TEX MEX BLT’S minus the lettuce

These little delights are perfect finger foods for ANY football party or get together with lots of people. They have just enough kick to spark everyone’s appetite for more.  The shells get crispy and the cheesy filling gets gooey and they are soooooo easy to assemble while looking like you spent hours in the kitchen.

You can also vary the flavors for some extra alternative flavor.  Use your imagination and make up your own combinations.

TEX MEX BLT’s minus the Lettuce 
3-4 packages phyllo pastry cups – thawed
1 pound bacon, cooked well and crumbled into very small pieces (very fine ground beef/shredded beef)
1/2 cup shredded Swiss cheese  (today I used a Jack and Skellig Sweet Cheddar combo)
1/2 cup medium Cheddar cheese
1 cup mayonnaise (not Low-fat)
1 can Rotel original, drained REALLY well (when I use shredded beef I trade this for a 4 ounce can of diced jalapenos that I chop very fine)

  • Preheat oven to 350 degrees.
  • Blend the mayonnaise and cheeses together.
  • Fold in the tomatoes and bacon.
  • Scoop evenly into the cups (this will fill about 36).
  • Place on baking sheet and bake for 15-18 minutes or until starting to brown and get bubbly.

NOTE:  These shells are pretty small so cut any larger chunks of tomato into smaller pieces to make them easier to fill. I did a couple second run through in my mini food processor.

WOW this is a HUGE category!  I HAVE SO MANY FAVORITES! BUT, this really is a SUPER easy topic and category for someone who loves to cook and bake.

The one thing I am noticing as I type each BLOGMAS entry is that I am remembering so many silly stories and anecdotes about aunts, uncles, cousins and such that keep bringing smiles to my face. These memories are part of what this season is all about to me

Because of our growing family branches with plenty of munchkins being born and in-laws to accommodate, one of hubby’s sister’s family traditions is to celebrate the weekend before as a LARGE group and then be at each respective home for Christmas itself or with their in-laws.

As the family has grown, Christmas dinner even on that weekend before became a larger and larger production. Eventually instead of a “dinner”  it became a “cocktail” party with each person bringing an appetizer type dish for 20. So, in essence Christmas dinner became a HAPPY HOUR and it has worked out fantastic over the years. Everyone pretty much has a “signature” dish so we end up with a WIDE variety of everything from homemade Egg Nog to Salads and Chicken Skewers on the BBQ with plenty of tasty fudges and baked goodies too.

A few years back some friends took us to lunch at Jack Allen’s Kitchen when we were visiting in Round Rock, Texas and the food was SOOOOOOOOO good that I bought the cook book and have been experimenting ever since with his recipes.

One of our favorite recipes from the book is for pimento cheese made from scratch.  I now also make it into bite sized balls so you don’t have to mess with a knife and and all the cracker crumbs.

These days with the popularity of charcuterie boards they have been added to the greatest meal category on a busy holiday eve. A charcuterie board to graze on while you work is a truly wonderful thing. 😃

This time of year can be stressful and super busy so to make things easier we have gone to making charcuterie boards on the “eve” nights of holidays. The word charcuterie sounds a bit intimidating, but it doesn’t have to be.

Charcuterie Boards are suddenly all the rage, but the culinary art of preparing charcuterie boards dates back to the 15th century. The person who prepares the charcuterie board is a charcutier which literally means “Pork Butcher” in French. The original process/meaning was intended as a way to preserve meat before the invention of refrigeration, especially pork products.

The revived comeback of the charcuterie board brings it front and center to our tables and has been born out of the necessity of our busy lives as well as our love for farm to table and deli style meals that are also quick and easy.

Since the original meaning dealt with preserved meats, adding fermented, farm to table, home canned and prepared foods just falls into place along side the meats.

One of the best things about serving a charcuterie board at your own party is that there are NO RULES! It’s yours for the making – make it as simple or as sophisticated as YOU like. One of the greatest aspects of a charcuterie board is that you can mix it all up to fit EVERYONE’S taste.

You can make these as simple or as sophisticated as YOU like. For us it is ALL about favorites and yummy satisfying and filling “bites” of food. Below is a list of some suggestions for building your own charcuterie board for your next party.

HAPPY HOMEMAKER & MENU PLAN MONDAY week 10 of 2018

Good morning sweet friends. Saturday was gorgeous here so we made a trip to the Farmer’s Market and bought some beautiful carrots and turnips as well as some local BBQ sauce, but Sunday was rainy and dreary so we rented and watched a couple movies, Same Kind of Different as Me and The Darkest Hour. Both based on true stories. They were good and informative for so many different reasons so it was a LAZY Sunday! I did get some future blog posts organized and decided on some link parties to join up with for some new blogs to follow.

We are so very close to being out of here.  Just a few more medical tests and appointments to get past and the house sale.  I’m not letting that slow me down or stop me though.  I’ve been getting super organized – right down to using the dishes, pots and pans that I will be donating so I can pack what we’re keeping. We took 2 more loads for donation this past week. When we delivered some metal baker rack shelves to Habitat for Humanity someone was purchasing them as we unloaded them – so glad they are going to a good home. We’re probably 85% packed and ready to go. I don’t want to jinx anything, but it all seems to moving right along! We are SOOOOOOO ready to put THE HOUSE FROM HELL in our rear view mirror!

HAPPY HOMEMAKER & MENU PLAN MONDAY week 2 of 2018

WOW, it seems like it was just new year’s eve and here we are on the 8th already entering week 2! I hope you all had a great week. Mine was still low key as I continue to recuperate.  2 more weeks and I can enter a more normal activity life. YAY!!!!

