CRANBERRY CHICKEN SALAD
1/2 cup DUKE’S mayonnaise
1/2 teaspoon paprika
FRESH ground sea salt and black pepper, to taste
3/4 cup cranberries
1/2 cup FINELY chopped celery
2-3 green onions, chopped
2 cups chopped rotisserie chicken pieces
thin sliced baby Swiss cheese
- Whisk together the mayonnaise and paprika.
- Fold in the celery, cranberries, green onions and chicken pieces.
- Season to taste.
- Refrigerate 1-2 hours before serving.
- Serve on croissants with the Swiss cheese.
