I hope you are all having a great month and starting to see signs of spring wherever you are.  Winter is hanging on here and I’m not trusting that spring is here yet. I’m headed out early so will get this posted quickly.

Off and on rain this week with highs in the low 50’s and low’s in the high 30’s. I have on some comfy levis and a favorite soft and comfy hoodie.

THIS WEEK’S TO DO LIST, PROJECTS & APPOINTMENTS
  • LAUNDRY & CLEANING A couple loads of laundry and some vacuuming to do.
  • GROCERIES & ERRANDS I’ll get these done early this morning for the week. We’re still on a “PAUSE” here so staying home a lot still.
  • PAPERWORK & PHONE CALLS We’re STILL trying to get some information on questions regarding the sale of the in-laws house and dealing with that nightmare. SIL is being less than straight forward with answers 🙁
  • RECIPE RESEARCH & MENU PLANNING I’m waiting on a couple new cookbooks I ordered that should be here this week and then I’ll dive in 😀

TUESDAY 4 ~ ALL ABOUT COOKING

Welcome to Tuesday 4 which we keep going in memory of our dear friend Toni Taddeo. This week’s topic is all about cooking. 😀

1.  What is the most valuable kitchen utensil you have or one you use often and could not live without? A good set of sharp knives and crock full of QUALITY utensils. I LOVE my pampered chef mini whips for blending small amounts of sauces and gravies, otherwise my immersion blender works best.
2. Do you have any fancy gadgets like air fryers, etc in your kitchen? How are they working out for you? I have A LOT of gadgets, but I use all that I have.  I LOVE my NINJA Foodie grill in the winter for air frying, grilling, dehydrating, slow cooking…

3. Do you have any step or labor saving ideas that make cooking and meal preparation easier? By menu planning and sticking to it, I can cut the prep work in at least half by chopping veggies all at once on day 1 and then using the portions I need throughout the week.

4. What is your favorite recipe of all time? Would you share it with us? Undoubtedly it’s pot roast and homemade applesauce 😀 Here’s 2 different versions and my homemade applesauce.

MAXINE’S POT ROAST
2 tablespoons Avocado oil
3 pound boneless chuck roast
1 1/2 teaspoon freshly ground pepper
2 1/2 teaspoon garlic powder
1 1/2 teaspoon onion powder
1 1/2 teaspoon seasoned salt
3 medium red potatoes, washed and quartered
2 celery ribs, washed and large chopped
2 carrots, washed and large chopped
1 LARGE Vidalia onion, large diced
3 cups STRONG brewed coffee
1/4 cup Worcestershire sauce
1 tablespoon Kitchen Bouquet
3 tablespoons butter
1/3 cup Wondra flour
3/4 teaspoon salt