The SUPER cold snap has broken here and the day time temps are supposed to be in the 60’s with the lows in the 30’s and 40’s, so I’m actually loving the weather right now.

Unfortunately, I just didn’t have the drive to get anything accomplished during this recuperation. I’ve just been so slow to get my energy back.

ON MY MIND / THINGS THAT ARE MAKING ME HAPPY

I had a good 1 month check up with the surgeon this past Thursday. He said I’m doing great , but still have 2 more weeks of no lifting or cleaning etc… He did give me the go ahead to start experimenting with veggies and fruits to see what my body can tolerate. He wants me eating more calories because I’m losing too much weight.

The one thing that many people don’t understand is that this will never get bigger or stretch, IT IS WHAT IT IS FOREVER! So, I made up a diagram that makes it easier to see that the change is permanent.  It also shows why more chewing and smaller portions are necessary as a few digestive processes are now bypassed.

The biggest issue I recently found out about is that there are tons of medications that I can NEVER take again because of the bypass because they can do serious damage to the “new” smaller stomach.  Among them are the medications I take for Fibromyalgia and Systemic Lupus leaving me with only an occasional Tylenol as my only alternative for ANY pain.

MENU PLANS FOR THE WEEK
In the beginning I told hubby NOT to get used to my existing diet and the doctor has given me the permission to cook though I still cannot lift so hubby still has to help with the shopping, but is going to have to give up the bachelor foods 😀   While I can only eat a bite or two of what I make, there is NO reason hubby shouldn’t get a few home cooked meals this week. Food will go a A LOT further now, but I am going to have to adapt the recipes A LOT.

I also began Home Chef again for 4 meals this month to ease me back into things.  No matter how you look at it proportions are going to be a challenge so now is the time to start rewriting and reworking recipes.  I will also plan more C.O.R.N. nights into my menus.

In the meantime I will continue working on combining blogs with older recipes and developing newer recipes that encompass ALL the new requirements. I look forward to previewing those rework recipes in a few months.

HAPPY HOMEMAKER & MENU PLAN MONDAY #3 – DAY 83

YAY! We had a productive weekend! We tried to go out for breakfast Saturday, but decided too late and the little diner that sounded so great on line turned out to be another ‘wait in line to order and pay‘ place.  We really want to find some real mom and pop places to go out and be served at, but they are becoming harder and harder to find for casual dining, especially for breakfast.

We ran errands Saturday morning and made it home before the skies opened up fortunately.  One of the errands was to buy the new range.  It went really well and will even be delivered sometime today!  I’m so excited – a sink and a range in the same week.  WOW I can cook again!

I had been unpacking and trying to pare down things, but it has become an unruly mess and I will be actually packing a few things back up for now.  We took 6 big totes for donation on Saturday and already have 3 more packed for this week.  I was serious about becoming a minimalist!

One of the things I’m having issues with is my “tools” still all in boxes.  So this week I’m going to empty gram’s old sewing room into the living room which I have spent the past 2 days cleaning out and get that room painted as it’s going to be the spare bedroom which we need done by the 29th.

Then I’m going to get my studio set up so I can get my tools and things organized. I seriously love having ‘deadlines’ to help me stay focused on what needs done next. They really work as great incentives.

WEATHER OUTSIDE
We had a cool weekend especially when the wind was blowing and it rained off and on all day Saturday, but it is supposed to be beautiful the rest of the week.

TO DO FOR THE WEEK

  • MONDAY – Empty Sewing Room and pack up a few things.
  • TUESDAY – Paint “sewing” room and turn it into the new spare bedroom.
  • WEDNESDAY – Paint studio and begin organizing.
  • THURSDAY – I bet I’ll still be organizing the studio LOL
  • FRIDAY – There used to be an atrium and gramps closed it in back in 1982 so it has been a part of the house for a very long time, but I just don’t know what else to call this room. Anyway, gramps also “paneled” over the Hardy Plank so it is VERY dated.  We’re removing the paneling (which is what I’ll be doing today) and going to paint the Hardy Plank.  Hubby is then going to get very creative with the molding around each arch where there used to be sliding glass doors many years ago.  Unfortunately gramps just paneled right over the dryrot.  There also used to be a faux beam across the room at a really low level with a ceiling fan, but we removed the faux beam and will be doing track lighting from the electrical outlet at the wall instead.
  • SATURDAY – Laundry, relax & football.
  • SUNDAY – Read, relax & Football.

Want to get the rest of the wax out of a candle, but it’s in a stubborn place? Place the entire candle in the freezer for an hour and the wax will shrink and come right out after.

HAPPY HOMEMAKER & MENU PLAN MONDAY

Good Morning! I had a SUPER productive weekend. I need some help!!!  I need ideas for a bread an butter gift (a gesture of gratitude for hosting) for my SIL on an upcoming trip. I always look for something I know she’d like, but probably doesn’t have, but I’m honestly out of ideas.  She loves “frogs” but think I’ve done those a little too much over the years.  What do you get or make for someone who has everything or the money to buy what they want when they want it?

  • A big cup of coffee, maybe 2 or 3 wit a touch of Mocha Kahlua and apple maple cinnamon oatmeal with golden raisins.

HOMEMAKING TIP OF THE WEEK

    As I put up the Christmas decorations each year I save the tissue paper to reuse as stuffing in shipping boxes and then as I put away the Christmas decorations each year I use new tissue paper to wrap them in.  The new tissue paper has a stronger tensile strength to protect the ornaments and decorations.
