- Preheat oven to 350 degrees.
- Butter and line with parchment or foil a 9×9 or 8×8 pan; set aside.
- Beat melted butter and brown sugar together until well mixed.
- Add egg and vanilla, and continue to beat until mixed.
- Stir in salt and flour.
- Remove 1 cup of the batter and set aside; pour remaining batter into prepared pan.
- Stir reserved batter and Nutella until well mixed; dollop onto batter and swirl with a butter knife.
- Bake at 350 degrees for 25 minutes.
- Allow to cool before lifting bars from pan; cut into small squares to serve.

2 cups pineapple juice
2 eggs beaten
4 tablespoons cornstarch
1 cup sugar
mini marshmallows (OPTIONAL)

- Sprinkle blackberries over pineapple.
- In a sauce pan whisk together the pineapple juice, eggs, sugar and cornstarch.
- Cook until thick.

- Top with marshmallows and return to oven until golden.

TORTILLA ROLL-UPS
8 ounces sour cream
8 ounces cream cheese softened
1 bunch green onions, sliced thin
1/3 pound ham, chopped fine
7 ounce can roasted chiles, drained well
1 small can chopped olives
flour tortillas
- In a small food processor blend all ingredients together until smooth.
- Spread 4 tablespoons on each tortilla leaving 1/2 inch along one edge.
- Roll up each tortill ending on the dry edge.
- Lay side by side on a plate.
- Cover loosely with saran.
- Chill overnight.
- Slice into 1/2 inch rounds just before serving.

STOVE TOP HERBED CHICKEN
Stovetop Herbed Chicken
3-4 boneless, skinless chicken breasts
1 bunch fresh parsley
2-4 sprigs fresh rosemary
2-4 sprigs fresh thyme
2 green onions or scallions
olive oil
Directions: Mince all herbs. Sprinkle (or press) herbs onto both sides of chicken breasts. Pour olive oil in a large pan. Cook chicken 3-4 minutes on medium-high heat; turn and cook on the other side. (Chicken will get a crust on the outside with the herbs). Cook until chicken juices run clear.

CELEBRATE LIFE!
IDIOMS~NO RHYME OR REASON
While I’m not ready to delve into it publicly yet, I do want to leave you with this thought by Erma Bombeck. Please remember to enjoy your life, your family and all you have – the power of positive thought can work. By taking care of you, you can be there for your family and friends.
I would have burned the pink candle sculpted like a rose before it melted in storage.
I would have talked less and listened more.
I would have invited friends over to dinner even if the carpet was stained, or the sofa faded.
I would have eaten the popcorn in the ‘good’ living room and worried much less about the dirt when someone wanted to light a fire in the fireplace.
I would have taken the time to listen to my grandfather ramble about his youth.
I would have shared more of the responsibility carried by my husband.
I would never have insisted the car windows be rolled up on a summer day because my hair had just been teased and sprayed.
I would have sat on the lawn with my grass stains.
I would have cried and laughed less while watching television and more while watching life.
I would never have bought anything just because it was practical, wouldn’t show soil, or was guaranteed to last a lifetime.
Instead of wishing away nine months of pregnancy, I’d have cherished every moment and realized that the wonderment growing inside me was the only chance in life to assist God in a miracle.
When my kids kissed me impetuously, I would never have said, ‘Later. Now go get washed up for dinner.’ There would have been more ‘I love you’s’ – More ‘I’m sorry’s.’
But mostly, given another shot at life, I would seize every minute. Look at it and really see it. Live it and never give it back. STOP SWEATING THE SMALL STUFF!
Don’t worry about who doesn’t like you, who has more, or who’s doing what. Instead, let’s cherish the relationships we have with those who do love us.
CLASSIC GOOD EATS ~ OVEN BBQ CHICKEN
OVEN BBQ CHICKEN
Whole chicken pieces cut up, washed and dried
BBQ Marinade (recipe below)
BBQ Seasoning (recipe below)
BBQ Sauce (recipe below)
- Rinse Chicken well and pat dry.
- Loosely layer chicken pieces in a large bowl and pour BBQ marinade over and sprinkling BBQ seasoning over each layer.
- Refrigerate overnight.
- Remove chicken from refrigerator 30 minutes before you plan to put it in the oven.
- Preheat oven to 350 degrees.
- Spray a jelly roll pan with PURE.
- Place chicken pieces on pan.
- Generously brush with BBQ sauce.
- Bake 45 minutes or until cooked through and crisp.
- Brush with more BBQ sauce.
BBQ MARINADE
2 cloves roasted garlic, crushed
1 tablespoon red pepper flakes, crushed
1/2 teaspoon oregano
1/2 teaspoon basil
1/2 teaspoon white pepper
1 teaspoon sea salt
1/2 teaspoon sweet Hungarian paprika
1 tablespoon sugar
2-3 tablespoons BBQ seasoning
1/3 cup Champagne vinegar
1 cup vegetable oil (I prefer Canola)
- Whisk all the dry ingredients together until well blended.
- Add oil, whisking until dry ingredients are well incorporated.
BBQ SEASONING
1 1/2 cups paprika
3/4 cup sugar
3 tablespoons onion powder
1 tablespoon garlic powder
- Blend ingredients together well.
- Store in an airtight container.
BBQ SAUCE
2 cups Heinz ketchup
1 cup apple juice
1/2 cup apple cider vinegar
5 packed tablespoons light brown sugar
2 cloves garlic, smashed
2 teaspoons fresh ground pepper
2 teaspoons onion powder
Juice of 1 lemon
1 tablespoon Worcestershire sauce
- In a large saucepan combine all the ingredients, stirring to blend.
- Bring the mixture to a boil.
- Reduce heat and simmer uncovered for an hour, stirring frequently.

