BLEU CHEESE STUFFED PORK LOIN

OOPS wrong adage, but the try, try again really fits.  I like to succeed, but I also LOVE to experiment.  My dear friend Jenn and hubby both gave yesterday’s Bleu cheese spread for the Danish Cube Steaks two thumbs up, but I couldn’t stop there – I still had spread left!  I also had a fresh pork loin and had just read Martha’s STUFFED FLANK STEAK recipe and voile’ just like Melanie Griffith, er Tess McGill in Working Girl combining Trask and radio to succeed, I had an idea! I combined pork roast, our new favorite Bleu cheese spread and Martha’s flank steak style with superb results – true success!
STUFFED PORK LOIN – serves 4
1 small pork roast, cut in half
1 1/2 ounces Bleu cheese crumbles
1/4 cup mayonnaise
1/8 cup minced green onions
  • In a small food processor blend together the mayonnaise, bleu cheese crumbles and green onions until smooth.
  • Cut volcano shaped slice out of the center of each pork half.  Next time I will buy a large roast and have it butterflied, but today I worked with what I had.
  • Fill with bleu cheese mixture.
  • Salt and pepper generously.
  • Bake at 350 degrees for 1 hour- 1 1/4 hours.
 
 
 
Now nothing goes to waste at our house.  We use it until it can be used NO more.  If it’s a sauce, it may become a dressing for hubby’s salads by adding flavored vinegars or oils or a filling for a casserole, but it gets used.  I had  a tiny bit of our favorite BBQ sauce left, but it wasn’t enough to do much with, so I used it as a rub on the baked potatoes and then mixed the last couple of tablespoons with some butter and sour cream and darned if it wasn’t super yummy and flavorful too!

Vegetable Pork Stir Fry

VEGETABLE PORK STIR FRY
Peanut Oil
egg white (save the yolk for the fried rice)
1 tablespoon cornstarch
3/4 pound thin pork chops (chicken works great too)
1 large bunch green onions, sliced thin
1 cup snow peas
3/4 cup carrots slices
1 cup broccoli florets
3 tablespoons rice wine vinegar
2 tablespoons soy sauce
1 teaspoon sesame oil
1/4 cup orange juice

  • An hour before you plan on cooking slice pork chops into thin strips.
  • Whisk together the egg white and cornstarch.
  • Coat pork strips in egg mixture and chill for 1 hour.
  • Slice the onions, carrots and broccoli to bite size pieces.
  • Cut the snow peas in half if they are large or leave whole.
  • Heat peanut oil to medium high.
  • Stir Fry pork pieces quickly and remove to drain on paper towel.
  • Add vegetables and stir fry until tender. Add pork slices back in.
  • Whisk together the soy sauce, sesame oil and orange juice.
  • Add to the pan and toss to coat.
  • Heat through until glaze forms.
  • Serve with Fried Rice (recipe follows).

7UP TROPICAL GLAZED PORK CHOPS or TENDERLOIN

7UP TROPICAL GLAZED PORK CHOPS
4-6 large pork steaks, chops or loin
4 ounces 7UP
3/4 cup apricot pineapple preserves
1 cup brown sugar
8 ounces crushed pineapple juice
1 teaspoon red pepper flakes

  • Preheat oven to 425 degrees.
  • Whisk together the 7UP, pineapple, apricot preserves, red pepper flakes and brown sugar.
  • Generously salt and pepper the pork chops.
  • Spread a small layer of the glaze on the bottom of the roasting pan.
  • Lay the pork chops on top and spread the remaining glaze on top and along the sides.
  • Baste as necessary.
  • Bake 25-30 minutes or until meat thermometer reads 165-170 degrees.

This is also a great way to prepare chicken.

APRICOT PORK CHOPS & SCALLOPED POTATOES

As I bring my old recipes over to the new blog I’m evaluating each one on their merits and taking new pictures as necessary.  There are a few (very few) recipes though that I’m re-evaluating as to whether I would ever even make them again.  I’m trying to only post things here that would be served at my table again in the future.
The following recipe was originally tried and posted as a Pork Chops and Scalloped potatoes done in the crock pot with cherries.  While it was okay, but not something we would make again, the recipe itself still had merit so I adjusted the recipe yesterday and tried it again and VOILA we have a recipe I will serve again and again!  This recipe will also work with thinner pork chops as well.

