WEEKEND RECAP

Good morning dear friends. I hope you all enjoyed your week! After being pretty much a homebody for 10 days we FINALLY really got out and about on Saturday. We started early and visited 3 different farmer’s markets in 3 surrounding towns and had a pizza at a favorite brewery, but the smokey fire air was getting to my eyes along with the heat and humidity so we came home mid afternoon and I binge watched a couple shows and then we watched a SYFY movie called MADAME WEB after dinner.

Sunday was more laid back, but I did accomplish getting the laundry caught up as well as some deep cleaning and organizing. I’ve been doing little projects where I can stay away from dust and bacteria. I ended up in the on-call ophthalmologist’s office last Tuesday with a slight infection starting so ended up on antibiotics šŸ™ nipping the infection right away and at least I get my stitches out Wednesday! šŸ˜€ I also pickled the beets I bought at the farmer’s market and grilled BBQ chicken for an early dinner.

THOUGHT FOR THE DAY

THE WEATHER OUTSIDE

This week is supposed to be a lot of partly cloudy and still in the 90’s with A LOT of smoke, so not the prettiest of weeks. This will be definitely be a flip flop week with comfy Levi’s and tanks with lightweight blouses. I’m hoping Thursday is a really good weather day since most of it will be spent outside at the county fair. I will wear actual shoes that day šŸ˜€

ON MY MIND

For the past 2 years I have been trying really hard to stay up with blogging daily. So, 3 days a week I have set up to do WORDLESS WEDNESDAY, SATURDAY COFFEE and SILENT SUNDAY. These 3 days seem like all I do is post a meme or special picture, but a lot of thought goes into deciding these and they each mean something to me in a positive way I want to convey to others. My husband asked me if that was cheating? I don’t think so – it’s just my Type A personality staying focused and organized šŸ˜€ I do post Happy Homemaker Monday in depth and 2-3 recipes, tutorials or trips on the other 3 days that require much more thought.

DVR/TV TIME

WHAT’S ON THE DVR/TV
  • NETFLIX We finished the SWEET TOOTH series with James Brolin narrating – love his voice.
  • AMAZON PRIME We have spent more time inside the past week with me still recuperating and the wind shifting so we were getting HORRIBLE smoke and ash from the fires in the eastern part of the state. So, we watched SPACE CADET which was cute, kind of like a space version of LEGALLY BLONDE from years ago. We finally watched THE BOYS ON THE BOAT. We also started watching STARGATE ATLANTIS as binge reruns.
  • CABLE Cooking shows – BBQ BRAWL, FOOD TRUCK RACE, MARY MAKES IT EASY
  • THEATRE The smoke was really bad, but we were tired of staying indoors so went to see TWISTERS! It was really good, but then again it was a Spielberg film šŸ˜€

Do you do new year’s resolutions? I quit years ago because I felt they were always too short lived. Instead I try to make lifestyle habit changes that are longer term and I try to adjust regularly.

I was gifted several planners this year so I have the unique opportunity to try them all out and see what really “fits”. One of the planners is a menu planner and habit tracker. I’m just not sure quite yet what is going to work best with my organizational style.

I did spend most of the snow week working on cleaning up my digital files and updating my computer so I could start the new year a little “cleaner”.

I was also gifted The Illustrated Compendium of UGLY English words which I’m finding quite amusing. We all have those words that just make us cringe and this calendar appears to be going to touch on all of them šŸ˜€

A Compendium is a collection of concise but detailed information about a particular subject, in this case UGLY English words.

I thought it would be fun to keep track of these each week as a source of amusement. They did cheat a bit and only give us one word for the whole weekend. šŸ˜€

  • January 1/2 – ACRID (adjective) – Deeply bitter; corrosive; so unpleasant in taste or odor that it causes people to retch instantaneously and shriek the word into the air like a pained battle cry: “ACKKKKK-RID.”
  • January 3 – BACKWASH (noun) – A backward current; the moving of waterin a reverse direction; the liquid that flows from a person’s mouth back into the bottle when they remove it from their lips. Or, rather, the spit water that a younger sibling uses to prevent you from stealing swigs of their drink.

I decided to join in with many others and choose a word for the year and make a list of things to accomplish also. If you’re interested that post is here.

