The Revival of Common Courtesy & Personal Service

I think it is time to revive “The Revival of Common Courtesy”. I know the world is changing, but I don’t necessarily believe it to be for the better. Let me tell you about a transaction that happened to me recently at the local Coffee House and Cafe, the only coffee house in town, and you be the judge. Let me tell you no matter how much I want a specialty coffee, I will NEVER set foot in there again, which is sad as it was one of the few cleaner places in town, but the lack of health department code enforcement is a different post altogether.

We recently had our big, once a year festival in town for Humungus Fungus. It features mushrooms, city wide rummage and sidewalk sales, a parade and street dance and many other activities. Humungus Fungus is a pretty big deal for this little town. After many hours of rummage saling, we decided to treat ourselves to lunch so we went to The Coffee House & Cafe. Lunch was okay and we left to continue with the rummage sales. Later that afternoon while I was balancing my account I saw that they had triple charged (3 pending transactions for the exact amount at the exact same time) my account. Their credit card machine is in the back room so I can not say what actually happened. I called them up and spoke with the manager/owner and she flat out denied it and said it was ‘my problem’ because she only had 1 transaction slip and didn’t know how to fix it. Here is where the personal service should have kicked in. I would have accepted her telling me that she didn’t know how to fix it, but would look into it and get back to me, BUT to tell me they didn’t do it when it is so blatantly there in black & white and that it’s not their problem when they are the merchant and I get a bit peeved! I called my bank and was told it had to be released by the merchant. So I gave her over the weekend for the issue to be resolved. Late Monday I went in with a print out of the account to speak with her as it had not been resolved. I asked her if she would look into it and she said she didn’t know how. I asked her to call the 800 number on her machine or her bank and she flatly refused. When I asked her how she planned to resolve this issue she told me not to get snotty because this wasn’t her problem and she worked her butt off there for absolutely nothing. I’m sorry, but you don’t get to cause a problem and then play martyr! I have filed a dispute and am writing a letter to the city council as well as the better business bureau, but am afraid it will fall upon deaf ears as so many things do these days. It seems strange to me that so many people are so willing to accept the lack of courtesy being provided by so many businesses. I for one will not and will boycott said business as well as spread the word. As far as I’m concerned businesses like that should be put out of business if they are not willing to provide the most basic of common courtesy. I’m a BIG believer in positive attitude, etiquette and good manners. Attitude is everything and hers SUCKED. You shouldn’t be in business if you are not willing to cater to customers ESPECIALLY when you made the error!

Ironically I recently learned that the business owner who didn’t know who to call or how to fix it worked for a local bank for a long time. Scary isn’t it?

Black Walnut Cookie Recipe: Save Room for Dessert

When I first found this black walnut cookie recipe it called for 1/2 an egg and no walnuts, but making a recipe our own is part of the fun of cooking and baking, so I didn’t let little details like that deter me from trying it out. I used a whole egg because I don’t have time to wonder what to do with the other half, or to ponder why someone would think of beating a whole egg and using only half of it. Since I like nuts and it seemed an integral part of the recipe, I add a handful of them too. This recipe calls for black walnut flavoring, but any kind of nut flavoring or extract can be used, and you would get a whole new kind of cookie.

Black Walnut Cookies
1 cup butter
1 egg
1 cup brown sugar
3 cups flour
1/4 teaspoon nutmeg
1/4 teaspoon salt
1 teaspoon vanilla extract
1 teaspoon black walnut extract
1/2 cup chopped black walnuts

Cream butter, sugar. Add egg, extracts, and beat well. Sift flour, measure, and sift with salt and nutmeg. Add to creamed mixture. Add nuts and mix thoroughly. Form into rolls about 2 inches wide. Chill overnight. Cut in thin slices. Place on greased baking sheet. Bake in hot oven (410 F.) for about 10 minutes.

Raisin Drops

RAISIN DROPS
1 1/2 (3/4 cup) stick butter, softened
2 cups all purpose flour
1 cup cake flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
3/4 teaspoon salt
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1 teaspoon ground ginger
1 1/2 cup sugar
1 teaspoon PURE maple syrup
1 teaspoon grate orange rind
2 cups golden raisins
1/4 cup rum
1/4 cup favorite jam (I used my Blackberry Pineapple Jam – yummy)
3 JUMBO eggs
1/4 cup orange juice with pulp

  • Preheat oven 350 degrees.Whisk rum, orange juice and jam together until well blended.
  • Pour over raisins and let sit an hour or so.
  • Cream butter, sugar and maple syrup together until well blended.
  • Add eggs and blend until creamy and smooth.
  • Sift together the flours, spices and orange rind.
  • Gradually add flour mixture to the cream mixture until well blended.
  • Pour off any remaining liquid from raisins into the cream mixture and blend well.
  • Fold in raisins mixture until well distributed.
  • Drop by spoonfuls onto Silpat covered cookie sheets.
  • Bake 14 minutes.
  • Cool 2 minutes on the pan and then transfer to wire rack to cool completely.

Coffee BBQ Chicken, Vegetable Yam Mash & Cherry Green Beans

Many of you know that we are sitting and waiting for our investment house to sell so we can move home. One of the things I DON’T want to do is move food cross country so I have been taking my recipe experiment nights and trying to use what we have on hand and use up ALL stock (packages and bottles that are space hogs and breakable especially). The result? I have actually developed some great new recipes that I don’t mind sharing and we will eat again and again. This week we have Coffee BBQ Chicken, Vegetable Yam Mash & Cherry Green Beans. I hope you enjoy them.