TAILGATING TIME 2.0
It doesn’t matter if you are a football fan or not, great party food is always a good thing. Bring over your grilled goods, chips and dips, appetizers, chili and chowders, cocktails, or any recipes that would be great for the football party buffet!
REALITY CHECK
DEAR ABBY: A former student asked me to write a character reference to help her land a teaching job abroad. I agreed, since I thought highly of her potential as a teacher and scholar, and her level of character. However, after she was placed in the classroom, the ministry of education of the nation where she was to teach discovered some inappropriate posting on her social networking site.
Because I had written the recommendation, they contacted me asking if they had a problem and provided me with copies of what they had found. Her posting detailed a history of forging fake IDs to buy alcohol while underage, numerous episodes of binge drinking in high school and college, her marijuana use and several exhibitionistic stunts and sexual activities that I won’t mention. I was shocked. None of this matched the person I thought I knew.
When I tried to contact her to let her know she had been discovered, she rebuffed my inquiries and cut off all contact! Her parents’ response was denial and to “kill the messenger.” I have been left with the problem of how to respond to the ministry’s questions.
Ordinarily I would not want my signature associated with someone with those behaviors and attitudes, but this young woman is in legal jeopardy abroad. I still don’t know if what she wrote is true, but I find it highly problematic that she would portray herself as she did.
This situation has so shaken my trust in the character and judgment of the 20-something crowd that I’m now reluctant to write recommendations for any of my students. What do you think I should have done? I’m concerned that too many of these young people, however intelligent, lack integrity, character, judgment and common sense. — HEARTBROKEN TEACHER, OAKLAND, CALIF.
DEAR HEARTBROKEN: You responded appropriately by trying to contact your former student and her parents. If the information on that social networking site is an accurate reflection of her behavior, she could get herself in real trouble if the country she’s in is one with conservative social views.
It is intelligent of you to think twice about giving references to students in the future. It’s important that you be careful because there could be liability for you if you knew anything about her antics when you wrote her recommendation. If you are wondering how to respond to the ministry of education, what you need to convey is that you had no knowledge of any social networking sites or postings related to her, and that you were basing your recommendations on your personal interactions with her.
Let this be a lesson to all young people who are using social networking sites. Employers are doing background checks and you will be discovered. Any past communications you have on the Internet are there to stay.
This has been a hot topic in the media. But I’m interested to know what you, my readers, both young and old, think about this. You teach me more than I teach you, and this subject is one of great importance.
