TUNA MELTS TOO
2 small cans solid white albacore tuna
5 green onions, minced
4 large sweet pickles, chopped small
1 tablespoon lemon juice
salt & pepper
1 soup spoon full of mayonnaise
sharp or colby cheddar cheese
sourdough bread
2-3 tablespoons butter

  • Mix together the onions, pickles, lemon juice, salt and pepper
  • Add tuna and mix well
  • Add just enough mayo to hold it all together
  • Melt butter on grill
  • Lay all slices of bread on grill
  • On half place your cheese slices
  • On the other half spread your tuna
  • When cheese is soft assemble sandwiches
  • Brown both sides real well

TIP: By melting the butter on the pan you get better coverage on your bread while actually using less butter.

HOMEMAKING AND MAKING A HAPPY HOME to me isn’t being clutter free – that just doesn’t happen in real life, but I do like to make sure under that clutter everything is clean. One of the things I do daily so it doesn’t become a chore is keep a Scrubbing Bubbles or Clorox Wipes (whichever is on sale) container of wipes under each bathroom sink. Just before my shower, I wipe down the sink and toilet. That way it’s done daily and isn’t a big chore on the weekend. This is a TUESDAY TIP too.

TUESDAY TIP ~ When you make bacon on the weekend, save it in a pyrex storage container large enough for the grease and a can of green beans. Cover it and refrigerate. On the night you’re having green beans, open them into the pyrex and microwave for 2 minutes for flavorful green beans.

TEMPT MY TUMMY TUESDAY is the perfect place for trying new and exciting recipes.

HUEVOS con YUMMY
2 cups diced ham, crumbled beef or sausage
2 cans diced tomatoes
1 can green chiles, chopped
1 bunch green onions, chopped
2 cups shredded mild cheddar or colby cheese
8 eggs

  • Brown meat and onions in a large skillet.
  • Add tomatoes and chiles.
  • Simmer 20 minutes until liquid is absorbed.
  • In a separate pan, lightly scramble the eggs.
  • Add to the meat mixture after liquid absorbed.
  • Stir in cheese until melted.
  • Serve with warm tortillas and Garden Tomato Salsa.

Cooking Thoughts and goals

Along with my list of goals that I posted last week is my desire to rework some older recipes so that they fit into my current health issues as well as an ease of preparation. I would also like to broaden my horizons. I’m a creature of habit no matter how much I experiment. I tend to gravitate back to the same ingredients time after time. So instead of changing those ingredients, I’d like to expand that list of ingredients!

I have been doing Slow Cooking Thursday, hosted by Sandra at Diary of a Stay at Home Mom for quite some time now, but missed a few last year for lack of ideas. So on my list of goals is to rework some of my older recipes into Slow Cooker recipes and not miss any Thursdays this year. I’m spending a bit of time each week reworking a few recipes each week and then hubby has agreed to be my taste tester a few nights a week during the following month to decide if they taste okay slow cooked instead of the traditional methods of cooking that particular recipe. I think we’ll find that they are easier, have less fat and are even more flavorful with the extended cooking time.

Coming soon from the recipes I have already reworked will be an array of beef, pork and chicken recipes like Hungarian Goulash, Linguine & Chicken, Chicken in Italian Cream, Cherry Pork Chops & Potatoes, Sweet & Sour Beef, Hawaiian Roast Beef, Beer Braised Beef Stew, Ranch Chicken in Cream Gravy and Baked Potato Soup.

Beginning today, Erin over at $5 Dinners is hosting a new Meme $5 Dinner Challenge in an effort to help us all exchange frugal recipes. For me $5 dinners means that I can feed the two of us for $5, but I rarely am able to prepare a serving for 2 LOL too many years of cooking for many more so often my recipes are for full portions and I freeze much of it (usually 2 or more freezer portions) for future use but they usually average $5 per serving.