APRICOT PORK CHOPS & SCALLOPED POTATOES
4 bone in pork chops
8 apricots, washed, pitted and sliced thin
3 large potatoes, scrubbed and sliced thin
1 bunch green onions, sliced thin
1/2 cup heavy cream
3 tablespoons butter
3+ tablespoons Wondra flour
1/8 cup sugar
finely grated cheddar cheese
salt and pepper to taste

  •  Lay apricots in a single layer in a baking dish and sprinkle with the sugar.  Set aside for an hour or so.
  • Save you nicest looking apricot pieces to lay on top of pork chops. Puree the rest.
  • In a small sauce pan melt the butter.  Whisk in 3 tablespoons of Wondra flour until golden.
  • Gradually add the cream, stirring continuously until smooth.
  • Gradually add in half or more of the apricot puree.
  • Preheat oven to 325 degrees.
  • Spray an 11×7 baking dish with non-stick cooking spray.
  • Start layering potatoes into the bottom of baking dish, salt and peppering with a dusting of flour and sprinkled with green onions and grated cheese between layers.
  • Once all the potatoes are layered, pour 2/3 of your sauce over the potatoes and allow it to dribble and settle  into all the cracks.
  • Lay pork chops on top of sauce in a single layer.
  • Arrange reserved apricot pieces on top of pork chops.
  • Add remaining puree to remaining sauce and whisk until smooth. 

  • Carefully pour over pork chops.
  • Cover with lid.
  • Bake 1 – 1 1/2 hours (depending on thickness and doneness of chops and potatoes.) Remove lid last 15 minutes.  Potato layer will be bubbly.

INDONESIAN PORK ROAST ala TAMY

This is one of those recipes I found somewhere and set aside, but kept peeking back at it now and then.  I finally ran out of reasons not to try it and am kicking myself for not trying it sooner. The changes I made for an even better flavor in our opinion.

INDONESIAN PORK ROAST ala TAMY
2 pound pork tenderloin
4 tablespoons low sodium soy sauce
4 tablespoons reduced-fat JIF creamy peanut butter
2 teaspoons crushed red pepper flakes
4 cloves garlic, minced
PAM
1/2 cup mango chutney apricot pineapple jam
6-8 slices bacon**
  • Preheat oven to 375 degrees.
  • Combine soy sauce, peanut butter, red pepper flakes and garlic, mixing well.
  • Using a heavy duty cookie sheet or roasting pan line it with heavy duty foil.
  • Spray with pure. Arrange bacon slices.
  • Spread 1/4 of mixture over bacon slices.
  • Top with tenderloin.
  • Spread remaining sauce on top and sides.
  • Wrap bacon slices up and over securing with toothpicks.
  • Roast, uncovered for 45 minutes.
  • Brush evenly with jam and bake for an additional 15 minutes.
  • Turn off oven and let rest 10 minutes.
  • Slice and serve.

**I bought my tenderloin at costco and instead of being a whole tenderloin it was 2 halves. So I used bacon slices to wrap it as a whole and that addition made a fantastic difference.

PORK CHOPS in ORANGE SAUCE

PORK CHOPS in ORANGE SAUCE
4 boneless pork chops
2 tablespoons butter
1/4 teaspoon paprika
1/4 teaspoon white pepper
3/4 cup fresh squeezed orange juice
2 tablespoons sugar
2 tablespoons flour
1/4 cup cold water

  • Combine paprika and pepper.
  • Rub both sides of all pork chops with mixture.
  • Melt butter in skillet and brown pork chops over medium heat.
  • Combine the orange juice and sugar, stirring until sugar is dissolved.
  • Pour over pork chops.
  • Reduce heat and simmer covered for 20 minutes until chops are cooked through.
  • Remove chops and keep warm.
  • Whisk together the flour and water until smooth.
  • Whisk into orange juice mixture and bring to a boil, simmering until thickened.
  • Serve over the chops.

With just the 2 of us, I take the leftover pork chops and shred them into the sauce. We then eat the leftovers over noodles or mashed potatoes.