COFFEE BBQ CHICKEN
4 boneless, skinless chicken breasts or 3 pounds of chicken wings
1/2 cup STRONG coffee
1/2 cup ketchup
1/4 cup minced green onion
2 teaspoons minced garlic, jar
1/8 cup Worcestershire sauce
1/8 cup apple cider vinegar
1 teaspoon chili powder
3/4 teaspoon salt
3 tablespoons brown sugar
Juice of 1 lime*
honey
~~~~~~~~~~~~~~~
Juice of 1 orange*
1 7up
dash apple cider vinegar
dash Worcestershire sauce
salt & pepper

  • Pierce each piece of chicken a few times with a fork.
  • Whisk together the 7up, Juice of 1 orange, dash of apple cider vinegar and dash of Worcestershire sauce.
  • In an airtight container place chicken pieces side by side. Salt and pepper generously.
  • Pour the 7up mixture over top and marinade for several hours or overnight.
  • Preheat oven to 325 degrees.
  • In a small saucepan whisk together the first 11 ingredients and simmer for 30 minutes to meld flavors.
  • Add honey to thicken.
  • In a shallow baking dish place chicken pieces side by side. Pour BBQ sauce over top to cover and bake for 1 hour or until tender.

*I saved the pulp from each to simmer in the BBQ sauce.

VEGETABLE YAM MASH
1 large yam*, peeled and quartered
1 large russet potato*, peeled and quartered
1 cup sour cream
2 tablespoons melted butter
1 package KNORR vegetable recipe mix

  • Melt the butter and blend with the sour cream.
  • Add in the vegetable mix and blend well. Set aside while you prepare the yam and potato. This can also be done the day before and refrigerated until needed.
  • In boiling, salted water cook yam and potato until tender.
  • Add yam and potato to the sour cream mix and mash together until well blended.

*any combination of the two would work well

CHERRY GREEN BEANS
1 cup green beans, trimmed and cut into bite sized pieces
1 large bunch green onions, sliced
1/2 cup chopped fresh cherries
1 lime, juiced
2 teaspoons minced garlic, jar
2 tablespoons butter
2 tablespoons white balsamic vinegar
salt and pepper to taste
1 teaspoon soy sauce
1 tablespoon sugar

  • Melt butter. Saute’ green beans until tender.
  • Salt and pepper to taste.
  • Add garlic and onions and cook until translucent.
  • Whisk together the soy sauce, balsamic vinegar, lime juice and sugar until sugar is dissolved.
  • Pour over the bean mixture and simmer 2-3 minutes.
  • Add cherries and heat through.

Simple Supper Saturday – Easy hot and spicy chicken

On my menu plans last week I had an idea for easy hot and spicy chicken to try for Tuesday night along with some leftovers ideas. It was just something I came up with while searching the pantry for things I have on hand already. Everything turned out really good so I thought I’d share it here.

Season some chicken breasts with sea salt and fresh ground pepper, brown on each side in little olive oil in a large oven safe skillet – if you don’t have an oven safe skillet you can transfer the chicken to a baking dish – and really the browning is just for aesthetics. It isn’t required to brown it but it just looks more appetizing and it does help seal in the juices too.

Pour a can of the Hot Rotel over the browned chicken. If you don’t like hot, spicy foods you can just use a can of diced tomatoes instead. Any kind of salsa would work well for this too. Bake for about 20 minutes at 350 or until chicken is done.

I served this with Mexican rice and cheesy refried beans the first night – the rice was a packaged rice, Vigo Mexican rice. The refried beans were canned topped with shredded colby jack cheese and baked alongside the chicken – so sue me for using canned and packaged, this recipe meme is all about simple! 😉

For the second night I shredded the leftover chicken, heated and wrapped the leftover refried beans, rice and chicken in warm burrito shells – what a hit with the hubby and kids!

I still had a very small container left of the chicken and Rotel mix which went into to freezer to use another night for a Mexican pizza topping or a spicy chicken soup. This was a great meal stretching recipe.

What Did You Bake Today: Cloverleaf Rolls

Welcome to another “What Did You Bake Today” Friday. This week, I made a trip to my new local library. I have been without a library for the last two years and the first thing I wanted to do was stand in the nonfiction section and just touch the books. Crazy, but you don’t realize what you are missing until it’s gone. Libraries are like that. Anyway, long story short, I checked out a few cookbooks. This recipe is a variation of a Taste of Home Country Cooking recipe published in 2000.


Cloverleaf Rolls:
2 Tbls yeast
1 1/2 cups warm water
1 cup whole wheat flour
1/4 cup sugar
1/2 cup oil
2 tsp salt
3 1/2 – 4 cups all-purpose flour
In a mixing bowl, dissolve yeast in water. Add whole wheat flour, sugar, oil, salt and 2 cups all-purpose flour; beat until smooth. Add enough of the remaining flour to form a soft dough. Knead (or use the mixer) until elastic and smooth. Cover and let rise until double in size (about an hour, unless the room is really warm, then it will take less time). Punch down, divide in half. Divide each half into 36 pieces. Shape into balls; place 3 balls in each greased muffin cup. Cover and let rise until doubled, about 30 minutes. Bake 375 degrees for 15 minutes or until golden brown. Makes about 24.