I’ll start with Thanksgiving. Of course we have turkey, but it’s what I do with the turkey that counts. There were just the 2 of us this year, but I still bought a 25 pound bird. The sale prices are phenomenal at this time of year. Hubby and I can eat turkey until we’re the ones that are stuffed and then still have enough left over to portion out and freeze.

When I make my turkey I start with a roaster full of chopped carrots, celery and onions as a cushion under the bird. Then I throw in a bag of cranberries, the heart, liver, gizzard and a stick of butter that has been cut into several pieces. To that I add 3 cups of homemade chicken broth. I stick another stick of butter in the bird’s cavity, salt and pepper the bird really well and tent foil it. I don’t uncover it again until 20-30 minutes before it should be done. I baste it every 10 minutes until crisp. The result is the juiciest and tastiest turkey you ever did eat.

Now while hubby is carving the turkey, I start the gravy. By the time the turkey is done the vegetables have turned to mush which is fine by me. If they haven’t, I puree them in the food processor until they are. The cranberries add a bit of tart to the gravy that we like. This makes enough gravy for hubby and I for several days as well as 4-4 cup portions for the freezer.

Eventually I have nothing left but the carcass and crisp skin and start the broth process. I use a large stock pot and cover the carcass with water. I let it boil for about an hour and it creates the tastiest broth. I strain the broth in batches. This year I ended up with 9-4 cup portions of broth for the freezer. YAY! We have lots of soup base! All in all my $25 turkey has provided us with the basis for about 15 meals bringing me in way under budget!

TIP: If you ever have the opportunity to get these Tupperware labels, they are awesome. They stick in the freezer, peel off easily and are inexpensive. They are a great way to keep the “freezer mystery surprise” out of your freezer and stay organized too.

While the broth was boiling I made these awesome and SUPER EASY Butterfinger cookies and some strawberry ones too.

BUTTERFINGER COOKIES
Ritz crackers
creamy peanut butter
almond bark
sprinkles

Spread peanut butter on ritz crackers and top with another cracker. Melt almond bark in the microwave. Dip each cookie in the almond bark and set onto wax paper to harden. If you’re using sprinkles do so before the almond bark hardens.

STRAWBERRY FILLED COOKIES
Vanilla wafers
strawberry cream cheese
almond bark
sprinkles

Spread strawberry cream cheese on a vanilla wafer and top with another wafer. Melt almond bark in the microwave. Dip each cookie in the almond bark and set onto wax paper to harden. If you’re using sprinkles do so before the almond bark hardens.

Favorite Ingredient Friday ~ Snowbound Casserole

SNOWBOUND CASSEROLE
2 pounds hamburger
1 medium onion, chopped
8 ounces cream cheese, softened
4 ounces Velveeta, softened
1 can green beans, drained
1 can diced tomatoes with basil, garlic & oregano, drained
8 ounces Contadina tomato sauce
1 tablespoon sea salt
1 teaspoon white pepper
2 cups dry pasta of your choice, prepared

  • Brown hamburger and onion. Drain grease.
  • Add Velveeta and cream cheese and blend until cheeses are melted and mixture is well mixed.
  • Add tomato sauce and heat through.
  • Add salt and pepper.
  • Stir in tomatoes and green beans.
  • Fold in pasta.
  • Pour into a greased 9×9 stoneware baker.
  • Bake 45 minutes at 350 degrees.

This was supposed to run the end of December for Scrumptious Sunday, but since Meredith has not responded to my request to adopt the meme yet, I decided to run it early so others can benefit from the recipes. I will contact Meredith again in the hopes of adopting this meme and continuing it since she is leaving the blog world. One of the biggest tips I can offer is that in order not to stress yourself out you need to plan ahead and make as many things as you can early – long before the big day!

