For my first entry I’m submitting my deer family at dinner last night. Momma comes regularly and every year brings her new babies. This shot is Momma (pregnant again) with her babies from last spring and a year or so old orphan. They kept trying to run the orphan off, but finally let him stay. I click my tongue when I put out the food (Great way to use my produce scraps from salad makings) and they come. Some nights there are 9 or 10 deer. They also share with Thumper (the rabbit of course) and a skunk or two. I recently posted the bird’s pizza party also if you want to have a look see.

Tin Ceiling

Doesn’t this tin ceiling piece look great?
Won’t it look great in my kitchen?
It will so fit with the character of this house.

Doesn’t it look like tin?
Well it’s not tin.
It’s really fiberboard.
Yep, really, it’s fiberboard, tongue and groove, lightweight and easy to install.
I tried an experiment and I think it’s going to work.

I’m using Rustoleum Silver Hammer Spray Paint
and 8 feet off the ground, they look just like tin
instead of this chalk white fiberboard.

Oh and did I mention there’s a $20 a square foot difference in price? Using real tin for a kitchen my size would have been in excess of $4000, the plastic substitute would have been around $2000. The fiberboard is now under $400. Real tin, as well as the plastic substitute would have required a grid system be installed first also. The fiberboard can be installed with just the use of a tube or two of liquid nails and a few cans of Rustoleum Silver Hammer spray paint.

The birds are SOOOOOOOOO confused and NONE too happy!

Friday would be the night we would do pizza if we still lived near the city. So since we can’t have it and their feeders were really low on food and full of snow, I decided to throw the birds a pizza party of their own. They seem to be enjoying it.

The party didn’t last long though before the snow began again!

Freezer Food Friday ~ Vegetable Soup Base

I make this up when I have a produce drawer full of vegetables about to turn

12 cups water
6 teaspoons beef granules

1 large onion, chopped or 3-4 bunches green onions sliced

1 can Contadina tomato puree or 6-7 Roma tomatoes, chopped

6 ribs celery, chopped

6 carrots, fresh or wilted, chopped

4 cloves garlic or 4 teaspoons minced garlic

1 tablespoon salt

1 teaspoon white pepper

  • Whisk beef granules, salt and pepper into the water and bring to a boil.
  • Add the vegetables and simmer on a very low rolling boil for about 2 hours or so.
  • Vegetables should be all but mush. If not mash them by hand or puree them.
  • Pour into however many containers you want based on how many people you are feeding and freeze. Be sure to leave a bit a head space before freezing to allow for expansion.
  • Thaw before preparing and then just add meat, pasta, rice etc… you might have to add more liquid based type of soup your making.

Favorite Ingredient Friday~Chicken or Tuna Noodle Bake

1 can Campbell’s Cream of Chicken Soup*
1+ cup of whole milk
1 1/2 cup shredded or diced cooked chicken pieces**
1 tablespoon dried parsley
1 bunch green onions, chopped
1 teaspoon salt
1 teaspoon white pepper
1 clove garlic or 1 teaspoon minced garlic (jar)
1 can Le Seur Peas, drained
2 cups cooked egg noodles
1/2 cup shredded cheddar cheese
1 cup crushed potato chips (I like plain Lay’s)

Blend together milk and soup. Fold chicken, onions, garlic and seasonings into soup mixture. Fold in cheese. Gently fold in egg noodles. Pour into generously greased baking dish. Top with potato chips. Bake at 350 degrees for 3 minutes.

*If making Tuna noodle bake, substitute cream of celery or mushroom
**If making Tuna Noodle Bake, substitute 2 small cans albacore tuna, drained

The long awaited kitchen update

Just to recap, this all started in October 2006 due to non-disclosed mold by the previous owners (which we’re still fighting) that we found as it bled through their camouflage or rather ‘fresh’ paint. The entire downstairs bathroom, kitchen (cabinets & all), part of the upstairs bathroom and master bedroom closet had to be torn completely out before it was all over. There were also undisclosed leaks in the sun porch wall and floor and roof. So we had to do all new joist and ceiling.

We still need to do 2nd coats and sealing on many of the cabinets, but they will all match soon. So this entire kitchen is 90% new. Counter tops to replace the plywood are next. We still also need to install the decorative ceiling, flooring and new windows, but feel so good to be at this point. The plywood floor is actually growing on me. At least we were able to bring it all to code also as long as it was all torn out, we really didn’t have any choice.



The Garbage Truck Rule

This is an email that came across my desk today and I thought the analogy was so well spelled out that I’d like to pass it on.

One day I hopped into a taxi and we took off for the airport. We were driving in the right lane when suddenly a black car jumped out of a parking space right in front of us. My taxi driver slammed on his breaks, skidded, and missed the other car by just inches! The driver of the other car whipped his head around and started yelling at us. My taxi driver just smiled and waved at the guy. I mean he was really friendly. So I asked, “Why did you just do that? That guy almost ruined your car and sent us to the hospital!”

This is when my taxi driver taught me what I call, “The Law of the Garbage Truck.” He explained that many people are like garbage trucks. They run around full of garbage, full of frustration, full of anger, and full of disappointment. As their garbage piles up, they need a place to dump it and sometimes they’ll dump it on you.

Don’t take it personally. Just smile, wave, wish them well, and move on. Don’t take their garbage and spread it to other people at work, at home, or on the streets.

The bottom line is that successful people do not let garbage trucks take over their day. Life’s too short to wake up in the morning with regrets, so….. “Love the people who treat you right. Pray for the ones who don’t.”

Remember – Life is ten percent what you make it and ninety percent how you take it!

I just have to share this wonderful box full of goodies that just arrived from my cousin Beth, the AjiQueen over at the Bayou Trader, PEPPERMANIA. We don’t get to chat as often as we’d like due to our busy schedules which makes a box like this all the more special.

It has so many fun things in it. There are 2 cookbooks; Mexican Cooking Exotic and Authentic Recipes from Central America by Roger Hicks and Texas Peppers The Jalapeno Cookbook by Peggy Struble as well as the Peppermania newsletter, a sea salt and chiles grinder from La Reina as well as some Texas Red trophy chili mix.