  • Whisk together 1 1/2 teaspoon ground pepper, 2 1/2 teaspoon garlic salt, 1 1/2 teaspoon onion powder and 1 1/2 seasoned salt.
  • Rub seasoning mixture over entire roast.
  • In a large skillet over medium-high heat, brown roast on all sides and edges.
  • Place roast and potatoes in slow cooker.
  • Saute’ celery, carrots and onions in hot drippings from browning the roast.
  • Add coffee, Worcestershire sauce and Kitchen Bouquet cooking for 3-5 minutes, loosening any particles stuck to the bottom of the skillet.
  • Pour over the roast and potatoes.
  • Cover and cook on LOW 8 hours or until roast and potatoes are fork tender.
  • Transfer roast and vegetables to a serving platter.
  • Shred roast with forks, cover and keep warm.
  • Melt butter in saucepan.
  • Whisk in flour until golden.
  • Add to drippings in crock pot, stirring to blend well and cooking until desired consistency.
  • Serve with Mashed potatoes, vegetables and roast.
MY SUPER SAVORY POT ROAST & VEGGIES
I love Pot Roast. I adapted grams old recipe to my family and their likes.
3+ pound Pot Roast
2 medium Onions
1 bag baby carrots
3 Tablespoons Avocado Oil
3 large Yukon potatoes~scrubbed clean, but not peeled
Kosher Salt
White & Black Pepper
2-3 LARGE cloves garlic, minced
1 teaspoon rosemary
1 teaspoon thyme
1 teaspoon Pampered Chef Rosemary mix
Beef bullion
Red Wine (2 cups) OR White Wine (2 cups) or plain old broth (2 cups) or combination of the three.
  • Pre-heat the oven to 350°. The meat you use is important. My favorite roast is the chuck roast because it has wonderful marbling throughout the meat, and when cooked right (prep, cover, cook ~ don’t fiddle with it while it’s in the oven) any chuck roast winds up being tender and melt-in-your-mouth delicious. Be aware that the tougher the piece of meat is, the longer it needs to cook so that the connective tissue will soften and break down. You truly can’t rush a pot roast, you’ll be disappointed if you try as it will be dry or lack flavor. BE PATIENT. You want the meat to basically fall apart. You SHOULD NOT need a knife to cut it.
  • Bring the piece of meat to room temperature.
  • GENEROUSLY sprinkle the first side of meat with the Kosher Salt and Pepper mix.
  • Heat enough avocado oil in the bottom of a fry pan on medium-high heat to make a thick coating.
  • Cut the onions tip to root, cut off root and stem, peel and lay flat into hot oil. Brown both sides well.
  • Remove to side.
  • Add the baby carrots and do the same. I normally cut each carrot just in half. Brown carrots (you’re aiming more for color here than cooking them). They will have plenty of time to cook in the oven.
  • Add garlic and spices at this point. By this time I have put them all into a mortar and pestle to revive their scents and aromas.
  • When carrots are finished, remove them to the same plate as the onions. If necessary add more olive oil to the pan and add the roast seasoned side down. While it’s browning season the other side really well. Brown both sides and all edges really well.

Now, for the oven I like to use my grandma’s old Magnalite dutch oven which cooks really even! And see those little hobnail bumps in on the bottom side of the lid? Those are better known as drip catchers. They collect the steam from the juices and redistributes it all right back down on the roast as it cooks. These help keep the meat moist and juicy.

  • After the roast is browned, place it in the dutch oven and spread vegetables all around it.
  • While fry pan is still hot, add white or red wine and the beef bullion to deglaze the pan ~ make sure you scrape up all the stuck little bits from the bottom. Cook long enough to mix well and then pour over the roast. The liquid should come up at least half way on the sides of the roast and vegetable mixture. For this recipe we added the white wine to the recipe and drank the red. The red wine, Harrod wine, is from our nephew’s vineyard so we don’t waste it cooking, but enjoy every last drop.
  • Put the lid on the dutch oven, put it in the oven, don’t open the door for AT LEAST 3 hours! Today’s roast was 2.39 pounds and I roasted it for 3 1/2 hours. Go relax or at least get the dishes you’ve dirtied so far done up. At 3 hours, I prep the potatoes for boiling. I prefer not to cook mine with the roast  every time ~ sometimes I prefer a bit of substance instead of the mush they can become with the roast. I do a basic mashed with heavy cream, salt, pepper, and butter (hey you gotta splurge a little sometimes!)

HOMEMADE APPLE SAUCE
5 large Apples (I like Pink Lady, Honey Crisp or Braeburns)
1/2 cup golden raisins
1 can peach nectar (Papaya or pineapple are good too)
1 teaspoon cinnamon
1 cup sugar
1 cup water

  • In a large sauce pan pour nectar over raisins and let sit while you prepare apples.
  • Wash, core, peel and chop apples.
  • Add water to sauce pan and stir in sugar until dissolved.
  • Add cinnamon and mix well.
  • Add apples and cook over medium heat until until apples are tender and mush easily.
  • Mush to desired consistency.
  • Remove from heat.
  • Cool and chill.
  • Can be kept in refrigerator for a week though it never lasts that long around here. When my apples are at the height of the season and falling off the tree I make this in huge batches and put it up in canning jars for the following year.

