Pepper Steak Soup, Basic White Cake & Blackberry Buttercream Frosting

PEPPER STEAK SOUP
1-2 tablespoons light olive oil
1 pound round steak, trimmed of fat and cut into 1 inch slices
1 medium onion, chopped
1 red pepper, sliced into thin strips
1/2 green pepper
1 cup long grain rice
1/3 cup soy sauce
2 teaspoons minced garlic (jar)
1/2 teaspoon sea salt
1/2 teaspoon white pepper
1 tablespoon brown sugar
1 can diced tomatoes with juice
1 tablespoon Better than Bouillon Beef Base
6 cups hot water

  • In a large skillet heat olive oil
  • When hot, brown the beef chunks, drain and transfer to the slow cooker.
  • Add rice.
  • In the same pan saute the onions until tender.
  • Add the tomatoes with juice, brown sugar, salt, pepper, garlic and soy sauce.
  • Bring to a slow boil.
  • Pour over beef.
  • Reduce the heat to low and cook 3-4 hours until beef is tender.
  • Add pepper slices.
  • Cook 1 more hour.

BASIC WHITE CAKE
1 cup white sugar
1/2 cup butter
2 JUMBO eggs
1 1/2 teaspoons vanilla extract
1/2 teaspoon maple extract
1 1/2 cups all-purpose flour
1 3/4 teaspoons baking powder
1/2 cup whole milk

  • Preheat oven to 350 degrees.
  • Grease and flour a 9×9 inch BUNDT pan.
  • In a medium bowl, cream the butter.
  • Add sugar and cream again.
  • Add the eggs, one at a time, beating until well blended.
  • Add in the vanilla and maple extracts.
  • Sift together the flour and baking powder.
  • Add to the creamed mixture and mix well.
  • Blend in the milk until batter is smooth.
  • Pour into the prepared pan.
  • Bake for 30 to 40 minutes.
  • Cake is done when it springs back to the touch.

BLACKBERRY BUTTER CREAM ICING
1/2 cup softened butter
1/2 teaspoon blackberry extract
1/8 cup blackberry jam
2 cups powdered sugar
1 +/- tablespoons milk

  • With a hand mixer beat jam until VERY smooth, set aside
  • The beat the softened butter until smooth
  • Add the blackberry extract and beat smooth
  • Gradually add the sugar, adding the 1st tablespoon of milk midway
  • After adding all sugar beat until creamy adding a dash more milk if necessary

Homemaking Tip I’m Sharing:
  1. After you fold your load of laundry use the dryer sheet to clean the dust off your TV screen.
  2. Mount a hook on the wall above your enclosure to hang the caddy from. Do not use shower caddies directly on the shower head bar. They really won’t hold the weight and might break off in the wall, which is what had happened here and then they ‘repaired’ it with a piece of clothing and left it to mold.

Sherried Garlic Scallops with Asparagus & Cherry Tomatoes~Simply Delicious Sunday [7]

This is one of the simplest recipes and smells and tastes great too. It’s the perfect romantic Valentines dinner. I served it with Parmesan Rolls.

30 small bay scallops (about 1/2 pound)
1/2 pound organic spaghetti or linguine
2 teaspoons minced jar garlic
1 bunch chopped green onions
4 Asparagus spears, tender tops cut into small pieces
8 cherry or grape tomatoes
2 tablespoons butter
2 tablespoons olive oil
1 cup cream sherry
shredded Parmesan cheese

  • In a medium skillet melt butter and oil together and bring to a medium high heat.
  • Add scallops and saute’ well so that the scallops sear on the edges.
  • Add garlic and onions and continue sauteing about 5 minutes.
  • Add Asparagus tops and heat through.
  • Add sherry and lower heat and cook until a thick glaze sauce forms.
  • Add tomatoes and heat through.
  • Toss with prepared pasta.
  • Shred Parmesan on top and serve immediately.

About to take a test drive

Alice over at Scott and Alice Family was my secret Apron swap partner for Mommy Holly’s Apron Swap. I received this wonderful package from her yesterday with the cutest apron and these wonderful goodies!

See how cute it is hanging on my kitchen wall? I’m about to take it for a test drive and do my baking for Tuesdays with Dorie. Come back on Tuesday to see what wonderful Valentines dessert we’re making.
I borrowed these pictures from Alice so you could see the whole adorable apron. Alice’s son Riley must be a wonderful young man to model for his mom. Thank you Riley.

She sent a few of my favorite treats like chocolate covered pretzels (super yum salt and chocolate). chocolate covered sunflower seeds which I was a virgin to, Werther’s originals and an adorable Valentines card for me and one to share and pumpkin cookie to go along with the pumpkin soup recipe. From what I see of her blog she is an exquisite paper crafter. Thank you Alice for such a wonderful surprise box!

Put it ALL in Perspective

This is another of those emails that crossed my desk that screamed, “SHARE ME”. Thanks Ray!

One day, the father of a very wealthy family took his son on a trip to the country with the express purpose of showing him how poor people live.

They spent a couple of days and nights on the farm of what would be considered a very poor family.

On their return from their trip, the father asked his son, ‘How was the trip?’

‘It was great, Dad ‘

‘Did you see how poor people live?’ the father asked.

‘Oh yeah,’ said the son.

‘So, tell me, what did you learn from the trip?’ asked the father.

The son answered: ‘I saw that we have one dog and they had four. We have a pool that reaches to the middle of our garden and they have a creek that has no end. We have imported lanterns in our garden and they have the stars at night. Our patio reaches to the front yard and they have the whole horizon. We have a small piece of land to live on and they have fields that go beyond our sight. We have servants who serve us, but they serve others. We buy our food, but they grow theirs. We have walls around our property to protect us, they have friends to protect them.’

The boy’s father was speechless.

Then his son added, ‘Thanks Dad for showing me how poor we are.’

Isn’t perspective a wonderful thing? Makes you wonder what would happen if we all gave thanks for everything we have, instead of worrying about what we don’t have.

Appreciate all you have, especially your friends! ‘Life is too short and friends are too few.’

Pass this on to family, friends and acquaintances and help them refresh their perspective and appreciation.

I have a bit of an issue with restaurants that post a sign that employees must wash their hands before returning to work in the restroom. To start with, it should be common sense and not necessary to post, but since it is a state health requirement they require the posting. My question is: Shouldn’t that restaurant also be REQUIRED to provide hot water for that purpose?

House Update – Chronicles of a Nightmare ~ Living Room ~ Part 9

The above pictures are the before we bought the house pictures that the realtor took. One of the things I really fell in love with was this “DOUBLE” mantle and pillared fireplace. I love the beveled mirror that ties it all together. The entire room is just bright and welcoming, but was in serious need of fresh paint. We weren’t thrilled with the puke green carpet, but figured we’d live with it for a bit. That bit was short lived when I picked up the corner to see the hardwood floor color below and the carpet literally disintegrated in my hands it was so rotten. So I opened a window and started tossing it outside for the dumpster we had just ordered to empty out all the trash they’d left behind. Hubby was NOT thrilled with me, but agreed it needed to be done.

The above picture was taken a few days after we moved in, but before we pulled out the rotted carpet, removed the sun rotted sheers, added blinds and curtains.

We decided on BEHR Oklahoma Wheat for the walls and this warm Mocha for the mantle. The mocha really compliments the golds in the original tile work around the fireplace.