PEANUT BUTTER BOURBON BALLS

1 cup powdered sugar
½ cup creamy peanut butter
4 tablespoons butter, softened
2 tablespoons bourbon extract
1 pound almond bark (white & milk both)

Combine sugar, butter and peanut butter and mix well. Line a cookie sheet with wax paper. Roll into 1 inch balls and place on cookie sheet. Chill 1-2 hours. *Melt chocolate almond bark. Dip balls one at a time and place back on wax paper. Melt white almond bark and drizzle on top of chocolate for accent. Immediately sprinkle with candies. Let chocolate harden.Keep cool in sealed container.

TIPS:*Since the almond bark can harden quickly, I work in small batches so as to get them all decorated the way I want. Sometimes I like to use half bourbon, half blackberry extract for a unique flavor or I sometimes substitute rum for bourbon.

CHOCOLATE MARSHMALLOW CARAMELS
1 cup KARO light corn syrup
1 cup sugar
1 cup brown sugar
1 cup butter, softened
1 can Eagle condensed milk
1 teaspoon pure vanilla extract
Mini marshmallows
Almond Bark
Candy Sprinkles

Grease a jelly roll pan, sides and all. I like to spray it really well with PURE.

In a large saucepan melt butter. Add vanilla. Stir in sugars until dissolved. Add corn syrup and condensed milk. Bring to a slow rolling boil. Boil, stirring constantly for 15 minutes.

Pour into the jelly roll pan and level. Allow to cool.

Using a pizza cutter score the tops into small squares large enough for a mini marshmallow. While the caramels are still warm, place a marshmallow on top of each one so the marshmallow will adhere into the caramel.

Using a serrated knife cut apart the cooled caramels. Melt the first batch of almond bark. Dip each caramel into almond bark and set on wax paper to harden. Drizzle the tops with melted white almond bark for contrast and sprinkle with candies.

Giving Thanks and Tips on Tuesday (way early)

I know I’m really early for Tips on Tuesday, but I felt this was a good one to do way early and combine with giving thanks. Thanksgiving is only 6 days away!! For many people holiday cooking can be soooooooo stressful that they never enjoy the day with their family or the wonderful food they spent all day preparing!

Having been in the restaurant business most of my life has taught me a great many things, not the least of which is being prepared. Now being prepared sounds generic, but there is being prepared with a menu, being prepared with a grocery list, being prepared with sale ads and coupons to stay on budget with that list, being prepared with table arrangement, being prepared with decorations, being prepared for disaster… being prepared to change anything and everything at the last minute.

As a child I observed all the hubbub with anticipation and excitement. My parents always argued while preparing for the family and holiday meal which created that much more stress and began my impending dread of holiday/family get togethers.

As for disaster, it seems that in my parent’s house it always happened on Thanksgiving and usually involved the garbage disposal backing up and creating a HUGE mess. One year in particular it was really bad! So bad we couldn’t even have people over. My grandparents only lived a few blocks away. Long story short, grandpa brought their red Chevy station wagon over to our house with and old quilt spread out in the back and the adults loaded all the food there. My uncle and I rode in the back to keep all the bowls and pans from tilting over. While grandpa had been at our house, grandma had set the table at their house. All the food was unloaded from the station wagon and the preparation continued in grandma’s kitchen. It was one of the more memorable Thanksgivings I can remember.

Years later when I began making the Thanksgiving meal I too began to stress over it and then I decided to change it! I remembered that story and decided being prepared and flexible was the key as I too wanted to enjoy the day.

This is where the restaurant and cooking experience came in handy. I had learned along the way that most foods taste better after the flavors have the opportunity to meld. That being said, why wait until Thursday to make everything? I start on Monday. Many of us use the same recipes year after year for these holidays which should make things easier! Here are many of the things I do in advance and a few my dad used to do that are all helpful for a stress free day.