The cold and snow lasted through yesterday so I really got my wish for Christmas snow! A new storm, a bit warmer HA HA 40’s instead of 30’s, started pushing in just after lunch. We’re supposed to get close to 5 inches of rain in 5 days with this storm front. Oh, and now it’s windy – REALLY windy!! They said the wind advisory was from 4pm yesterday through 4pm today, but it showed up early with a vengeance. Before it began we did at least get the outside Christmas decorations put into the garage to dry out a bit before being packed away for the year.

I actually wish it was snow since we are already so wet and now have huge puddles of run off water EVERYWHERE and 5 inches more will just turn that all into mud puddles and slick roadways. Plus with the wind it will still feel just as cold šŸ˜€ But, at least we’ll be worrying less about frozen pipes.

I’m feeling extremely anxious and concerned. My prayers go out to everyone suffering, in whatever way, from anything, but especially from this pandemic. Seems like no matter how hard we try to stay safe, life happens around us leaving so many susceptible.

We found out just before new years that our vaccinated step son and his wife have COVID and are really quite ill with breakthrough infections. We have several other friends who while also vaccinated have just healed from bad breakthrough infections.

Thank god they were vaccinated if the severity of their breakthrough infections is any indication of how much worse it would have been had they not been. But, they are not out of the woods yet and prayers would be deeply appreciated.

THIS WEEK’S TO DO LIST, PROJECTS & APPOINTMENTS
  • LAUNDRY & CLEANING Hubby is having some surgery tomorrow and will be home and “out of commission” this week so I’ll be staying close. I’ll use that time to take down the tree, finish sorting the ornaments and put away ALL the Christmas decorations. Truth be told I’m loving having the tree still lit up and glowing during the dreary weather.
  • GROCERIES & ERRANDS I did the grocery shopping and errands last Wednesday before the craziness of the holiday set in. We were isolating and preparing for hubby’s surgery tomorrow so avoided everyone and every situation out of precautiion.
  • PAPERWORK, PHONE CALLS & PROJECTS End of the year paperwork sort and clean up and preparing the files for 2022.
  • RECIPE RESEARCH & MENU PLANNING I’ve planned as many of my January recipes around cleaning out the pantry and freezer as possible. I’m also concentrating reworking any new recipes I make into meals for two so we don’t have any leftovers and adjusting recipes as necessary.

WHAT’S ON THE DVR/TV
  • NETFLIX
  • CABLE The Rose parade while shorter at least happened this year. We missed the first season of Yellowstone when it began because we were in the middle of the BIG move back here and just never were able to catch up. And then Paramount ran a marathon this past New Years and since we were home isolating waiting for hubby’s surgery, we’ve been binge watching to catch up to last night’s season finale. Several new cooking shows started last night and this week that I want to try. And regular TV programming began again too so now I find myself right back in catch up mode šŸ˜€ And Mike Rowe’s Dirty jobs began again – I’ve always loved this show and learning about all these horribly dirty jobs.

I just finished State of Grace from Marie Force and am looking forward to the next installment in September, but in the meantime she’s branching off again into a 3rd series that will expound on the characters even more, but that book doesn’t come out until February.

In the meantime I will be reading Ava Miles Beside Golden Irish Fields of another series for this author with characters that I also love.

I’m anxious to begin the Hidden Child by Louisa Fein and When the Nightingale Sings by Suzanne Kelman. I’m hoping they both write in similar style to Gill Paul who writes stories about today that began during WWI or WWII and leave their footprints along the way tying the present to the past.


We had a wonderful, but quiet Christmas and New Years with just over a foot of of snow which was quite beautiful making it a true Winter Wonderland. A few friends are “blaming” me for all the snow because I kept wishing for a Christmas snow. LOL I did wish for it, but I just didn’t plan on it being quite so much or lasting through the end of the year!

The neighbor boys made a “toppled” snowman and tried their hand at “pool sledding” šŸ˜€ Fortunately I was able to take all these pictures without even stepping outside!