HOMEMADE BBQ SAUCE

HOMEMADE BBQ SAUCE
1 cup packed brown sugar
1/2 cup apple cider vinegar
1/4 cup molasses
1/4 cup honey
1/4 cup Worcestershire sauce
2 tablespoons dark rum
1 tablespoon liquid smoke
1 teaspoon white pepper
2 teaspoons garlic powder
2 1/2 cups Portland Ketchup

  • In a large saucepan combine all the ingredients except the ketchup. 
  • Cook uncovered until sugar is dissolved and all ingredient are well blended.
  •  Add ketchup and bring to a slow boil, stirring constantly. 
  • Reduce heat and simmer uncovered, stirring often (about 30 minutes) until dark and thick.

PORK in ORANGE SAUCE

My wonderful SIL recently (this was originally posted 11-19-2010) returned from a cruise to Panama – lucky her! – she had a great time, but lucky me – she sent me a new cookbook of Mexican recipes.  I have tried 3 recipes so far this week and we loved all 3!!!!!!!!!  But, hubby all but licked his plate on this one tonight. And this recipe was soooooooooo simple!  I did tweak the original recipe to suit us, but the basics are all still there.

2 pound pork tenderloin, cut into pieces
1/3 cup diced dried apricots
1 cup white wine vinegar
1 teaspoon cumin
3 cloves garlic, finely minced
1 teaspoon sea salt
1/2 teaspoon red pepper
4 tablespoons butter
1 cup fresh orange juice
1/3 cup lemon juice
sliced oranges for garnish
mashed potatoes (original recipe called for mashed sweet potatoes but hubby doesn’t care for them)

  • In a large bowl combine vinegar, cumin, garlic, red pepper and salt.
  • Drop in pork cubes and make sure they are completely coated.
  • Cover and refrigerate 6 hours or more.
  • Remove pork pieces from marindae, but reserve the marinade.
  • Pat the meat dry.*
  • In a heavy skillet, melt the butter.
  • Brown the pork cubes until golden.
  • Add the reserved marinade and bring to a boil.
  • Reduce heat to low, cover and simmer until pork is tender (30 minutes or so).
  • Stir in orange and lemon juices last 15 minutes.

*Next time I will brown the pork first and then marinade the meat so there is a bit of a crusty edge.

NOTE:  Any time you marinade in vinegar, meat will take longer to brown.

Pineapple Cider Brine Pork Chops w/ Root Beer Pineapple BBQ sauce for Magazine Monday

No seriously, the main ingredients were changed to make my family happy as the original recipes had ingredients that my family just won’t eat! When I do ‘recipe experiment’ night I try to do EVERY part of the meal as a new recipe. Some times I get lucky and they ALL are worth sharing. I’m a ‘no measure’ cook, well at least a no exact measure cook so when I invent a new recipe, it sometimes works and sometimes doesn’t. But, today worked!

PINEAPPLE CIDER BRINE PORK CHOPS

1 1/2 cup water
8 ounce can crushed pineapple
1 cup packed brown sugar
1/4 cup sea salt
1 teaspoon thyme
1/2 teaspoon white pepper
2 1/2 cups apple cider vinegar
4 thick pork chops

  • In a large sauce pan whisk together water, cider vinegar, sea salt and brown sugar together until salt and sugar are dissolved.
  • Bring to a boil.
  • Add seasonings and blend well.
  • Slow simmer 10 minutes.
  • Cool.
  • Immerse pork chops and soak 12-24 hours. I used my 8 cup pampered chef batter bowl so the chops had plenty of room to ‘swim’.
  • Drain chops.
  • Grill or broil 5-6 minutes on each side.
  • Heat enough Root Beer Pineapple BBQ sauce to cover the chops.
  • Brush each side of chops with BBQ sauce for the last few minutes.

ROOT BEER PINEAPPLE BBQ SAUCE

12 ounce MUG root beer
8 ounce can crushed pineapple
4 tablespoons butter
1 bunch green onions, sliced thin
4 teaspoons minced garlic, jar
1 cup packed dark brown sugar
1/4 cup molasses
1 cup ketchup
1/2 cup apple cider vinegar
3 tablespoons sun dried tomato pesto
1 teaspoon sea salt
1 tablespoon liquid smoke
1 tablespoon Frank’s hot sauce
2 tablespoons cornstarch

  • Melt butter in a large saucepan.
  • Add onions and garlic, Saute’ until tender.
  • Add other ingredients, except cornstarch, and bring to a boil.
  • Reduce heat and simmer 30 minutes.
  • Remove 1 cup of sauce and whisk cornstarch into it.
  • Return mixture to the sauce pan and simmer 15 minutes.
  • Cool 15 minutes.
  • Refrigerate,
  • Makes 4 cups.

