Don’t forget it’s almost time to ship your Home for the Holidays Swap Box!
My partner for the Home for the Holidays swap was Holly from Mommy Holly. For her I made this fun and funky Merry Christmas peppermint garland. To it I added a cute little Hallmark ceramic Christmas tree tray and dip spreader, this glittery (she loves glitter!!) clip on poinsettia, some fun snowmen ornament hangers for her little guy, some Christmas notes, a handmade quilted ornament, a snowman and boot sequin vintage ornaments, a cute little snowman kitchen towel with a cookie cutter and cookie recipe so she and her little boy can have some fun in the kitchen while drinking these cocoa mixes! For him I added in a little Santa doll, a gummy life savers book, a Santa Key and a snowman cookie tin. And of course as Holly says, “I love Reese’s trees… they taste SO much better in that shape hehe!!” so I threw in some of those! I hope she has a fabulous Christmas. I had so much fun making her box for her. What kind of a Christmas box would it be without some candy canes too!

I received this awesome box from Holly yesterday while I was cleaning and decorating. Perfect timing Holly! There was some great purple bead garland, a set of purple Martha Stewart ornaments, some awesome purple (my favorite color) vintage ornaments, a pine candle which works great in my holder (thanks for saving me a trip to get one LOL), a traveling tealight holder that is sooooooooooooooooo cute!, a bar of great English soap, some beautiful note cards that I’ll use as thank you cards for Christmas and some super yummy chocolate covered rice crispy bars that sustained us as we decorated the tree.

Beginning today, Erin over at $5 Dinners is hosting a new Meme $5 Dinner Challenge in an effort to help us all exchange frugal recipes. For me $5 dinners means that I can feed the two of us for $5, but I rarely am able to prepare a serving for 2 LOL too many years of cooking for many more so often my recipes are for full portions and I freeze much of it (usually 2 or more freezer portions) for future use but they usually average $5 per serving.

I’ll start with Thanksgiving. Of course we have turkey, but it’s what I do with the turkey that counts. There were just the 2 of us this year, but I still bought a 25 pound bird. The sale prices are phenomenal at this time of year. Hubby and I can eat turkey until we’re the ones that are stuffed and then still have enough left over to portion out and freeze.

When I make my turkey I start with a roaster full of chopped carrots, celery and onions as a cushion under the bird. Then I throw in a bag of cranberries, the heart, liver, gizzard and a stick of butter that has been cut into several pieces. To that I add 3 cups of homemade chicken broth. I stick another stick of butter in the bird’s cavity, salt and pepper the bird really well and tent foil it. I don’t uncover it again until 20-30 minutes before it should be done. I baste it every 10 minutes until crisp. The result is the juiciest and tastiest turkey you ever did eat.

Now while hubby is carving the turkey, I start the gravy. By the time the turkey is done the vegetables have turned to mush which is fine by me. If they haven’t, I puree them in the food processor until they are. The cranberries add a bit of tart to the gravy that we like. This makes enough gravy for hubby and I for several days as well as 4-4 cup portions for the freezer.

Eventually I have nothing left but the carcass and crisp skin and start the broth process. I use a large stock pot and cover the carcass with water. I let it boil for about an hour and it creates the tastiest broth. I strain the broth in batches. This year I ended up with 9-4 cup portions of broth for the freezer. YAY! We have lots of soup base! All in all my $25 turkey has provided us with the basis for about 15 meals bringing me in way under budget!

TIP: If you ever have the opportunity to get these Tupperware labels, they are awesome. They stick in the freezer, peel off easily and are inexpensive. They are a great way to keep the “freezer mystery surprise” out of your freezer and stay organized too.

While the broth was boiling I made these awesome and SUPER EASY Butterfinger cookies and some strawberry ones too.

BUTTERFINGER COOKIES
Ritz crackers
creamy peanut butter
almond bark
sprinkles

Spread peanut butter on ritz crackers and top with another cracker. Melt almond bark in the microwave. Dip each cookie in the almond bark and set onto wax paper to harden. If you’re using sprinkles do so before the almond bark hardens.

STRAWBERRY FILLED COOKIES
Vanilla wafers
strawberry cream cheese
almond bark
sprinkles

Spread strawberry cream cheese on a vanilla wafer and top with another wafer. Melt almond bark in the microwave. Dip each cookie in the almond bark and set onto wax paper to harden. If you’re using sprinkles do so before the almond bark hardens.

The Tablecloth ~ Who Says God does not work in mysterious ways?

This story came across my email this past week and I thought it was a beautiful way to start the Thanksgiving / Christmas Holiday spirit so I thought I’d share. So much more than calling the day after Thanksgiving, Black Friday. I always thought that such a dark negative term for the beginning of the Christmas shopping season. This is such a beautiful story that makes you understand that things truly do happen for a reason. Don’t forget to grab the tissue box.

The brand new pastor and his wife, newly assigned to their first ministry, to reopen a church in suburban Brooklyn , arrived in early October excited about their opportunities When they saw their church, it was very run down and needed much work. They set a goal to have everything done in time to have their first service on Christmas Eve.