While I do most of this twice a year or even some it quarterly, I “start” my year with the following list. Doing this makes it easy to remember when it was done last šŸ˜€

  • Change the smoke detector batteries
  • Change the refrigerator filter
  • Change the kitchen water filter
  • Wash the cold air return filter
  • Clean behind the refrigerator
  • Clean behind the stove
  • Do a vinegar clean in the coffee pot
  • Do a vinegar clean in the washing machine
  • Do a baking soda/vinegar clean on sink basins
  • Turn the hangers around! I do make an exception for things that are obvious exceptions like special dresses to wear to formal events. weddings or funerals etc…

I’m trying a new menu planner and habit tracker for 2022 that will hopefully streamline my menus. I’m also still including the links to last week’s posted recipes, featured party links for the week and upcoming recipes to be posted soon. I’m really hoping to get caught up on indexing recipes for the blog which is a monumental feat! After last week’s recipes all revolving around either prime rib or turkey I’m ready for a little more adventure.

HAPPY HOMEMAKER & MENU PLAN MONDAY week 11 of 2018

ON MY MIND / THINGS THAT ARE MAKING ME HAPPY

I had a productive weekend planned and it all went out the window when my sweet Thai neighbor asked me to go shopping with her at her favorite Asian market. I thought sure, I could use a quick trip to the market.Ā  WHOA, it turned out to be more like a trip to Disneyland – so many colors and new things to see.Ā  I picked up a few new vegetables I’ve never tried before and a jar of Jack Fruit which I originally saw on Guy’s Grocery Games when Damaris Phillips said she regularly use it as a meat substitute for her vegetarian husband. So many of the products had zero English so I couldn’t even recognize what they were or what to do with them. But, oh what a learning experience!

Hubby and I watched a couple NASCAR races and did a little sorting for donation items and packing others for the upcoming move.Ā I’m still having some low blood pressure issues that left me napping quite a bit on Saturday. šŸ™ I REALLY want my energy and strength back!!!

We’re really sad about Whiskey, Sady and Gunner. Losing them all within 7 months despite their advanced age was hard, but we just realized this weekend how much easier traveling will be and the freedom to do what we want, when we want for awhile. We’ve decided to put things into storage for 6 months or so and take some time for me to use the gym and the pool this summer to get my strength and energy back before we really starting searching for the next project.

The weather has been ALL over the place lately.Ā  It was 65 on Thursday and 90 by Saturday and back to 60 today.Ā  It’s all about layers right now! The rest of the week is supposed to be quite nice, but the weather changes all too frequently around here to depend on it.

We took a day trip last Thursday to Galveston since this week will be spring break and we will avoid EVERYWHERE! It was EXTREMELY overcast so pictures did not turn out very good, but hubby insisted I get in one for a change.Ā  We ate at Bubba Gumps and it was HORRIBLE, but made for a good picture.Ā  I guess we’ll just have to go back to my favorite Bubba Gumps in Honolulu šŸ˜€ I also found this colorful drugstore wooden Indian.

HAPPY HOMEMAKER & MENU PLAN MONDAY week 43 of 2017

WOW is this year moving fast! We had a nice weekend that ended way too fast.Ā  Saturday was an uncle’s 75th birthday party and we went and picked up my aunt’s caretaker from year’s past that can no longer drive and lives 45 minutes away to bring her to the party and take her home after the party so Saturday was pretty full.Ā  I was able to see 3 cousins that I don’t normally get to see often as we all live in 4 different cities in 2 different states. We had a great visit full of love and laughter accompanied by 2 of my cousin’s munchkins stealing the show as they had fun.

We woke up Sunday to a storm whose wind was rivaling hurricane Harvey and heavy rain so the day quickly turned into a do nothing day where we made brunch, watched football and racing while really doing nothing at all.

The long awaited day is finally here.Ā  WRONG – 12:05 UPDATE -doctor’s office just called and rescheduled for Thursday saying he was in an emergency surgery that was taking longer than expected. I know this ALL happens for a reason and I don’t want to be unreasonable, but this ALL began LAST November 2016!!!! I’m READY for it to be over!!!

All of my testing is done and my follow up appointment with the doctor for all the test results and to set a surgery schedule is later today Thursday so I’m a bit apprehensive until I know more. We do know I will be a liquid diet for quite a few weeks and will more than likely be missing both Thanksgiving and Christmas dinners so I will be doing a combo holiday meal for hubby, myself and the good uncle just before surgery and then freezing meals for hubby.

OUTSIDE MY WINDOW & THE WEATHER OUTSIDE

We’re supposed to be down in the 80’s all week and sunny.Ā  As long as the humidity stays low, that’s okay by me. I’d prefer a proper fall, but I’ll settle for a mild Indian summer since we haven’t had a proper frost here.