LAVERNE DEFAZIO ROAST
1 can Pepsi
3+/- pound pot roast, with good marbling
1 large onion, sliced thin
1 cup buttermilk
1/2 pound mushrooms, cleaned and chopped
2 teaspoons minced garlic, jar
1 package KNORR brown gravy mix
1 tablespoon Better than Bouillon Beef base
Kosher salt and white pepper

  • Bring roast to room temperature.
  • Preheat oven to 325 degrees.
  • Brown the roast, generously ~ salt and peppering it.
  • Whisk together the milk, pepsi, bouillon base and gravy mix.
  • Surround roast with onions and mushrooms.
  • Pour Milk/Coke mixture over roast.
  • Bake for at least 3 hours undisturbed. Depending on the thickness of the roast it will probably take 4-5 hours for a thick 3 pound roast until the meat begins to fall apart. You should be able to cut your roast with a fork.
  • The combination of ingredients makes its own gravy that is soooooooooooooooooo good.

It’s been a super lazy weekend here. I had a fairly severe reaction mid Saturday that ruined my plans for the weekend and the end of Saturday so I took it easy yesterday which worked well with being on a Winter Storm Advisory and not wanting to go outside anyway. We did watch the NASCAR races yesterday and got caught up on most things in the DVR.

Our county is one of only 2 counties in our state that have extended the “pause” which prevents us from going anywhere anyway. Ironically, they do know where the new cases arose from, but have chosen to close down everything else too. 🙁 I PRAY for an end to all this soon!

Today and tomorrow are supposed to be mostly cloudy with highs in the mid 40’s and lows in the high 20’s, but even though the temps go up slightly at the end of the week (50’s and 30’s), the rain returns with it.

  • LAUNDRY & CLEANING I need to de-clutter a bit and do a little vacuuming, but everything looks pretty good besides that.
  • GROCERIES & ERRANDS I have an appointment in town later this morning so will also be doing my WHOLE list while I’m there. Our state has gone to a strictly age hierarchy for getting vaccines instead of recognizing compromised health which extended my ability to get the vaccine into next month.  BUT, I found a facility with a cancellation list that is offering doses that would otherwise expire to those with compromised immunities and they called me for an appointment this week YAY! 🙂
  • PAPERWORK & PHONE CALLS I’m beginning to get caught up on the backlog of recipes to post and little pieces of paper notes! 🙂
  • RECIPE RESEARCH & MENU PLANNING I need to start researching what I’ll be doing for April, but I will also be participating in the April A to Z photo challenge with the theme #RailArt and I’ve been researching my old photos for that.

I hope everyone had a weekend full of sun and fun.  Did you do anything out of the norm? We took a drive on Saturday and then did the mundane things around the house on Sunday. I also got some recipes planned for the next couple weeks and was able to get some photo editing done.

It’s gray and dreary with the threat of rain anytime. This week is supposed to be carbon copies every day of the same with highs in the low 50’s and low’s in the low 30’s which isn’t too bad until the breeze kicks up.

AND LOL 😀 they are still throwing the threat of snow into the picture for later next weekend.

I’m not sure what I’m going to start next.

Last Monday we had a RARE sunny afternoon that led into an AMAZING sunset!! I just can’t believe that I was in the right place at the right time for this one! The reflection off the pond was just perfect!!

Then on Saturday we woke up to a break in the storm and a sunny morning so we took a drive up the river to see how things were progressing after last fall’s fire.  They’re still hauling out tons of burnt trees truck load after truck load, but we still had a nice lunch by the river and finished up at the falls.

The new storm was starting to move in as we headed for home and the guy on the radio was talking about how the new storm and the snow level were dropping.  We didn’t get any here on the valley floor, but all the mountains around us are pretty white again.

And I finished the highlights on the lilac painting 😀

I went recipe surfing on the Food Network’s page and these are the recipes I’m going to try for the week. I’ve made a few changes already to a couple of them. While I know they are great as they are, I did try to simplify ingredients to more common things on hand.

I hope everyone had a wonderful week and that the world is treating you right. We’re on a “PAUSE” here again which means stay home, no gyms, restaurants with indoor seating, etc… because of rising COVID numbers… the sad part is that they know why the numbers rose and where from (a business, a church and a school), none of which was associated with gyms, restaurants…

We’re getting a couple “warmer” dry days before the next round of colder rain returns with deceptive numbers that make it LOOK like it’s going to be warm, but beware of the breeze and the night time lows that keep it from reaching a truly warmer temperature until an hour before the sun sets 😀 The prediction is highs in the 50’s and lows in the 30’s – reality will probably be highs in the 40’s and lows in 30’s.

