Crockpot Chicken Cacciatore

4 large boneless, skinless Chicken breasts
16 oz. can Contadina diced tomatoes with garlic and herbs
1/4 cup powdered Parmesan cheese
1 medium onion, chopped
1 cup prepared beef broth (1 cup hot water + 2 teaspoons beef granules)
1 teaspoon dried basil
1 teaspoon dried oregano

  • Dredge chicken breasts in the Parmesan cheese packing it on firm.
  • Spray bottom of slow cooker with PURE.
  • Place chicken breasts on bottom.
  • Layer chopped onions on top of those.
  • Pour tomatoes over onions.
  • Whisk herbs into the broth and pour over all.
  • Cook on high 1 hour.
  • Cook on low for 6 hours.
  • Serve over cooked noodles or prepared rice.

Tuesday's Romance of Cookery and Housekeeping

Thousand Island Salad Dressing
  • 1/2 cup salad oil
  • 3 tablespoons lemon juice
  • 3 tablespoons orange juice
  • 2 teaspoons dehydrated minced onions
  • 2 tablespoons chili sauce
  • 2 tablespoons ketchup
  • 2 tablespoons minced sweet pickles
  • 1/2 teaspoon sugar
  • 1/4 teaspoon salt
  • 1/4 teaspoon paprika
  • 1 teaspoon Worcestershire sauce
Mix well in mini food processor. I like it a little thinner than traditional so it tosses easily. Chill 24-48 hours before using.

Friday's Feast

Appetizer Invent a new flower; give it a name and describe it.
I love German Bearded Irises, Sunflowers, lacy Parrot Tulips and Daisies, regular and Gerber. My new flower would have the delicate petals of the daisy with the fringed lacy edges of the Iris and Parrot Tulip and grow as tall and strong as the sunflower so they would last longer. Some would be red and yellow like the Parrot Tulips and others would have the deep purple and blue hues of the German Bearded Irises. I’d call it a Gracie after Sandra Bullock’s character because she was strong, lacy around the edges, bold and beautiful inside and out. It would smell like a cross of apple pie and pumpkin pie with a hint of cinnamon and vanilla.

James Earl Jones – I love when he narrates like he did the Serengeti for the IMAX film.

Salad On a scale of 1 to 10 with 10 being highest, how clean do you keep your car?
Used to be a 9, but since moving to the country, try as I might for the 9, I only reach a 7 most of the time. Winters are a -1.

Main Course How do you feel about poetry?

Hubby’s favorite wine glass = a juice glass
so he doesn’t get in trouble for breaking my stemware.

He’s broken so many over the years, that I began the old boarding house style. You know the style where it’s all crystal, but NONE of the pieces match each other. It actually works now since our dishes are Unikat polish pottery where no two pieces are alike either since they’re handmade. I keep telling him he can use the stemware now, but he like is juice glass!