The term Indian summer usually means warm and dry with above normal temperatures after the first cold spell or frost of the season, but just for trivia’s sake it does not have a positive origin.Ā  It refers to a period of time after the settlers had experienced the first frost of the season and were preparing for a long winter.Ā  The settlers had let their guard down and the Indians had taken advantage of the settlers being unprepared according to farmer’s almanac.

HAPPY HOMEMAKER and MENU PLAN MONDAY week 42 of 2017

Oh my gosh, it’s Monday! Where did last week go? We are down to the last 10 weeks of the year and you know what that means – Christmas is only 70 days away! I lost 2 days last week with invasive testing and another 2 days with just feeling like crap.Ā  The good news is the doctor announced that even though the recovery time is the same, he can do the better for me in the long term surgery.Ā  The bad news is he decided he needs one more test this next week and unfortunately it is the uncomfortable test he previously changed. Oh well, at this point I’m just praying this is all over before the holidays.

After surgery I will not be able to lift anything for 6-8 weeks so I have been working like a dog to get as much sorted, packed and donated that I can before the surgery. We are so ready to be done with this house from hell and move on to a better way of life soon.

We had a “COLD” front move in last night LOL so we are only supposed to be in the mid 80’s this week, but the night time lows are supposed to drop into the 60’s and the humidity is supposed to drop 20-30% so I’m hoping for a more enjoyable week.

ON MY MIND

I grew up in California and unfortunately fires are a fact of life out there, especially in October with the Santa Ana winds.Ā  I’ve also been mandatorily evacuated more times that I would like and even watched from a cruise ship one year while our tiny town of 500 was on CNN in one of the fastest moving fires in LA history, but there was usually a lot of brush and trees burned and even a few structures, but in ALL those years I cannot remember any combination of fires as horrific as what California is experiencing now, especially with loss of life. Please keep California in your prayers that containment comes soon and there is no more loss of property or life.

As horrible what California is going through, there is still so much destruction and rebuilding going on that is also impacting people ALL over the country and world!

Several months ago I told you about some roof leaks that we had that required major patching and when we went into the attic to investigate the source were confronted with 40 years worth of crap that my grandfather and cousin had accumulated back in a corner we “missed” originally because it was just that, in a hard to reach corner.Ā  Unfortunately we had to bag it and move it in order to reach the area that was leaking.Ā  We also discovered about 500 pounds of “good” (by my grandfather’s terms) boards that I’m sure he was saving for a project as well as a bunch of bricks – really bricks in an attic? I can’t even begin to figure out what those were for. So, we bagged it all up and moved to a pile in the center to be removed later.Ā  Well, it’s now later!

In order to get all the bagged stuff and boards down from the attic we needed several things, the first of which was cooler weather which we don’t have yet, but are running out of time on.Ā  The second was to empty out the master closet so we didn’t get all the insulation and dirt all over our clothes. So, we bit the bullet the other day and emptied the closet so we could bring down 11-30 gallon bags the next morning.Ā  It got too warm so we’re saving the boards for later this week.Ā  Trash will pick up large items on Fridays so we are trying to time everything for every other Friday.

My birthday was last month, but I got a WONDERFUL birthday surprise just this past week from my brother aka PINYON RIDGE PHOTOGRAPHY. He is a VERY talented photographer with a vast array of BEAUTIFUL photographs and yes I am biased, but they are truly SPECTACULAR.Ā  This one is printed on metal, my new favorite medium and is just awe inspiring.

HAPPY HOMEMAKER & MENU PLAN MONDAY

I hope everyone had a wonderful week. Mine turned out quite busy in a weird, but also productive way. I can’t believe it’s October already, mainly because it’s so dang hot here still, but it also means Christmas is right around the corner and I’m not sure where we will be so it makes it seem sort of weird.

OUTSIDE MY WINDOW & THE WEATHER OUTSIDE

YAY we’re finally down to the 80’s, high 80’s but at least NOT 90’s.Ā  The evenings have been quite nice, here’s hoping they continue to get better and better!

ON THE BREAKFAST PLATE

Protein drink and coffee YAY only 8 days until my tests to determine surgery type and date.Ā  I’ve been so miserable – unable to eat, sleep or completely function waiting for this.Ā  It has been one REALLY long year getting to this point.