  • LAUNDRY & CLEANING Definitely need to do it all this week! Just a load of sheets and towels, but need to dust and vacuum!
  • GROCERIES & ERRANDS I’ll be doing these today so I have the ingredients for hubby’s birthday dinner and cake tomorrow. I have a haircut on Wednesday and was hoping to wait until then, but it just didn’t work out so I guess I have to go to town twice this week.
  • PAPERWORK & PHONE CALLS Need to do some follow-up on a few things I’ve been waiting on and see if I can kick another couple things forward.
  • RECIPE RESEARCH & MENU PLANNING This week was a bit more inspired than last week so I hope not to lose momentum and do the rest of March this week.

  • NETFLIX We’re still finishing Stargate SG1 reruns at night and also stared Kevin James new show The Crew
  • CABLE A lot of shows were reruns last week so not sure what needs to be caught up on besides Worst Cooks, Spring Baking Championship, The Resident and the new show that starts this week Debris.

I’m still finishing Nadia Lee’s Secrets from last week, but have a couple of new genres lined up for a change in my future reads – Jennifer Chiaverini’s The Spy Mistress and K.F. Breene’s Magical Midlife Madness.

I took the painting class last week for the picture I showed you last week. This is their picture.

And I am fairly happy with my results so far, I need to finish the accents 😀 since I’m still a novice.

How is everyone this morning? I sure hope if you’re anywhere near the areas affected by the horrific weather that you have your power back and running water! I’ve been keeping the whole situation in my prayers.

This has certainly been a horrific year all the way around for all of us. Personally, I’ve been feeling a bit blah and falling behind in just about everything.  Despite that, I think I finally got  caught up yesterday and will be back on track this week!

Same old, same old here. Highs in the 40’s and lows in the 30’s, gray, cloudy, rainy and dreary which tends to make me crave worn Levi’s, comfy hoodies and UGG’s.

  • LAUNDRY & CLEANING Just the standard things this week while I continue feel 100% again
  • PROJECTS Putting things back together sometimes takes longer than the projects themselves. Still need to adjust a couple closet doors, some paint and caulking touch-ups and the dreaded shower floor this week so I can move on to the other bathroom next week 😀
  • GROCERIES & ERRANDS I will be heading out soon to do a few errands, groceries and drop some things off for electronic recycling and donations
  • PAPERWORK & PHONE CALLS Quite a few – I’m so tired of not being able to reach the people I’m need to and even MORE tired of calls not being returned in a timely fashion 🙁
  • RECIPE RESEARCH & MENU PLANNING I’m taking this category a week at a time right now waiting for weather and inspiration to meld together 🙂
  • CRAFTS I did get a couple paintings finished, a ladybug on a daisy and a Christmas Gnome with packages in the snow. I even got hubby to participate in one of the classes with me. These springtime gnomes were fun, but after I finish the next Christmas gnome I think I’m over gnomes for a while, at least as far as painting goes.
  • I’m taking a CREATE & SIP class on Friday by myself that I’m actually looking forward to for some SPRINGTIME LILACS – this is their painting that inspired me to sign up – we’ll see what mine ends up like 😀

  • NETFLIX – Just started season 4 in the SG! Stargate re-runs and marked a couple possibles for the future 😀
  • PRIME – Haven’t logged in recently, but need to as I’ve seen a few previews I’d like to check out

I WAS  sidetracked reading Jana DeLeon’s newest Miss Fortune Series #19 Fortune Funhouse which was a fun and quick read as always. And I had previously finished reading SINS by Nadia Lee and started SECRETS, the sequel to it, but of course now that I’m back into it I am falling asleep quickly and not having much reading time again. 🙁

The sky is ever changing at this time of the year. I saw a magnificent view out the window with gorgeous oranges and pinks, but this is what it was by the time I grabbed the camera and got out the front door 30 seconds later. 🙁 still pretty, but oh so different!

This even applies to EVERY DAY life! We are ALL compositions of our memories and experiences which is EXACTLY what gives us our unique and differing points of view, beliefs and values!  This is the true epitome of walking a mile in another man’s shoes!

Being a Texas girl with tons of family and friends still in and around Texas I’m sending out my prayers and positive thoughts for all of those affected by the recent historical weather!