LUAU BENEDICTS, HOT HOLLANDAISE SAUCE and SWEET & SOUR BBQ PULLED PORK

LUAU BENEDICTS
1 English muffin per person
2 eggs per person
enough leftover sweet and sour pulled pork
Hollandaise sauce

  • Prepare Hollandaise sauce.
  • Toast English muffins.
  • Poach eggs.
  • Layer together starting with English muffin, pulled pork, poached egg and the hollandaise sauce.
  • Enjoy.

HOLLANDAISE SAUCE
1/2 cup butter
3 large egg yolks
1 tablespoon plus 1 teaspoon of lemon juice
1/8 teaspoon salt
dash cayenne pepper or hot pepper sauce
2 tablespoons hot water
finely chopped fresh parsley, if desired

•    Heat butter in a heavy saucepan until hot and foamy, but not browned.
•    In a small bowl, whisk or beat egg yolks with lemon juice, salt, and  hot sauce.
•    Gradually beat in butter, then water.
•    Return mixture to saucepan and beat over very low heat until mixture is slightly thickened.
•    Serve immediately or let stand over warm water for up to 30 minutes.
•    If desired, sprinkle with chopped fresh parsley before serving.

Makes about 2/3 cup of Hollandaise sauce.

This is a relatively good for you, tasty slow cooker recipe that is great for the freezer and a favorite of the kids, especially when you put it on a roll like a sloppy Joe. This is another recipe that I like to make in large portions and then freeze in portions after the initial meal which is great for week nights. In this case I will freeze the remainder for the Christmas Holiday gang we’ll have.

Sweet & Sour BBQ Pork
6 pounds boneless pork sirloin roast
1/2 pound bacon, cut into pieces
1 large sweet Vidalia onion, sliced into rings
1 1/2 cup apple cider vinegar
1 1/4 cup apricot pineapple jam
2 1/2 cups brown sugar
1/4 cup molasses
1/4 cup soy sauce
1/4 cup soy sauce
3 teaspoon minced garlic, jar
1/2 teaspoon ground ginger
1/2 teaspoon salt
1/2 teaspoon white pepper

  • Cut the bacon into small pieces.
  • Cut all large portions of fat off the roasts.
  • Spray the crock pot with PURE and set for high.
  • Place bacon on bottom with the roasts arranged over it.
  • Slice onion into thin rings and layer over roasts.
  • Whisk together the vinegar, soy sauce, molasses and honey.
  • Add the brown sugar until dissolved.
  • Whisk in the seasonings, garlic and jam.
  • Bring to a SLOW BOIL.
  • Pour over meat and onions.
  • Cook on high for 4-6 hours.
  • Remove roast and shred meat. Return meat to slow cooker and cook another hour.
  • For a more adult meal I thicken the gravy and serve it over mashed potatoes.

TROPICAL GLAZED PORK TENDERLOIN

TROPICAL GLAZED PORK TENDERLOIN
2-3 pound pork tenderloin
1 cup apricot pineapple preserves
1 1/2 cup brown sugar
1/2 cup pineapple juice

  • Preheat oven to 425 degrees.
  • Whisk together brown sugar and pineapple juice.
  • Blend in preserves.
  • generously salt and pepper the pork loin.
  • Spread a small layer of the glaze on the bottom of the roasting pan.
  • Lay the pork loin on top and spread the remaining glaze on top and along the sides.
  • Baste as necessary
  • Bake 45-60 minutes or until meat thermometer reads 170 degrees.

SWEET & SOUR PORK CHOPS

SWEET & SOUR PORK CHOPS
4 thick boneless pork chops
2 tablespoons olive oil
sea salt and white pepper
1/3 cup balsamic vinegar
2 tablespoons honey
3 + 2 tablespoons butter
fresh rosemary
  • Drizzle one tablespoon of olive oil on a plate.
  • Salt and pepper pork chops and lay in olive oil seasoned side down.
  • Salt and pepper tops and drizzle with remaining olive oil.
  • Let sit for 30 minutes.
  • In a small saucepan combine vinegar and honey, blending well. Cook until reduced to about 1/4 cup.  Add butter and rosemary. Set aside.
  • Melt remaining butter in sizzling skillet.
  • Add pork chops and brown on both sides.
  • Brush on glaze and cook through.
  • Enjoy.