They worked hard, repairing pews, plastering walls, painting, etc… and on December 18th they were ahead of schedule and just about finished.

On December 19th a terrible tempest – a driving rainstorm hit the area and lasted for two days.

On the 21st, the pastor went over to the church. His heart sank when he saw that the roof had leaked, causing a large area of plaster about 20 feet by 8 feet to fall off the front wall of the sanctuary just behind the pulpit, beginning about head high.

The pastor cleaned up the mess on the floor, and not knowing what else to do but postpone the Christmas Eve service, headed home. On the way he noticed that a local business was having a flea market type sale for charity so he stopped in. One of the items was a beautiful, handmade, ivory colored, crocheted tablecloth with exquisite work, fine colors and a Cross embroidered right in the center. It was just the right size to cover up the hole in the front wall. He bought it and headed back to the church.

By this time it had started to snow. An older woman running from the opposite direction was trying to catch the bus. She missed it. The pastor invited her to wait in the warm church for the next bus 45 minutes later. She sat in a pew and paid no attention to the pastor while he got a ladder, hangers, etc… to put up the tablecloth as a wall tapestry. The pastor could hardly believe how beautiful it looked and it covered up the entire problem area.

Then he noticed the woman walking down the center aisle. Her face was like a sheet.. ‘Pastor,’ she asked, ‘where did you get that tablecloth?’ The pastor explained. The woman asked him to check the lower right corner to see if the initials, EBG were crocheted into it there. They were. These were the initials of the woman, and she had made this tablecloth 35 years before, in Austria

The woman could hardly believe it as the pastor told how he had just gotten the Tablecloth. The woman explained that before the war she and her husband were well-to-do people in Austria. When the Nazis came, she was forced to leave. Her husband was going to follow her the next week. He was captured, sent to prison and she never saw her husband or her home again.

The pastor wanted to give her the tablecloth, but she made the pastor keep it for the church. The pastor insisted on driving her home, that was the least he could do. She lived on the other side of Staten Island and was only in Brooklyn for the day for a house cleaning job.

What a wonderful service they had on Christmas Eve The church was almost full. The music and the spirit were great. At the end of the service, the pastor and his wife greeted everyone at the door and many said that they would return. One older man, whom the pastor recognized from the neighborhood continued to sit in one of the pews and stare, and the pastor wondered why he wasn’t leaving.

The man asked him where he got the Tablecloth on the front wall because it was identical to one that his wife had made years ago when they lived in Austria before the war and how could there be two tablecloths so much alike.

He told the pastor how the Nazis came, how he forced his wife to flee for her safety and he was supposed to follow her, but he was arrested and put in a prison. He never saw his wife or his home again all the 35 years in between.

The pastor asked him if he would allow him to take him for a little ride. They drove to Staten Island and to the same house where the pastor had taken the woman three days earlier.

He helped the man climb the three flights of stairs to the woman’s apartment, knocked on the door and he saw the greatest Christmas reuni
on he could ever imagine.

In early October I decorate for Fall and Halloween and then the Halloween things come down and the Thanksgiving things go up.

On the Friday after Thanksgiving, the Thanksgiving things come down and I do a thorough cleaning and I start decorating for Christmas. When I was a kid, that was the day my day always insisted on the tree going up and we spent a good deal of the day wrapping presents while listening to Christmas carols.

I prefer not to do shopping on that weekend and stay home for leftover turkey sandwiches while getting into the Christmas spirit. This year in particular with Thanksgiving being so late!

When do you start decorating for Christmas?

Favorite Ingredient Friday ~ Snowbound Casserole

SNOWBOUND CASSEROLE
2 pounds hamburger
1 medium onion, chopped
8 ounces cream cheese, softened
4 ounces Velveeta, softened
1 can green beans, drained
1 can diced tomatoes with basil, garlic & oregano, drained
8 ounces Contadina tomato sauce
1 tablespoon sea salt
1 teaspoon white pepper
2 cups dry pasta of your choice, prepared

  • Brown hamburger and onion. Drain grease.
  • Add Velveeta and cream cheese and blend until cheeses are melted and mixture is well mixed.
  • Add tomato sauce and heat through.
  • Add salt and pepper.
  • Stir in tomatoes and green beans.
  • Fold in pasta.
  • Pour into a greased 9×9 stoneware baker.
  • Bake 45 minutes at 350 degrees.

Tempt My Tummy Tuesday ~ Macho Chicken Rojo

MACHO CHICKEN ROJO
4 skinless, boneless breasts, browned and shredded
2 cups red enchilada sauce
juice of 1 lime,
1 small can green chiles
1 large bunch green onions, sliced
1 can rotel tomatoes
2 teaspoons minced garlic, jar
1 cup long grain rice
1 cup cheese

  • Mix all together
  • Bake 1 hour at 360 degrees

Menu Plan Monday

Weekday breakfasts are always either toast, scrambled eggs or cereal so I don’t post those. Working from home, lunch is “whatever” so it isn’t definitive either, but weekends are usually a brunch and I will start posting those along with the dinners.