I think this is going to be the week I finally get caught up! I hope you all had a wonderful week and Happy Valentines day. I’m going to get an early start today in hopes of just that!

We had a quiet weekend and watched ALL the NASCAR races (Camping World Trucks, Xfinity and Cup series) yesterday’s race, the Cup series was rained out after a horrible wreck at lap 15 for a 6 hour delay and ended with another HUGE crash.

Our latest storms through the area are going to be a bit warmer, at least warm enough to take the snow out of the forecast, but just as cold and wet so no real change around here – lots of gray dreary wet days this week with bone chilling cold.  I have on comfy Levis, a purple hoodie and my favorite UGG’s!

THIS WEEK’S TO DO LIST, PROJECTS & APPOINTMENTS
  • LAUNDRY & CLEANING I did a deep clean last week, so this week just needs some light dusting and vacuuming.  Just a couple loads of laundry also.
  • GROCERIES & ERRANDS I made a new recipe plan and grocery list yesterday after deciding to end the recipe delivery boxes I’ve been doing after several delivery issues and food quality issues. So, I am going to have to go the grocery store in a bit.
  • HOUSEHOLD Need to finish a couple pieces of molding and then do all the caulking and painting of the baseboards in both bathrooms and the laundry room. I’m still working at removing the old adhesive from those stupid fish on the shower floor! I’m giving myself this week off though as my  body is protesting scooting along the floor so much 😀 I’m also re-doing my spices and minamalizing.
  • CRAFT PROJECTS I’m STILL hoping to finish a couple of paintings I’m working on and start on the quilts I didn’t finish from Christmas.

  • NETFLIX We’re still watching Stargate SG1 reruns and are going to start watching THE CREW with Kevin James as well as the Bobby Spencer Story

Good morning dear friends. I had a busy week working on projects and took most of the weekend off, but still didn’t get all my computer visits caught up!  I apologize to anyone I didn’t get visited last week. I’m hoping to have the time to get a lot of things that are mid-project accomplished this week.

I also had my oncology check up last week that received a wonderful flying colors review!

The super bowl and the commercials was only so-so this year, but I am looking forward to NASCAR starting next weekend! Normally I have a LONG list of superbowl commercials I loved, but this year there were very few with the larger companies all putting their monies into COVID relief instead of commercials.  I did like the Matthew McConaughey/Doritos commercial, the Sam Adams Clydesdales commercial, the Rocket Mortgage Pretty Sure commercial, and the *ETrade commercial, but the Toyota Up Stream commercial with Jessica Long actually made me tear up. I think they’re trying to replace Hallmark 😀

The weather this past week and predicted again for this week are typical winter weather for the Pacific North West, but I sure wish it would make up its mind! I see Levis, flannels, hoodies and UGG’s in my future this week 😀

Last week the snow predictions came true to a point. We could see it ALL around us, but it never actually happened on the valley floor. So, it was chilly and a couple of days downright cold with the wind, but no actual snow stuck.  This week the temperatures are predicted a bit lower and 4 days of snow predicted again, so we’ll see!

  • RED BOX We rented Shadow in the Cloud which was amusing and fun and Let Him Go which was just downright sad as well as Breach which I wish I hadn’t wasted my time on.

It’s hard to get decent pictures of small rooms, but this is the last bit of flooring being finished up. Like so many projects these days, they are a domino of things to be done. Because the flooring was so thick we had to adapt the toilets and since they were off we went ahead and did all new bolts and hoses since the others were at least 20 years old and a bit funky.

New pieces of floor molding had to be added around the vanities and showers since the original linoleum went underneath them before they were originally placed.

I hope everyone had a GREAT week. I’m just going to jump in this week because I have a BUSY day ahead.

Imagine that, it’s gray, dreary and rainy in the Pacific Northwest 😀 LOL Highs are supposed to be in the 40’s and lows in the 30’s this week.  I don’t mind the cold or even the rain, but the bone chilling wet cold can be a little hard on the bones. But, it gives me the excuse to wear my favorite flannels, Levis and UGG’s. There is still a small threat of snow later in the week.

