It’s hot, some of us are on vacation, others wish they were, and often the last thing we want to do is turn up the heat in our kitchens by baking. I have just the answer for this week’s Save Room for Dessert — a delicious, no-bake cherry cheesecake recipe.

No-bake cherry cheesecake recipe
4 oz. cream cheese
1/2 cup powdered sugar
1 tablespoon vanilla extract
1 cup whipping cream
1 small can cherry pie filling
1 graham cracker pie shell or pre-baked pastry shell

In a large bowl, beat cream cheese, powdered sugar, and vanilla extract together. In a separate bowl, whip the whipping cream until stiff peaks form. Gently fold the whipped cream into the cream cheese and evenly pour into pie shell. Pour cherry filling over the cream cheese mixture and keep chilled until ready to serve.

Hubby isn’t a cheesecake fan & most recipes are just too much (time & cake!)for me but this recipe seems quick & small enough…thanks for sharing!
