SWEET & SOUR CUCUMBERS

1 cucumber, chopped
1 large firm tomato, chopped
1 bunch green onions, sliced
6 tablespoons rice wine vinegar
3 tablespoons sugar

  • Toss chopped vegetables together in a tuuperware bowl.
  • Whisk together vinegar and sugar until well blended and sugar is dissolved.
  • Pour over vegetables.
  • Chill several hours or overnight.