  • A few weeks before the big holiday sit down with your recipes and take stock of your pantry as you make a menu and shopping list. Compare your list to the local sales ads and the coupons you have on hand. I try to shop on a Tuesday or Wednesday when I have the time to browse and compare if necessary. I won’t say I have never run to the store for a last minute item, but I can guarantee you I always have few enough items to use the express line. I always shake my head at those people with FULL baskets on Thanksgiving morning with the turkey proudly plopped on top of the boxed dressing.
  • Now that your menu and list is complete, plan your table and decorations. I keep it harvest and autumn themed, you know warm and cozy. For me that requires ironing the table cloth & napkins and retrieving decorations from the basement so I do this the week before. On the Tuesday before I do my dusting and arrange my decorations. Everyone is different so my biggest suggestion is pretty and comfortable so everyone has a good time. (Too formal and the whole day becomes stiff.). Then on Wednesday night after dinner and the kitchen is cleaned up I iron my tablecloth and leave it draped over the table with the napkins already in their silver rings
  • On Monday I make a BIG double batch of cranberry sauce and freeze half for Christmas. I’m already working at making my Christmas preparation stress free. LOL.
  • Usually on Tuesday I scrub and peel my potatoes and boil them. I always add salt, pepper and teaspoon of vinegar to the water. Then I drain them, place them in the mixing bowl, add the butter and cover them for the refrigerator. On Thursday all I have to do is pop them into the microwave long enough to heat them and melt the butter, add the buttermilk and seasonings and mash. This way the dirty pan has long since been washed and I don’t risk garbage disposal issues.
  • I also make my stuffing on Tuesday so the flavors can meld. I actually bake it as if it were being eaten that night. Then on Thursday I only need to heat it through instead of taking up precious oven space for a longer period of time. I often make this a double batch and freeze half for Christmas.
  • The traditional green bean casserole and glazed carrots or apricot carrot casserole are made on Tuesday too as well as any dips and appetizers.
  • I reserve Wednesday for the sweets like Pumpkin Cheesecake and Rum Raisin Carrot Cake or Bread Pudding so there are fresh, but flavorful. All the pots, pans, etc… from Tuesday and Wednesday have been washed and put away helping to alleviate A LOT of the stress.
  • Dad used to prepare the turkey on Wednesday evening. This way you can boil the carcass for a great tasting gravy and have the entire mess cleaned up before the first person arrives. He would layer the white meat on one side and the dark on the other side of the oven proof platter, but ALWAYS would spray a light mist of water between the layers. He would then seal it in a tight layer of heavy duty foil. Now it is ready to be heated in the oven the next day.

Now on Thursday all I have to do is pop the turkey in the oven, set the rest of the table, make the gravy and pour myself a glass of wine while I wait stress free!

Tempt My Tummy Tuesday ~ Chicken Bruschetta Skipper Style

CHICKEN BRUSCHETTA SKIPPER STYLE
2 large boneless & skinless chicken breasts, cut into bite sized pieces
3+3 tablespoons butter
1 cup milk
1 tablespoon minced garlic, jar
8 oz. jar marinated artichoke hearts
2 tablespoons Classico tomato pesto
1 small onion, diced
4 tablespoons flour
8-16 ounces cooked pasta
1/2 cup Parmesan cheese
3/4 cup mozzarella cheese

  • Pre-heat oven to 350 degrees.
  • Cook pasta, drain and set aside.
  • Melt first 3 tablespoons butter in large skillet.
  • Saute’ chicken pieces a few minutes and then add onion and garlic. Saute’ until cooked through.
  • In a small food processor chop artichoke hearts until smooth and creamy.
  • Drain chicken and onion mixture.
  • In the same skillet, melt the additional 3 tablespoons of butter. Whisk in the flour until golden. Add milk and whisk until smooth.
  • Add the artichoke hearts and pesto and blend until smooth.
  • In a large mixing bowl toss the pasta, chicken mixture and sauce mixture with the Parmesan cheese and mix well.
  • Pour into a greased 9×9 casserole.
  • Top with mozzarella cheese.
  • Bake 30-45 minutes until crispy.
