It’s a really simple dish. Diced chicken breast with sauteed onions & green peppers over yellow rice.

my Nena use to make this dish that was called Chciken Elegant, my favorite… hands down!
When I was a kid, my mom made a dish called ‘Creamed Chicken’ with cream of chicken soup. I have to remember to get the recipe from her one of these days – I absolutely loved it! 🙂