AS I LOOK AROUND THE HOUSE

We found on Thursday that we did not get through hurricane Harvey completely unscathed.Ā  When we had the atrium professional painted by a contractor last year they sealed the upper windows (at the 20 foot level) first, or so we thought. I discovered that the exposed brick wall behind the bar area was discoloring from the water that had been dribbling through the defective caulking. As we began researching the issue deeper we ended up having to disassemble the cabinets in the bar area, resealing the windows (inside and out) with the proper type of caulk (what they used had shrunk horribly causing huge gaps – and you know water – it takes the path of least resistance) and repainted the wood and the bricks including those behind the cabinets.Ā  Then redid the cabinets.Ā  We thought about calling the contractor and making him do it, but so many people in the neighborhood have had bad experiences with him and we just decided to write it off to one more issue with the HOUSE FROM HELL

At least now we know it is done right this time. Hubby did the outside while I did the inside so they should seal well now. Because of tearing apart that area, I was able to get several more boxes packed and ready for the move.Ā  I had to take down all the plants so decided to go ahead and transplant them into the pots I was going to use to give the plants to my neighbor when we do move and that made quite a mess, but it sure feels good to have it done.

ON MY MIND / THINGS THAT ARE MAKING ME HAPPY

Waking up to such horrific news in Las Vegas has me a bit unsettled. I just can’t understand so many things and people in our world these days. Senseless tragedies leave me feeling very agitated about so many things. Praying for peace for the families and friends off the Las Vegas shooting as they begin to deal with so much trauma.

About a year ago I purchased a cordless vacuum and was EXTREMELY happy with it for the first 9 months.Ā  Then it began to not always turn on and then when it would turn on I couldn’t get it to turn off without removing the battery. I set it aside to call customer service, but put it off because I haven’t had the best luck talking to helpful people at ANY customer service recently. Well, I was nearing the end of my warranty period and growing tired of using corded vacuum after using my lightweight vacuum and loving it so much so I bit the bullet and called.

The call was NOT going well as the guy I was speaking with kept insisting that I was giving him a non-existent serial number despite the fact I was reading it directly off the machine itself.Ā  Long story short he was made aware (I assume by someone monitoring the call) that I was indeed giving him a correct number and then after a brief time on hold he returned to the line with a much improved attitude informing me he would be sending me a fedex label via email and after they received my machine back would be sending me a new one.

I printed out the label on Wednesday morning, dropped the vacuum off at Fedex just before lunch.Ā  I figured I would have the new vacuum sometime in the next couple weeks.Ā  So, imagine my surprise when the doorbell rang on Thursday afternoon and my new vacuum was there!!Ā  Moral of the story, BISSELL stands behind their products and does right by their customers.

Ever since hurricane Harvey, the clouds have been more amazing – at least it seems that way to me. I THINK I’VE BECOME SLIGHTLY OBSESSED WITH CLOUDS.

HAPPY HOMEMAKER & MENU PLAN MONDAY week 39 of 2017

I hope everyone had a GREAT weekend. It took me all week, but I finally got caught up from being gone and even though I wasn’t able to get everyone visited from last HHM, I PROMISE to be back on track this week! I also finally caught up on all my laundry from the broken washer and with hubby’s help moved one of the recliners into the bedroom so I can sleep better until after surgery and recovery. I CANNOT lay flat and sleeping is difficult at best.Ā  The recliner isn’t comfortable either, but at least I’m not choking.

OUTSIDE MY WINDOW & THE WEATHER OUTSIDE

We just can’t seem to catch a break weather wise.Ā  We’re still supposed to be in the 90’s this week, but at least it has been a little better humidity wise, especially in the mornings.

ON THE BREAKFAST PLATE

I’m at the point where I’m drinking more and more of my meals waiting on my surgery so breakfast is a PROTEIN DRINK and COFFEE so I can eat dinner later.

  • LAUNDRY… WHEW after last week I’ll settle for today’s 2 loads.
  • LIVING AREAS… I did a serious deep clean last week and everything still looks pretty good.
  • KITCHENā€¦ LOL my kitchen is always in various states of food prep, but all in all is pretty clean this week.
  • STUDIOā€¦ is a complete wreck as I have made it my staging area for ebaying and packing up the house.
  • YARDā€¦ the post hurricane/ flood grass re-seed is growing fairly well and hubby will mow and edge later this week.
  • BLOGā€¦ I’m still working on combining into this blog the recipes from my old blogs.

