Photo Hunt – Metal



The top picture was yesterday under cloudy conditions.
The bottom two are today under sunny conditions.
The red pump is only decoration and something that’s been in my family a while.
The black pump is the original to this old house and is still on the well under all that snow.

Challenge 21 ~ Days 15-21

Well the 21 days is up. I have made tremendous progress, but have realized it was unrealistic to try and accomplish my whole task in just 3 weeks, at least not while still living life and dealing with the day to day hassles, issues, projects, work, etc…. I will keep trudging on though until I have a finished project.

Favorite Ingredient Friday ~Easter Edition~Heavenly Hash

My entry is actually for after Easter, what do do with those leftover ham scraps.

1 – 2 pound package frozen diced hash brown potatoes
1 can cream of celery or cream of mushroom soup
2 cups diced ham
1/2 teaspoon dried thyme
3 cups grated sharp or longhorn cheddar cheese (about 12 ounces)
1 cup sour cream
1 bunch green onions, finely diced
1 cup crushed potato chips

Mix soup, sour cream and thyme until smooth. Add the ham and green onions. Add in the cheese and blend well. Fold in the hash brown potatoes. Bake until top is slightly golden, about 1 hour. Sprinkle with crushed potato chips and bake an additional 10 minutes.

I like to serve this with fluffy scrambled eggs.

Great for brunches or large groups.

Given the choice, would you prefer to live in the country or in the city? Definitely country, but that’s also what I like about our small town in the North Woods, you can live in the city and still be in the country.

Fill in the blank: I couldn’t believe it when I heard the alarm go off this morning. I haven’t been feeling well and sleep comes in spurts, but something scared the big ‘watch’ dog and he tried to get in bed with us at 3AM and was a royal pain in the neck until about 4:30AM, so when the alarm went off at 6:30AM I was NOT ready!

Main Course

If you could star in a commercial for one of your favorite products, which one would you want to advertise? Too many to choose from, but probably a kitchen product like crock pot or something.

Dessert

What type(s) of vitamins and/or supplements do you take on a regular basis? Because of a chronic condition there are way too many to list, but most are herbal supplements thanks to the help of the best Rhuematoligist I ever met. She has been a Godsend from day one on learning about diet and life.

Freezer Food Friday ~ Chili

3 pounds hamburger
2 large white onions, chopped
2 cans diced tomatoes
2 cans Rotel original tomatoes
2 – 4 oz. cans diced green chiles
3 cups V-8 juice
4 cups beef broth
2 tablespoons ground cumin
2 tablespoons Hungarian paprika
1 tablespoon sea salt
1 tablespoon black pepper
1 teaspoon cayenne pepper
3 teaspoons jar garlic or 3 cloves fresh

In a large stock pot, brown the hamburger and onion together. Drain the fat off. Mix in all the other ingredients. Bring to a boil. Turn down to a low simmer for 3-4 hours. After dinner separate the remaining chili into 4 freezer containers, label and freeze for future meals.

I received this email this evening and thought it was so touching that I needed to share it.


As we grow up, we learn that even the one person that wasn’t supposed to ever let you down probably will. You will have your heart broken probably more than once and it’s harder every time. You’ll break hearts too, so remember how it felt when yours was broken. You’ll fight with your best friend. You’ll blame a new love for things an old one did. You’ll cry because time is passing too fast, and you’ll eventually lose someone you love. So take too many pictures, laugh too much, and love like you’ve never been hurt because every sixty seconds you spend upset is a minute of happiness you’ll never get back. Don’t be afraid that your life will end, be afraid that it will never begin.

BBQ Chicken Casserole

1 1/2 pounds boneless chicken breasts or thighs, diced
2 cups Sweet Baby Ray’s BBQ sauce
1 cup pineapple juice
1 cup orange juice
1 cup dried apricots, diced
1 small white onion, diced
1 1/2 cups long grain rice

Mix all together and put into slow cooker. Cook 6 hours on low.

As a variation I like to add leftover charred kielbasa sausage.