THIS WEEK’S TO DO LIST, PROJECTS & APPOINTMENTS
  • LAUNDRY & CLEANING We’re still working on the flooring and LOL all the domino parts that it entails, so the cleaning this week is minimal and done as we go. Laundry is up to date, vacuuming is done, Christmas reorganization is almost done and donations are even dropped off.
  • FLOOR PROJECT Domino parts include the repairing molding or replacing it as well as adding the new pieces that are necessary because the original flooring was laid BEFORE the cabinetry, new thresholds that need to be stained and placed, doors that need to cut off to accommodate the new flooring and thresholds, painting, new caulking, new fittings for the toilets, etc…
  • APPOINTMENTS, GROCERIES & ERRANDS I like to get everything done in the real world all on the same day and then get back home to clean up and feel safe again. I will be doing ALL of my list today for the next couple weeks that includes groceries, drugstore, craft store, COSTCO and hardware store. I also have my 10 year oncology follow-up this week.  Unfortunately it is in a county that is under the “extreme” label so there will be no celebratory lunch as originally planned – just a get in and get out. Hubby can’t even go with me this year. I don’t have food delivery boxes coming this week or next so will be starting R.E.D. (Recipe Experiment Dinners) again.
  • PAPERWORK & PHONE CALLS I still have a few of each to make
  • RECIPE RESEARCH & MENU PLANNING I have chosen several, but am still digging through my scraps for more

I hope you all had a great week. It was a strange one for me – ups and downs with my stomach/sugar issues, but it was still productive. I even worked in a painting class with a friend on Saturday. I had never done anything like it before, but had a good time and was pleasantly surprised with the outcome. Then Sunday was NFL playoff day so we just lazed around and watched football and read since it was too cold to do anything outside anyway 😀

Cold, gray and rainy/snowy. We aren’t supposed to see any sun this week with gray rainy snowy days and cold temperatures, highs in the low 40’s and lows in the low 30’s. I’m going to be painting this morning so I’m wearing old painting levis and my painting t-shirt.

THIS WEEK’S TO DO LIST, PROJECTS & APPOINTMENTS
  • LAUNDRY & CLEANING I just have the normal sheets and towels as well as a load of jeans and socks to do.
  • GROCERIES & ERRANDS I have another meal box coming this week so have very little grocery shopping to do. Hubby has a doctor appointment, but other than that it’s another homebody week.
  • PROJECT – Bathrooms are still in progress – we had to order some parts that are taking some time with “pandemic shipping” involved so the flooring is at a standstill, but the back bathroom is painted and I’m now working on removing the shower “stickies” and redoing the shower floor. Removing these stupid fish and the adhesive is a tedious and VERY time consuming project! My advice is to NEVER buy these stickies with all the stupid little cutouts as they are a serious pain in the butt. As a break from dealing with the shower floor the front bathroom is being prepped and will be painted this week.

  • RECIPE RESEARCH & MENU PLANNING I’m working on a February menu, but for some reason it’s slow going this month.

I wasn’t very motivated to check too many things off of my to do list this past weekend (woke up with a stomach bug Saturday and had a bad reaction on Sunday), though last week was quite productive with painting the back bathroom, cleaning the fixtures and finishing the sub floor in preparation of the new flooring that has of course been “slightly” delayed amid the shipping issues of the pandemic. We did watch all the NFL playoff games though.

I have some outdoor furniture that needs fresh paint, but it’s been too cold anyway to do that project and some Valentine’s Day crafts and treats I’d like to make, but like many people, I’ve been semi-consumed by the news over the last couple weeks and stayed home and away from the public as much as possible. These are certainly troubled times and I’m hopeful, prayerful  that there are MUCH better days ahead for us all.

On to the post for today.

As always it’s dark and foggy outside. Not unexpected for this time of year. The weather prediction for the last 10 days has been fading in and out predicting snow for the end of the week, but we’ll see what happens.  Either way it will be cold and wet this week, also no surprise for this time of year! 😀 I really like the rain, but I don’t care much for gray and dreary.  I have been fondly remembering when we were back in Michigan. It was much colder and we got tons of snow, BUT we also received A LOT of sun during the winter between snow storms. 😀

I have on old Levis, a faded favorite hoodie and slipper socks that will be replaced with POPS as I work.

I’ve been playing with my Christmas present, a NINJA FOODI and part of my breakfast are some wonderful dehydrated pears I made over the weekend that I’m having with my hot water.