We’ve been doing A LOT of research this past week and have narrowed our search to 2 different regions.Ā  One we are fairly familiar with from a search a few years back, the other is close enough to check out for a few days before my surgery.Ā  I’m still pretty worked up about how things have worked out with helping family here with this house and TOTALLY PISSED OFF that it caused us so much grief and pain, not to mention how much money it has cost us. We would have to stay here for at least 10 years to get our money back.

On another note, but along the same topic it appears our fears regarding my uncle being pursued by a gold digger are true.Ā  We were recently notified (by her) in an almost threatening way that she has his power of attorney and that we should deal directly with her from now on.Ā  As far as I’m concerned she still doesn’t exist as she was the one notifying us without any legal proof – so she can go jump in a lake. The uncle I’ve known all my life would NEVER forsake the little family he has left without being under undue influence or duress.

The post hurricane Harvey thunderstorms have been amazing and left us with some interesting skies. There are still debris everywhere and traffic beyond belief, but it looks like most things are getting back to normal.

HAPPY HOMEMAKER MONDAY week 38 of 2017

I hope everyone had a great week. we were away the entire week and despite my best intentions I never did get around to visiting everyone during the evenings in the hotel. We were away at hubby’s unit military reunion. Unfortunately, it was poorly organized and planned and was not at all what he was hoping for along with many hotel issues so he no longer wants to participate with the unit one and will only do the divisional ones from here out.Ā  We had gone to the divisional one in June and had a great time as it was well organized and planned with events.Ā  We just got back late last night so I will do a quick abbreviated HHM this week with a follow up in a few days once I’ve downloaded the pictures and pulled my thoughts together.

The other part of this trip was to search for our next and hopefully last community.Ā  Despite online research that looked promising reality fell short of our hopes and dreams. So, we are still searching for that perfect community balance for our wants and needs.

The weather was beautiful while we were gone according to my neighbor, but looks like it will be excessively warm and thunderstormy again now that we are home.

COFFEE!! The coffee at the hotel last week was terrible!Ā  I am so in need of decent coffee.

  • LAUNDRY… the washer went on the fritz just before we left so I now have 10 or so loads to do after I get it fixed today.
  • ALL LIVING AREAS… a little bit of a wreck since we just got home last night so that will be my priority today as well as getting some groceries.
  • KITCHENā€¦ also a wreck, but I am doing a deep clean today.
  • STUDIOā€¦ part of the deep clean too

HOMEMADE CHICKEN BROTH & STOCK UP TIPS

At this time of year, I’m usually stocking up for winter in the wild and snowy north, but not this year. We’ll pretend though because I can’t seem to cook any differently and am longing for cool, crisp fall evenings for soups and stews.Ā  I originally wrote this post years ago, but nothing has changed – I still do things exactly the same.

I start with LARGE bulk packs of meat.Ā  I then break them down by size and meat right down to cutting certain recipes into bite sized pieces.Ā  Then I wrap them in freezer paper because I really hate freezer burn!Ā  And I package them into pre-labeled ziploc bags for the freezer.

I didn’t get a secondary picture, but I then wrap the center of each one with a strip of duct tape.Ā  Yep, you read that right, duct tape.Ā  Just a small strip.Ā  Enough so when they’re stacked in the back of the freezer you can identify the meat.Ā  I buy it in colors – red for beef, green for chicken and blue for pork.Ā  It makes it soooooooo much easier when you’re searching in the freezer for the right meat.
Many times this prep includes rotisserie chickens.Ā  My market at home has buy one, get one free on Tuesdays.Ā  Can you figure out when I did my shopping? By the time I get home and put away the groceries, the rotisserie chickens are cool enough to pick off the bone.Ā  The bowl below is the skin, congealed juices and bones I collected as I stripped 2 birds.
I think Martha (MM) and I met over some post about buying in bulk and we found a common ground – saving money!Ā  Talk to your butcher.Ā  Many times you can save even more than the advertised sale prices.Ā  For example, recently my local market was running a sale on chuck roast.Ā  None of the roasts were as large as I really needed for company so I asked the butcher if they had one the size I wanted and instead she offered up a manager’s daily sale (in the bulk section just a few feet away from the ones I was looking at) where I could buy twice as much for half as much saving me $8 over what I intended to spend and gave me enough for 3 meals.Ā  I made ALL the chuck roast as Pot Roast & Veggies for company and then used the leftovers to make Ortega Chile Bake and Beef Chili.
I then use a large stock pot and cover the “debris” with water.Ā  I set it to simmer on a low temp and let it go for an hour or so.Ā  I don’t add any seasonings since I’ve normally bought mesquite broiled or lemon herb, but adjust according to your tastes.
Then I drain it into my large 8 cup measuring cup and allow it to cool.
I have several of these containers that I bought just for chicken stock in the freezer.Ā  I haven’t bought chicken stock in over 10 years now.Ā  It’s just so easy to make your own.Ā  Even if I start with raw chicken and poach it for a recipe I add seasonings and by the time the chicken is done, there is several cups of broth ready for the freezer.

