFFALO CHICKEN
1 can Cream of chicken soup or 1 batch real soup base
1/4 cup bleu cheese or ranch dressing (I used Ken’s Sweet Vidalia Onion)
1/4 cup Cayenne pepper sauce (I used Frank’s original hot pepper sauce)
1 stalk celery, sliced
+1 small onion, chopped
+1 carrot, chopped
4 ounces shredded Monterey Jack (I used half jack, half medium cheddar)
1 1/2 pounds boneless, skinless chicken breasts
1 batch of your favorite mashed potatoes

  • Whisk together the soup, dressing and hot sauce.
  • Fold in carrots, celery, onions and half the cheese.
  • Spread into crock pot base and layer chicken pieces in a single layer.
  • Cover and cook on low 6 hours.
  • With 2 forks, shred the chicken into bite sized pieces.
  • Add remaining cheese and stir well.
  • Serve over prepared mashed potatoes.
  • Enjoy!