Today’s flavor was Mesquite broiled so it left us with a spicy red color also.

It’s still very warm and humid with a chance of thunderstorms ALL week, but a bit more tolerable than it has been.Ā  I ran to Costco and did some errands on Saturday and got caught in one of the worst thunderstorms I’ve ever been in.Ā  I think partly because the people around me were so panicked and unable to cope.Ā  Gheesh people, it’s just water.

I literally dreadĀ  having to call customer service ANYWHERE!Ā  I had to call AT&T as well as AMAZON several times this week. Lately every customer service I have had to call is outsourced to the Philippines and they are reading from a script, don’t truly understand what they are doing and don’t seem to really care. I spent over an hour on hold with AT&T to deal with a rude and obnoxious man who told me “to deal with it”.Ā  When I asked for a supervisor, he said he was the supervisor.Ā  I told him he reported to someone so I wanted to talk to them.Ā  At the 2 hour mark I was transferred to the customer loyalty department who was 1) in the USA 2) completely apologetic and said I should have been informed from the get go that the computers had been down most the day and that no one could have helped me.Ā  They gave me a direct dial number to use the next day which also got me a wonderful man here in the states who took care of my problem in nothing flat.

This is only my favorite photo because I had a wonderful customer service representative at Amazon who finally made a week’s worth of horrible interactions with not so nice customer representatives right in the end.Ā  The new plates should be here before the end of the day.

HAPPY HOMEMAKER & MENU PLAN MONDAY week 26 of 2017

Can you believe that this is the last week of the first half of the year already? It sure seems to be going by quickly – too quickly.

I hope you had a wonderful week!Ā  It was a quiet week for me as I recuperated and did as the doctor ordered and hubby enforced. I am still a bit under the weather, but 90% better than this time last week. I also had the first of a more definitive testing to determine the root cause of my health issues.Ā  Keep a positive thought for me as we go in later today for results.

It rained all weekend, but as it’s summer and I’m stuck inside anyway, that’s okay. We are supposed to be warm with thunderstorms off and on all week.

I’m pretty happy as I was feeling better and was able to get quite a bit of the housework done over the weekend and it’s looking pretty good.

  • LIVING AREASmostly tidy, but need to do floors like always – oh the joys of having pets and husbands
  • KITCHENā€¦ I did a serious deep clean this past weekend and it looks great!
  • STUDIOā€¦ Still looking good, but NEEDS to be messed up LOL
  • YARDā€¦ YAY, nothing for a bit.
  • BLOGā€¦ some recipe updating and pre-planning for future posts. I’m still thinking ahead to BLOGMAS 2017 and working on some new recipes, jams and candies

CURRENTLY READING & TELEVISION / DVR

We have FINALLY been watching The Walking Dead!Ā  We just started season 3.Ā  I’m really glad my brother advised us not to get too attached to any one character! We are just not sure how watching this show hasnā€™t happened before now. We have so much to catch up on!

Iā€™ve cleaned out most ALL cooking shows, lifetime movies and Hallmark shows while I was sick. We’re also still trying a few new shows on NetFlix and Amazon Prime.

I started Ava Mile series for Dare Valley with NORA ROBERTS LAND. I do love to read series where you really get to know ALL the characters.

  • NIGHT SHIFT – though I do HATE that they made the 1st one of the season a “TO BE CONTINUED”
  • SUPERHUMAN – some of these people amaze me SOOOOO much!Ā  I wish I was this talented.

  • DATE MY DAD
  • GREAT BRITISH BAKING SHOW – I just love this show – they are always so civilized and nice with recipes that make me WANT to be a better baker.
